Steps:
- Using a doughnut cutter, cut 12 rings and holes in bread; set aside. Tear bread scraps and place in a greased 13x9-in. baking dish. Sprinkle with 2 cups cheese, broccoli and chicken. Arrange rings and holes on top; brush bread with melted butter. , Beat next 6 ingredients; pour over top. Refrigerate, covered, 8 hours or overnight., Remove strata from refrigerator 30 minutes before baking. Preheat oven to 325°. Bake, uncovered, 55-60 minutes. Sprinkle with remaining cheese; bake until a knife inserted in center comes out clean, about 5 minutes longer. Let stand 5-10 minutes before cutting.

- Layer 3 cups of the bread cubes, 1 cup of the cheese, chicken and the red pepper in greased 2-quart oblong baking dish; top with remaining 3 cups bread cubes.
- Beat eggs, milk and mustard with wire whisk until well blended; pour over bread layer, being careful to evenly moisten the bread. Sprinkle with remaining 1/2 cup cheese; cover. Refrigerate at least 2 hours or overnight.
- Preheat oven to 325°F. Bake, uncovered, 45 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

This recipe is from Art Smith of Chicago's Table Fifty-Two. It was in the December 2008 issue of Good Housekeeping in their "Dinner for Four Under $10" column. Refrigerate overnight for a great breakfast casserole. Prep time doesn't include refrigeration time of 4 to 10 hours.

Steps:
- Heat butter in large skillet over medium heat. Add onion and celery and cook uncovered, stirring occasionally, about 5 minutes. Add asparagus, water and cover. Cook until asparagus is crisp-tender, about 3 minutes. Uncover and cook until all liquid is evaporated, about 2 minutes. Transfer vegetables to large bowl.
- Add chicken and mayonnaise, mix well. Whisk milk, broth, eggs, parsley, chives, salt and pepper in another bowl.
- Lightly butter a 13x9 inch glass baking dish. Spread half of bread cubes in dish; top with chicken mixture. Spread remaining cubes over chicken. Pour egg mixture over ingredients in dish. Cover and refrigerate for 4 to 10 hours.
- Preheat oven to 350°F Bake strata for 45 minutes. Sprinkle with cheese; bake until cheese is melted, about 15 minutes more. Let stand for 5 minutes; serve hot.
CHEESE STRATA
This is an easy breakfast dish-great to make ahead for rushed mornings as it can be refrigerated overnight. Almost any chopped vegetable or meat can be added; just add before the cheese layer. If you're feeding a crowd, just double and use a 9x13 pan. This is adapted from a Mennonite cookbook, More-with-Less.

- Arrange half the bread in a buttered 2 1/2 quart baking dish or 8x8 pan.
- Drizzle half the melted butter over the bread.
- If adding veggies or meat layer those on next.

- In a small bowl, beat the milk, eggs and seasonings.
- Pour over the bread.

- Trim crusts from 4 slices of bread.
- Cut slices into 2 triangles each (total of 8).
- Arrange trimmings and uncut bread slices to cover the bottom of a 9x9x2 pan.
- Place cheese slices over the bread.
- Arrange the bread triangles in 2 rows over the cheese - overlap the points slightly on the bases.
- Beat the eggs and blend with milk, onions, salt, mustard and pepper.

- Spray baking dish with Pam (9X13).
- Pick rotisserie chicken from the bone and set aside. Let cool.
- Finely chop 3 shallots and sauté in olive oil. Add shallots to chicken and let cool.
- Boil a small pot of water - cut the fresh asparagus up into 1 inch pieces. Add the asparagus pieces to the boiling water and cook for 2 minutes. Strain and put asparagus pieces in an ice water bath to stop cooking. Remove asparagus and dry on a paper towel. Add to the chicken.
- Mix eggs and milk in separate dish (make sure eggs are well beaten).
- Add cubed bread, shredded cheese, chicken, shallots and asparagus to the egg and milk mixture. Make sure chicken, asparagus and shallots are all cooled before adding them to the egg mixture.
- Pour all ingredients into your baking dish
- Bake on 350 degrees for 45 minutes. It will puff up slightly, like a quiche. Let is set for about 15 minutes before serving. It will settle and fall a bit.
