CREAMY TOMATO CHICKEN AND CHORIZO PASTA RECIPE

This Easy Creamy Tomato Chicken and Chorizo Pasta takes under 30 minutes to cook! And is sure to be a hit with the whole family. With juicy chicken and flavor-packed chorizo sausage, this creamy pasta recipe has so much flavor whilst still delivering a creamy and comforting yet simple dinner. We like this as a chicken penne dish, but you can use any pasta shape you like here. Serve it with some garlic bread and a side salad and dinner is done!

5.5 oz chorizo (- see note 1)
1 onion
1 red bell peppers (see note 2)
1 yellow bell pepper (see note 2)
1 tbsp olive oil
2 chicken breasts
4 garlic cloves - crushed
1 can chopped tomatoes (14oz/400g)
1 tsp Italian seasoning
1 tsp sugar
1/4 tsp salt
1/4 tsp smoked paprika (- optional)
14 oz pasta ( - see note 3)
1 cup heavy cream
1 cup fresh spinach
parmesan
flat-leaf parsley

Steps:

  • Peel and chop the onion, then chop the bell peppers and set to one side.
  • Slice the chorizo into disks.
  • Heat the olive oil a large frying pan over high heat, add the chorizo and cook for 2 minutes.
  • Add the chopped onion and peppers and cook for another 2-3 minutes, stirring occasionally.
  • Whilst the peppers are cooking chop the chicken breasts into small chunks.
  • Add the chicken to the pan and stir around in the oil for 1-2 minutes until lightly golden. Add in the garlic and stir together until aromatic (less than 1 minute)
  • Add the chopped tomatoes, Italian seasoning, sugar, salt, and smoked paprika if using.
  • Bring to a simmer and then cook gently whilst you cook the pasta.
  • Bring a large pan of water to a boil. Add a tablespoon of salt then pour in the pasta.
  • Reserve a cup of the pasta cooking liquid then drain the pasta.
  • Add the pasta to the tomato sauce mixture and pour in the heavy cream.
  • Stir everything together until well coated, thinning the sauce with pasta water as needed.
  • Stir through the fresh spinach and allow to wilt. Serve immediately with parmesan and chopped parsley.

3 skinless and boneless chicken breasts, cut into bite-sized pieces
400g pasta
1tbsp vegetable oil
100g cooking chorizo, sliced
400g tin of chopped tomatoes
Basil, finely chopped
Parmesan, grated

Steps:

  • Bring a large pan of salted water to the boil. Cook the pasta according to the packet instructions.
  • Meanwhile, heat the vegetable oil in a large frying pan. Fry the chorizo for 5 mins.
  • Add the chicken pieces to the chorizo and fry for another 5 mins.
  • Add the tomatoes and basil to the chicken and chorizo. Simmer for 5 mins.
  • Drain the pasta and toss in the sauce. Serve with grated parmesan.

2 chicken breasts, cut into bite size pieces
1/2 lb chorizo sausage, sliced into bite size pieces (can substitute with linguica)
1 small onion, chopped
1 tablespoon minced garlic
1/4 cup white wine
1 large bell pepper, chopped into bite size pieces
2 scallions, chopped (optional)
1/2 cup peas (usually thrown in for the kids) (optional)
1 1/2 cups mushrooms, sliced (optional)
salt and pepper
1 (12 ounce) jar alfredo sauce
1 lb pasta (ziti or rotelle work well)

Steps:

  • Cook pasta till al dente according to manufacturers recommendation.
  • In a large non stick pan, cook chicken and chorizo with the salt, pepper, onion and garlic, until cooked through.
  • Add the remaining vegetables and wine and cook another 5 minutes. Stir in alfredo sauce and heat through. Toss with pasta.

A quick and easy pasta dish with stong, bold flavours; suitable for a midweek supper or a saturday night indoors with friends

Steps:

  • Heat olive oil in a pan.
  • Dice chicken and chorizo and add to pan - fry gently for 3-4 minutes until chicken is browned and chorizo oil is released
  • Whilst chicken is cooking, roughly chop onion and pepper and finely chop garlic and chilli. Add to pan and cook until onion and peppers have softened and chicken is cooked thoroughly
  • Add tomatoes to pan, gently cook for 5 min until tomatoes begin to burst.
  • Cook pasta as per pack instructions
  • Whilst pasta is cooking add creme fraiche, lemon juice and pesto to chicken and warm thorugh. Season to taste
  • Add cooked drained pasta to chicken and creme fraiche mix and stir until coated - serve with a rocket and parmesan salad

320g Fuseli or Penne pasta
1 Chicken breast cubed
3 inches of chorizo sliced and then quartered
Clove of garlic finely chopped
1tbsp Olive Oil
1 - 2 tsp Red Pesto
3 tomatoes- roughly chopped (or 10 cherry tomatoes halved)
6 leaves of Fresh Basil roughly chopped
2 tbsp Creme Fraise
Freshly grated salt and pepper
Parmesan cheese - grated onto serving as desired

Steps:

  • Cook the pasta in boiling water as directed on the packet.
  • Heat the oil gently in a skillet and cook the garlic for about a minute.
  • Add and seal the chicken on all sides, add the chorizo and allow to cook through for several minutes.
  • Add the tomatoes, pesto, salt and pepper and soften for 3 - 4 minutes with the lid on a low heat.
  • Finally add the creme fraise and Basil, mix in well and simmer for a few minutes only before adding the cooked pasta. Mix in well and serve with parmesan cheese.

400 g dry penne pasta (or whatever pasta you have in the cupboard)
3 chorizo sausage, links
1 large onion, diced
1/2 teaspoon chili flakes
2 garlic cloves
500 g chicken thighs (can also be whatever chicken you like even left overs)
300 ml cooking cream
1/4 cup sun-dried tomato pesto
handful fresh parsley

Steps:

  • Cook your pasta for 8 to 10 mins in a large pot of boiling water, drain , splash in a little olive oil and return to pot
  • Heat your frying pan add the onion garlic and chilli and brown for one min.
  • Add the sliced chorizo and fry til brown ,
  • Remove ingrediants from pan and put aside
  • Add chopped chicken cook til brown
  • Return everything to pan add cream and pesto cook til heated through and thicken slightly ,.
  • Pour over pasta season with salt and pepper to taste add parsley and serve
  • Lovely with a green salad and fresh bread.
