CHICKEN CACCIATORE IN A SLOW COOKER
This is a very simple meal to make. You just throw everything in the crock pot and let it cook during the day. I like to serve this over thin spaghetti (especially garlic and herb thin spaghetti when I can find it).

Steps:
- Sprinkle the chicken pieces with 1 teaspoon of each salt and pepper. Dredge the chicken pieces in the flour to coat lightly.
- In a large heavy saute pan, heat the oil over a medium-high flame. Add the chicken pieces to the pan and saute just until brown, about 5 minutes per side. If all the chicken does not fit in the pan, saute it in 2 batches. Transfer the chicken to a plate and set aside. Add the bell pepper, onion and garlic to the same pan and saute over medium heat until the onion is tender, about 5 minutes. Season with salt and pepper. Add the wine and simmer until reduced by half, about 3 minutes. Add the tomatoes with their juice, broth, capers and oregano. Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering over medium-low heat until the chicken is just cooked through, about 30 minutes for the breast pieces, and 20 minutes for the thighs.
- Using tongs, transfer the chicken to a platter. If necessary, boil the sauce until it thickens slightly, about 3 minutes. Spoon off any excess fat from atop the sauce. Spoon the sauce over the chicken, then sprinkle with the basil and serve.

- Salt and pepper the chicken.
- Bring a large stockpot to medium high heat and add enough oil to lightly coat the bottom of the pan. Sear the chicken 3-5 minutes per side or until golden brown. You may need to do this in batches. Set seared chicken aside on a plate or bowl.
- Reduce heat to medium and add onions & peppers. Cook ~ 4 minutes. Add garlic and cook an additional 1-2 minutes or until fragrant. Add mushrooms and cook ~ 4 minutes. Add remaining ingredients, except basil garnish.
- Bring to a boil, reduce heat to a simmer and cook covered ~ 45 minutes or until chicken is cooked through.

- Using a standard 6-quart slow cooker, add all ingredients except for pasta, basil and Parmesan cheese. Cover and cook on low for 6 hours.
- Remove the cooked chicken thighs from slow cooker and shred using 2 forks. Return shredded chicken to slow cooker and stir until well combined.
- Cook pasta in salted water according to package instructions.
