What makes the perfect breakfast cookie? I've determined that people like a low-sugar cookie. They also really like oatmeal. As far chocolate? Less is more. These breakfast cookies are easy to make, assemble and serve-and are definitely not your average oatmeal-and-raisin cookies.

Yield about 12 cookies

Number Of Ingredients 7

3 large, ripe bananas
2 1/2 cups rolled oats
1 cup peanut butter (my family prefers chunky)
1/3 cup semisweet chocolate chips
1/4 cup honey
2 teaspoons cinnamon
Pinch of salt

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment.
  • Mash the bananas with a fork in a large bowl. Add the oats, peanut butter, chocolate chips, honey, cinnamon and salt, and stir until just combined. (The mixture may be thick and hard to stir.)
  • Scoop out the dough with a cookie scoop, and form balls with your hands, pressing the dough together very tightly. Place the balls on the prepared baking sheet. Bake until the edges start to brown, 12 to 15 minutes.

¼ cup semisweet chocolate chips
¼ cup walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Mash bananas in a medium bowl. Stir in oats, chocolate chips, and walnuts.
  • Drop dough by rounded teaspoonfuls onto the prepared baking sheet.
  • Bake in the preheated oven for 15 to 20 minutes.

1 cup mashed ripe bananas (about 2 medium)
1/2 cup chunky peanut butter
1/2 cup honey
1 teaspoon vanilla extract
1 cup old-fashioned oats
1/2 cup whole wheat flour
1/4 cup nonfat dry milk powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup dried cranberries or raisins

Steps:

  • Preheat oven to 350°. Beat bananas, peanut butter, honey and vanilla until blended. In another bowl, combine next 6 ingredients; gradually beat into wet mixture. Stir in dried cranberries., Drop dough by 1/4 cupfuls 3 inches apart onto greased baking sheets; flatten to 1/2-in. thickness., Bake until golden brown, 14-16 minutes. Cool on pans 5 minutes. Remove to wire racks. Serve warm or at room temperature. To reheat, microwave each cookie on high just until warmed, 15-20 seconds.

3 bananas, ripe
1/3 cup canola oil
2 cups quick-cooking oats
1/2 cup chocolate chips
1 teaspoon vanilla extract
cooking spray

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, mash bananas with a fork until no longer lumpy. If bananas aren't very ripe, a hand mixer may be used. Stir in oil, oats, chocolate chips, and vanilla.
  • Lightly grease a cookie sheet.
  • For each cookie, spoon about 2 tablespoons of cookie mixture (or more depending on how big you want the cookie) onto the cookie sheet. Bake for 15-20 minutes.
  • **IF batter seems a little dry, add a little milk to moisten.
  • Variations: Instead of chocolate chips add raisins or craisins. Chopped walnuts are great in these cookies. Or, try coconut oil instead of canola oil.

1 cup mashed bananas or 2 ripe bananas
1/3 cup peanut butter (natural if you have it)
1/2 cup unsweetened applesauce
1 teaspoon vanilla
1/4 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups old fashioned oats
1/2 cup shredded coconut

Steps:

  • Preheat oven to 350.
  • Mash bananas with a fork and mix in peanut butter, apple sauce, vanilla, salt, and cinnamon.
  • Stir in oats and coconut.
  • Drop by tablespoon onto a non stick cookie sheet (lined with parchment paper or sprayed with non-stick spray). I use a small cookie scooper.
  • Flatten a bit to shape the cookie (they don't rise or spread at all when baking).
  • Bake for 12-15 minutes, rotating the pan halfway through.
  • Allow to cool, and enjoy!

  • Preheat oven to 350 degrees F. In a large bowl, mash the bananas with a fork until relatively smooth. Add the oil, maple syrup, cinnamon, baking soda, and salt, and whisk together with the fork until completely combined and smooth.
  • Place 1 cup of the rolled oats in a food processor or high-speed blender and blend on high until the oats become a flour-like consistency (you now have oat flour). Pour into the bowl with the banana mixture. Take the other 1 cup of rolled oats and place in the same food processor or blender, and pulse or blend on low speed until the oats are in small pieces - about 30 seconds. Do not grind them into a flour. Place in the same bowl with the banana mixture and oat flour.
  • Stir the oat flour and oat pieces into the banana mixture until everything is well-blended. Fold in the chopped chocolate or other add-ins gently with a spatula, if using.
  • Scoop batter using a tablespoon cookie scoop (for regular size cookies) or a 1/4 cup measure (for larger size cookies) onto a baking sheet lined with parchment. Bake for 14-15 minutes for regular size cookies, 20 minutes for larger size cookies, or until edges are golden.

  • Preheat the oven to 350F and line a baking sheet with parchment paper or a silicone mat. Peel the ripe banana and break it off into “chunks” in a medium bowl. Mash the banana with a fork until it forms a paste.
  • Next, add 1/2 cup of the oats to a blender and process for 30 seconds, or until a fine flour forms. Add in the oat flour, remaining oatmeal, applesauce, cinnamon, baking powder, salt, and maple syrup, if using. Mix until everything is evenly incorporated, then fold the chopped walnuts into the batter.
  • Use around 3 tablespoons of batter to form 6 even “cookies”, then use damp hands to press each cookie onto the tray – they will not spread out in the oven, so shape them how you’d like them to be. Bake for 15-18 minutes, then remove from the oven and transfer to a baking rack to let cool completely.
  • Once cool, store in a loosely covered container at room temperature for up to 5 days. You can also freeze these and reheat as needed!
