CUCUMBER, TOMATO AND KIDNEY BEAN SALAD
This is a great summer salad with healthy fiber. You can adjust the seasoning to your taste. This is a combination of recipes I gathered from Allrecipes site.The cook time is the chilling time. Enjoy!

Steps:
- Chop and slice veggies, using yellow or red bell peppers for color.
- Mix all ingredients together with the mayonnaise.
- Allow to chill and flavors to blend.
- The tomatoes make this a little juicy so use a slotted spoon when serving.
- Use whatever combination of spices you like.

- Rinse and drain all beans & peas.
- Drain tomatoes and reserve oil.
- Place 1/4 cup of the reserved oil into a medium bowl. Add vinegar, sugar, salt, dry mustard, and pepper. Whisk well, set aside.
- In large serving bowl, combine chopped tomatoes, parsley, basil, all beans, peas, and onion. Mix gently.
- Pour vinegar mixture over beans, and toss to coat.
- Cover and chill overnight.

- Cook the broad beans in boiling salted water for 1 minute. Drain, rinse under the cold tap and peel off the skins. Simmer the French beans in salted boiling water for 4-5 minutes, until just cooked. Drain, rinse, then cut into 2.5cm lengths.
- Mix the beans in a large bowl with the chickpeas, tomatoes and herbs.
- To make the dressing, whisk the lemon juice with the sugar, tomato purée and salt and pepper, then gradually whisk in the olive oil. Pour over the salad and toss together. Serve at room temperature.

Steps:
- Cook green and yellow beans in boiling water for 5 minutes.
- Drain beans and put in a bowl of ice water to stop the cooking, then drain.
- Combine vinegar, oil, salt and pepper with a whisk in a large bowl.

- Purée tomatoes, onion, chiles, cilantro, 1 Tbsp. lime juice, and 1 tsp. salt in a food processor until almost completely smooth.
