1 cut-up whole chicken (3 to 3 1/2 lb), skin removed
1/3 cup Gold Medal™ all-purpose flour
2 tablespoons vegetable oil
1 medium green bell pepper
2 medium onions
1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
1 jar (4.5 oz) sliced mushrooms, drained
1/2 teaspoon dried oregano leaves
1/4 teaspoon dried basil leaves
1/2 teaspoon salt
2 cloves garlic, finely chopped
Grated Parmesan cheese

Steps:

  • Coat chicken with flour. In 12-inch skillet, heat oil over medium-high heat. Add chicken; cook 15 to 20 minutes or until brown on all sides; drain.
  • Cut bell pepper and onions crosswise in half; cut each half into fourths.
  • In 3 1/2- to 6-quart slow cooker, place half of the chicken pieces. Mix bell pepper, onions and remaining ingredients except cheese; spoon half of mixture over chicken. Add remaining chicken; top with remaining vegetable mixture.
  • Cover; cook on Low heat setting 4 to 6 hours or until juice of chicken is clear when thickest piece is cut to bone (170°F for breasts; 180°F for thighs and legs). Serve with cheese. Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. 6 skinless chicken thighs (I used bone-in)
salt and black pepper (to taste)
2-3 tablespoons olive oil
4 cloves garlic (minced)
½ medium white onion (chopped)
1/2 cup diced red bell peppers
1/2 cup sliced carrots
1/2 cup sliced mushrooms
1 28 ounce can of diced tomatoes, drained
1 6 ounce can tomato paste
1 teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon dried rosemary
¼ teaspoon dried thyme
2-4 Kalamata olives (optional)
½ cup chopped kale (stems removed)
2 teaspoons corn starch plus 3 teaspoons water
2 tablespoons fresh chopped parsley (plus more for serving)
Fresh basil leaves (for garnish (optional))
grated Parmesan cheese (for serving (optional))

Steps:

  • Season chicken with salt and black pepper. Heat olive oil in a large non-tick skillet over medium high heat. Sear chicken until golden brown, about 3 minutes per side. Transfer chicken to slow cooker. Alternatively, if pressed for time, skip browning and add chicken straight to a 6 quart slow cooker.

1 tablespoon extra-virgin olive oil (plus 2 teaspoons, divided)
2 pounds boneless skinless chicken breasts (or thighs)
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 medium yellow onion (chopped)
3 cloves garlic (minced)
1 tablespoon balsamic vinegar (plus 1/2 teaspoon, divided)
1 can crushed tomatoes (28 ounces)
1 medium green bell pepper (chopped)
8 ounces sliced baby bella cremini mushrooms
2 teaspoons Italian seasoning
Whole wheat pasta (brown rice, polenta, rice, zucchini noodles, or baked and shredded spaghetti squash)
Chopped fresh parsley (freshly grated Parmesan cheese)

Steps:

  • Lightly coat a large slow cooker with nonstick spray. Heat 1 tablespoon olive oil in a large skillet over medium high. Season both sides of the chicken with salt and pepper. Once the oil is hot and shimmering, add the chicken in a single layer. Cook on the first side for 3 to 4 minutes, until browned, moving the chicken as little as possible so that it gets a nice sear. Flip and brown on the other side, about 2 additional minutes. Transfer the chicken to the slow cooker.
  • Reduce the skillet heat to medium. With a paper towel, carefully wipe out the skillet. Add the remaining 2 teaspoons olive oil. If using chicken thighs: cover and cook for 3 to 4 hours on HIGH or 5 to 6 hours on LOW. Remove the chicken from the slow cooker as soon as it reaches 165 degrees F. If desired, chop or shred the chicken (or you can serve the pieces whole).
  • At this point, you can serve the sauce right away if you are in a hurry, BUT, if time allows, this is what I like to do for the best-ever sauce: Uncover the slow cooker and let cook on HIGH for 1 hour to allow the sauce to thicken and the flavor to further develop. Just before serving, stir in the remaining 1/2 teaspoon balsamic vinegar. Taste and season the sauce with additional salt/pepper as desired. If you've chopped or shredded the chicken, return it to the sauce and toss to combine and warm through. Otherwise, serve the chicken pieces whole with a generous amount of the sauce on top. Serve hot over pasta, rice, polenta, or veggie noodles, with a big extra spoonful of sauce and a sprinkle of parsley and Parmesan.

  • Season the chicken thighs with salt and black pepper. Heat the oil in a wide pan then add the chicken thighs, skin-side down, along with the garlic cloves and bay leaves. Cook on a moderate heat for 5-7 minutes until the chicken skin is golden and crispy, then turn over and seal the second side for a minute or so. Transfer to a plate. You may need to fry the chicken in batches.
  • Remove the garlic cloves from the pan and set aside for later. Tip the onion into the pan that was used to fry the chicken and cook it for 7-10 minutes on a moderate heat until soft.
  • Add the wine, increase the heat and boil to reduce by about a half, then add the halved tomatoes. At this point squeeze out the garlic from their skins and put them into the pan. The garlic should be soft and pulpy so it will break down into the sauce as it cooks.
  • Season with salt and black pepper and allow the tomatoes to cook for about 15 minutes on a moderate heat until they have turned pulpy and started to thicken a little.
