3 tablespoons extra-virgin olive oil
2 pounds ground chicken breast, available in the packaged meats case
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 red onion, chopped
1 (15-ounce) can black beans, drained
1 cup medium heat taco sauce or 1 (14-oz) can stewed or fire roasted tomatoes
1 cup frozen corn kernels
Salt
8 (8 inch) spinach flour tortillas, available on dairy aisle of market
2 1/2 cups shredded Cheddar or shredded pepper jack
2 scallions, finely chopped

Steps:

  • Preheat the oven to 425 degrees F.
  • Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil - twice around the pan. Add chicken and season with chili powder, cumin, and red onion. Brown the meat, 5 minutes. Add taco sauce or stewed or fire roasted tomatoes. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season with salt, to your taste.
  • Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly. Top with the scallions and serve.

4 ounces marinara sauce
8 ounces canned corn
14 ounces black beans, cooked
14 ounces Monterey Jack cheese, plus more for topping

Steps:

  • Preheat oven to 350 degrees F.
  • Prepare the tortillas by soaking them in hot water until they are slightly soft. Coat the bottom of a 9 by 13-inch pan with about 1/2 of the marinara sauce. Spread 4 tortillas down on top of the sauce in the pan. Top the tortillas with about 1/3 of the corn, beans and cheese. Sprinkle with salt and pepper. Then add 1/3 of the chicken. Place 4 more tortillas on top and repeat with the toppings. After you have 3 layers spread the remaining marinara sauce and top with more cheese. Place in oven for 45 minutes.

I feel I am careering about like some giddy traveller with air miles to spare here. The thing is I cook instead of travelling - a kitchen rather than armchair tourist - and since the former is less tiring than the latter, it stands to reason that I can cover more ground. Still, the notion of a Mexican lasagne might seem a fantastic voyage too far: so let me just say this is just a shorthand to imply Mexican-inspired ingredients piled up in lasagne-like fashion. In place of pasta layers, there are soft flour tortillas and in between them a riotous assembly of tomato, chilli, corn and cheese. I like to make a last-minute avocado salsa, which is no more really than a kind of unmushed guacamole, but it's an embellishment rather than a necessity. If you can totter towards the oven without spilling it, you're halfway there; but I do advise you to put it on a cookie sheet or sheet pan as you preheat to catch any drips that might fall later. And talking of later, one of the joys of this is that it reheats, by the slice, so wonderfully on the days that follow. So do think about cooking this even when you don't have so many to feed first time around.

1 tablespoon garlic flavoured oil
1 onion, peeled and chopped
1 red bell pepper, seeded and chopped
2 green chiles, chopped, with seeds
1 teaspoon kosher salt or 1/2 teaspoon table salt
2 tablespoons finely chopped cilantro stalks
2 (14-ounce) cans diced tomatoes, plus 1 2/3 cups water to rinse out empty cans
1 tablespoon ketchup
2 (15-ounce) cans black beans, drained and rinsed
3 1/4 cups drained canned corn, from about 1 1/2 (15-ounce cans)
2 1/2 cups grated mature goats Cheddar, or cheese of your choice
8 soft flour tortillas (approximately 10-inch diameter)
Avocado Salsa, for serving, recipe follows
2 avocados
1 scallion, thinly sliced
3 tablespoons chopped green jalepenos from a jar or can
Salt
1 tablespoon lime juice
1/4 cup roughly chopped fresh cilantro

Steps:

  • Preheat the oven to 400 degrees F, slipping in a cookie sheet at the same time.
  • For the sauce: Heat the oil in a saucepan on the stove and fry the onion, bell pepper and chiles. Add the salt and cook gently for 15 minutes, and once soft, add the chopped cilantro stalks.
  • Add the canned tomatoes then rinse the cans out with water and add this too. Spoon in the ketchup and let things come to a simmer, leaving the sauce (or salsa in keeping with the Mexican mojo) to cook while you get on with preparing the filling- about 10 minutes.
  • For the filling: Mix the drained beans and canned corn in a bowl. Add most of the grated cheese, reserving some to sprinkle on the top at the end, and mix together.
  • Start to assemble the lasagne by spooning about a third of the salsa into the bottom of your ovenproof dish and smear it about, then layer on 2 tortillas so that they cover the sauce overlapping slightly, like a Venn diagram.
  • Add a third of the beans and cheese mixture covering the tortillas, and then about a quarter of the remaining salsa and another 2 tortillas.
  • Repeat with another third of beans and cheese, and more salsa before layering on another 2 tortillas.
  • Finally, add the last layer of beans and cheese, nearly all of the remaining salsa and cover with the last 2 tortillas. Spread the very last bit of salsa over the tortillas and sprinkle with the remaining cheese.
  • Bake for 30 minutes, and let it rest for a good 10 to 15 minutes before slicing like a pizza, and eat with the avocado salsa.
  • Halve the avocados, remove the pits, and then, using the tip of a sharp knife, cut lines down the flesh of each half, about a 1/4-inch apart and then the same across. Turn the avocado halves inside out, or otherwise release the pale green cubes into a bowl, then tumble in the scallion, chopped jalepenos, salt to taste, lime juice and most of the cilantro and toss gently to mix. Taste to see if any more salt is needed before scattering with the remaining cilantro and taking to the table.

1 pound ground beef (I use 90% lean)
1/2 cup onion (finely diced)
1 teaspoon minced garlic
1 packet taco seasoning
4 ounce can diced green chiles (drained)
14 ounce can diced tomatoes (drained)
1/2 cup corn kernels (fresh, thawed from frozen, or canned)
16 ounce can refried beans
10 ounce can red enchilada sauce (divided use)
12 flour tortillas (8 inch size)
3 cups shredded cheddar cheese (divided use)
2 tablespoons chopped cilantro
cooking spray
toppings such as pico de gallo, sour cream and guacamole (optional)

Steps:

  • Preheat the oven to 375 degrees F. Coat a 9"x13" baking dish with cooking spray.
  • Heat the olive oil in a large pan over medium high heat. Add the beef and cook, breaking up the meat with a spatula, for 4-5 minutes.
  • Add the onion and cook for 3-4 minutes or until softened. Add the garlic and cook for 30 seconds.
  • Stir in the taco seasoning until the meat and onions are thoroughly coated.
  • Add the green chiles, diced tomatoes and corn to the pan, then stir to mix everything together.
  • Add the can of refried beans. Stir until the mixture is thoroughly combined.
  • Spread a thin layer of enchilada sauce over the bottom of the baking dish.
  • Cut the tortillas in half, and layer 6 tortilla halved to fit in the dish. Spread 1/3 of the enchilada sauce over the tortillas, then sprinkle with 1/2 cup of cheese. Spread 1/3 of the bean and meat mixture over the cheese.
  • Repeat the layers, ending with layers of tortillas, enchilada sauce, and the remaining cheese.
  • Cover and bake for 20 minutes, then uncover and bake for an additional 20 minutes or until cheese is melted and browned.
  • Sprinkle with cilantro. Add any desired toppings, then cut into squares and serve.

8 (6-inch) corn tortillas
1 can (15.5 ounces) pinto beans, drained and rinsed
1 cup prepared salsa (mild or medium)
8 ounces pepper Jack cheese, grated (about 2 cups)

Steps:

  • Preheat oven to 425 degrees. In a food processor, combine cilantro, scallions, 1 teaspoon salt, and 1/4 teaspoon pepper with as much spinach as will fit; pulse, adding remaining spinach in batches, until coarsely chopped.
  • Coat an 8-inch square baking dish with cooking spray. Lay 4 tortillas in bottom of dish (they will overlap slightly). Layer with half of beans, salsa, spinach mixture, and cheese; repeat with remaining ingredients, ending with cheese and pressing in gently.

2-1/2 cups picante sauce or salsa
2 cups sour cream
3/4 cup finely sliced green onions
1 can (2-1/4 ounces) sliced ripe olives, drained

Steps:

  • Combine beef, beans, oregano, cumin and garlic powder. Place four of the uncooked lasagna noodles in a 13x9-in. baking dish. Spread half the beef mixture over the noodles. I'm obviously using low- and no-fat ingredients which can be substituted successfully with full fat versions with great results. 1/4 cup olive oil, divided, plus additional for greasing pan
1 1/2 lbs ground beef (80/20 fat ratio)
kosher salt & freshly ground black pepper
1 red onion, roughly chopped
1 red bell pepper, roughly chopped
3 garlic cloves, finely chopped
1 1/2 teaspoons cayenne
1 tablespoon sweet paprika
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon ground oregano
1 (28 ounce) can chopped tomatoes
2 cups low sodium beef broth
1/3 cup red wine vinegar
3 (16 ounce) cans white navy beans, drained and rinsed
1 cup sour cream
2 1/2 cups shredded mozzarella cheese (don't shred the fresh mozzarella balls)
3/4 cup grated queso fresco
15 corn tortillas
2 avocados, peeled and seeded
1 lemon, juice and zest of

Steps:

  • Preheat a dutch oven over high heat. Add 3 tablespoons olive oil, swirl to coat, and add beef. Season generously with salt and pepper and cook, stirring, until beef begins to turn golden, about 10 minutes.
  • Add remaining tablespoon olive oil and add onion, bell pepper, and garlic. Saute until softened, about 8 minutes more. Add cayenne, paprika, cumin, coriander, and dried oregano. Cook, stirring, until fragrant, 1 minute. Add tomatoes, beef stock, and red wine vinegar. Bring to a boil, reduce to a brisk simmer, and cook until reduced and nearly all liquid is cooked off, about 20 minutes.
  • Meanwhile, preheat oven to 450 degrees F. In a medium bowl, combine white beans, sour cream, and half of mozzarella and queso fresco. Season to taste with salt and pepper.
  • Grease a 9" x 13" baking dish with olive oil and spread 1 cup red sauce on the bottom. Create a layer on top with tortillas, cutting to fit if necessary. We used 5 tortillas per layer: 1 in each corner, and then a fifth tortilla, cut in half, placed in the center of the dish, to fill in the gaps. Top tortillas with one-third of the bean mixture and one third of remaining red sauce. Repeat twice more, ending with red sauce. Top with remaining grated cheeses and transfer to oven. Bake until lasagna is warmed through and cheese is bubbling and golden on top, about 20 minutes.
  • While lasagna bakes, combine avocados, lemon juice, and lemon zest in a medium bowl. Mash with a fork and season to taste with salt.
  • Remove lasagna from oven and let cool 5 minutes before slicing into squares. Serve, garnished with avocado topping.

1/2 cup mild, medium or hot salsa
1 (4-ounce) can chopped green chiles
2 tablespoons chopped fresh cilantro leaves
1 teaspoon ground chili powder
1/4 teaspoon cayenne pepper, or to taste
8 (6-inch) corn tortillas, cut into 6 wedges

Steps:

  • Preheat oven to 350 degrees F.
  • Coat an 11 by 7-inch baking pan with cooking spray.
  • In a large bowl, combine chicken, sour cream, 3/4 cup of the Monterey Jack cheese, 3/4 cup of the Cheddar, salsa, chiles, cilantro, chili powder, and cayenne pepper. Mix well and set aside.
  • Arrange half of the tortilla pieces in the bottom of prepared pan, overlapping pieces slightly to cover the surface. Top with half of the chicken mixture and smooth over with the back of a spoon to even the top. Layer remaining tortillas over top, and spoon over remaining chicken mixture. Top with remaining 1/4 cup each of Monterey Jack and cheddar cheeses.
  • Cover with foil and bake 30 minutes. Uncover and bake 30 more minutes, until top is golden and bubbly. Let stand 5 minutes before serving.
  • To reheat, bake in a preheated 375 degree F oven for 15 minutes.

1 (16 ounce) package lasagna noodles
1 pound ground beef
¾ cup water
1 (1 ounce) package hot taco seasoning mix
1 (1 pound) package shredded Mexican cheese blend, or as needed
1 (4 ounce) can sliced black olives
1 (28 ounce) jar spaghetti sauce
1 (8 ounce) jar taco sauce
¼ cup sour cream, or as desired

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook lasagna in the boiling water, stirring occasionally until cooked through but firm to the bite, about 8 minutes. Drain. Pat noodles dry with paper towels.
  • Cook and stir ground beef in a skillet over medium heat until browned and crumbly, about 10 minutes; drain excess grease. Stir water and taco seasoning mix into ground beef; cook and stir until thickened, about 2 minutes. Remove from heat and let meat cool.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Lay a noodle flat on a work surface and place 1 tablespoon seasoned meat at one end of noodle; roll up just to enclose meat filling. Place 1 to 2 tablespoons shredded Mexican cheese blend onto noodle and roll just to cover cheese; sprinkle a few black olives on noodle and roll noodle to the end. Repeat with remaining noodles.
  • Pour enough spaghetti sauce into a 9x13-inch baking dish to cover the bottom; lay rolled noodles with seam sides down into dish over sauce. Spread taco sauce over noodles and spoon remaining spaghetti sauce over the top. Scatter any remaining meat sauce over the rolls and cover dish with aluminum foil.
  • Bake in the preheated oven until the sauce is bubbling and cheese has melted, about 40 minutes. Serve with sour cream on top.

1 onion, chopped
10 ounces tomatoes and green chilies
8 ounces tomato sauce
1/2 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon black pepper
4 ounces cream cheese, softened
1/2 cup sour cream
12 ounces colby-monterey jack cheese, shredded
flour tortilla

Steps:

  • Preheat oven to 350.
  • Coat a baking dish with non stick spray.
  • Brown ground beef and onion. Drain.
  • Add tomatoes and green chilies, tomato sauce, cumin,salt and pepper. Simmer 15 minutes.
  • In a small bowl combine sour cream and cream cheese.
  • Spread cream cheese mixture on top of the 3 tortillas.
  • Layer in the baking dish tortilla, meat mixture then cheese. Repeat 2 more times.
  • Bake 30 minutes.
  • This can be garnished with diced tomato,chopped green onions, shredded lettuce, black olives or guacamole. I didn't use any garnishes and it was very good.

2 cups onions, chopped
2 garlic cloves, minced
1 1/2 cups green peppers, chopped
1 (28 ounce) can diced tomatoes
1 cup salsa
2 teaspoons ground cumin
1 (19 ounce) can black beans
1 (19 ounce) can kidney beans
4 -6 flour tortillas or 4 -6 corn tortillas
2 cups cheddar cheese, shredded
sour cream
1 lb ground beef (cooked) (optional)

Steps:

  • Sautee onions, garlic and green pepper in oil until tender.
  • Add tomatoes (drained), salsa and cumin, bring to a boil.
  • Simmer for two minutes.
  • Drain and rinse beans and add to others. If you are using, add ground beef here.
  • In a 9X13 pan, layer 1/3 of the bean mixture, then tortillas then 1/2 of the cheese.
  • Repeat with 1/3 of the beans then tortillas then the rest of the beans and put the remaining cheese on top.
  • Bake in a 350 degree oven for 35 minutes and serve with sour cream.
  • Option: Add ground cooked ground beef to the bean mixture for non-vegetarian version.

I got a recipe off here for chicken lasagna rollups, and after making it a couple times I thought it would be a lot better Mexican-style! It is AMAZING! Serve with garlic bread and salad.

10 uncooked lasagna noodles
1 (16 ounce) jar salsa
1 pound ground beef
1 (1 ounce) packet taco seasoning mix
1 (16 ounce) package cottage cheese
½ cup grated Parmesan cheese
1 (15.5 ounce) jar prepared salsa con queso sauce
1 ½ cups shredded Mexican cheese blend

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Once the water is boiling, stir in the lasagna noodles, about 3 or 4 at a time, and return to a boil. Cook the noodles uncovered, stirring occasionally, until the pasta has cooked through but is still firm to the bite, about 10 minutes per batch. Drain well in a colander set in the sink, and lay the cooked noodles flat on waxed paper or aluminum foil while you finish cooking the rest of the noodles.
  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish, and spread the salsa evenly over the bottom of the dish.
  • Place the ground beef in a skillet over medium heat, sprinkle with taco seasoning, and cook and stir the meat, breaking it up as it cooks, until the meat is browned and crumbly, about 10 minutes. Drain the fat, and place the meat in a large bowl.
  • Mix cottage cheese and Parmesan cheese into the meat. Place a cooked lasagna noodle out flat, and spread about 1/3 cup of the cheese and meat mixture along the length of the noodle. Roll up the noodle, and place the filled rolls, seam sides down, into the prepared baking dish. Spoon about 1 1/2 tablespoons of the queso sauce over each roll. Cover the dish with aluminum foil.
  • Bake in the preheated oven until the sauce is hot and bubbling, about 40 minutes. Uncover the dish, and spread the Mexican cheese blend over the rolls. Return to the oven, and bake until the cheese is melted, 8 to 10 more minutes.

1 garlic clove, chopped
1 onion, chopped
1 lb lean ground beef or 1 lb ground chuck
1 tablespoon chili powder
1 teaspoon ground cumin
1 (340 ml) can red kidney beans, drained and rinsed
1 cup sour cream
2 tablespoons all-purpose flour
1 (213 ml) can tomato sauce
1/2 cup salsa
3 large floured tortillas
1 cup cheddar cheese, shredded
1/2 cup sliced green olives
1/2 cup crushed tortilla chips
1/4 cup sliced pickled jalapeno pepper, chopped

Steps:

  • In a large skillet over medium heat, cook garlic, onion, ground beef, chili powder and cumin for 10 minutes until beef is browned and completely cooked.
  • Drain if necessary.
  • Stir in beans; set aside.
  • Combine sour cream and flour until smooth; set aside. Combine tomato sauce and salsa; set aside.
  • Place 1 1/2 tortillas in the bottom of lightly oiled 8 cup rectangular baking dish, overlapping slightly.
  • Top with half each meat mixture, sour cream mixture and tomato sauce mixture.
  • Repeat layers. Cover with plastic wrap and refrigerate for up to 24 hour.
  • Bake in 350F oven for 30 minutes until bubbly. Top with cheese, olives, chips and jalapenos; bake for 5 minutes.
