PROVENCAL CHICKEN BURGERS WITH PISSALADIERE TOPPING
Here, the burgers are made to carry the flavor of a traditional French sausage. The burgers are then topped with cheese, caramelized onions with olive and anchovy - the topping of my favorite tart. Ooo-la-la!

- Combine 1 tablespoon olive oil and butter in a skillet over medium heat. Add onions to the pan, season with salt and pepper and cook 20 minutes to caramelize then stir in olives and anchovy paste and cook 2 minutes more. Remove from stove.
- While the onions cook, combine chicken with herbes de Provence, fennel seed, lemon zest, garlic, salt and pepper. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Form 4 patties and cook 6 minutes on each side. Melt the Swiss cheese on each burger the last 2 minutes of cook time. Loosely tent the burgers under foil to melt the cheese. Serve the burgers on buns topped with lettuce and caramelized onion topping. Serve with potato chips alongside.

- Cook onions and sugar in hot oil over low heat 20 to 25 minutes until onion is caramelized, stirring often. Stir in the 1/4 cup water, vinegar, and 1/4 teaspoon of the salt. Set aside and keep warm.
- Combine beef, parsley, tomato paste, Worcestershire sauce, 1/2 teaspoon salt, and pepper. Shape into 4 patties.

- Heat a medium skillet to medium high heat, add olive oil and sliced onions. Saute onions for 10 minutes, stirring on occasion. Add butter, salt, and pepper. Stir until butter is melted and soaked into onions, about 3-4 minutes. Set aside.
- In a large bowl mix, ground chicken, egg, oregano, salt, and pepper. Using your hands mix until it is all combined. Form into four patties.
- Heat the grill to medium high heat, spray grates with PAM or rub with olive oil. Add chicken patties to the grill.
- Grill for 4 minutes per side, until cooked through.
- Remove from grill, let sit while you toast the buns.
- Add buns to grill, inside on the bun face down. Grill for 1 minute, remove from grill.
- Assemble burger: bottom bun, lettuce, 2 slices of tomato, chicken burger, 2-3 slices of avocado, 1-2 tablespoons of caramelized onions, 1-2 tablespoons of bbq sauce, top bun.
- Devour!

- For the mayonnaise: In a small bowl, mix together mayonnaise, garlic, and rosemary; set aside.
- For the burgers: Preheat a gas or charcoal grill or place a grill pan over medium-high heat. In a large bowl, add the ground chicken, 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1/2 of the mayonnaise mixture. Using clean hands, gently combine the ingredients and form the chicken mixture into 4 patties. Place the burgers on the grill and cook for about 7 minutes on each side. Transfer to paper towels and let rest for a few minutes.
- Brush the cut side of each roll with the olive oil and 1 teaspoon of the mayonnaise mixture. Grill for 1 to 2 minutes until slightly golden.
- To assemble the burgers: Spread a dollop of the remaining mayonnaise mixture on the tops and bottoms of the toasted buns. Place the chicken burgers on the bottom halves of the buns. Top each with 1/4 cup of arugula and finish with the top half of the bun.
CARAMELIZED ONION AND GARLIC CHICKEN
Steps:
- Gather the ingredients. Preheat the oven to 425 F.
- Heat 1 tablespoon of olive oil in a large skillet over medium-low heat. Add the onion and garlic. Cook, stirring, for 10 minutes, or until soft. If the onions start to crisp, reduce the heat.
- Stir in the brown sugar and vinegar and cook for 6 to 7 minutes, stirring often, or until the onions are lightly caramelized. Remove from the heat.
- Oil a baking dish with the remaining 1 tablespoon of olive oil and place the chicken in the dish in a single layer, bone-side down. Season with salt and pepper.
- Spread the onion and garlic mixture over the top of the chicken breasts.
- Bake for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165 F . Check the temperature in the thickest part of the chicken pieces. Cover loosely with foil if the onions are getting too dark or dry toward the end of the cooking time.
- Let the chicken rest for 5 minutes before serving.

- Begin caramelizing the onions: in a skillet over low heat, saute onions in oil until softened and dark brown in colour, 1-2 hours. The longer the better!
- In a large bowl, combine chicken, teriyaki sauce, panko crumbs, egg, cilantro, red chili flakes, garlic, green onions, ginger and Worcestershire sauce. Using your hands, form into 4 patties, place on a plate, cover, and refrigerate for at least 1 hour*.
- Preheat grill to medium-high heat. Grill burgers about 5 minutes per side until cooked all the way through. Place cheese on top of patties and cook for a minute longer until cheese is melted.
- Meanwhile, grill pineapple slices, about 3 minutes per side, until charred.
- Serve patties on burger buns, topped with a slice of pineapple and a scoop of caramelized onions.

- Heat half of oil in frying pan over medium heat.
- Add onions and cook 15 minutes, stirring occasionally.
- Season with salt and pepper during cooking.
- Onions should become golden brown and caramelized.
