PINEAPPLE CHICKEN AND BROCCOLI

1 cup cubed pineapple
6 tablespoons coconut aminos (1/3 cup + 2 teaspoons)
2 tablespoons peeled and chopped fresh ginger
1 tablespoon maple syrup
2 medium garlic cloves
3/4 teaspoon fish sauce
1/2 teaspoon sesame oil
2 tablespoons coconut oil, divided
4 cups broccoli florets
3/4 cup chopped red onion, 1-inch pieces
1 pound chicken breast, 1-inch cubes
1 tablespoon minced garlic
1/2 teaspoon cracked pepper
1 3/4 cup cubed pineapple
1 tablespoon arrowroot powder
1 tablespoon water
for serving: white sesame seeds and sliced green onion

Steps:

  • In a blender, combine all the Pineapple Sauce ingredients until smooth. Set aside.
  • In a large skillet, heat 1 tablespoon coconut oil on medium heat. Add the broccoli and cook for 3 minutes until lightly browned but still crisp.
  • Add another tablespoon coconut oil, and stir in the red onion, chicken breast, garlic and pepper. Cook for 4 to 5 minutes until the chicken is cooked through. The broccoli should still be crisp-tender. We're trying to avoid mushy broccoli here.
  • Stir in the pineapple and Pineapple Sauce. Bring to a low boil and allow to simmer for 2 to 3 minutes to allow the pineapple to cook.
  • Meanwhile, whisk together the arrowroot and water in a small bowl then stir into the skillet to thicken the sauce.
  • Remove from heat when the broccoli is still a bright green but can be easily pierced with a fork.
  • Sprinkle with sesame seeds and green onions.

Steps:

  • Prepare rice according to package directions.
  • Heat oil in non-stick wok or large skillet. Add chicken; stir-fry 5 to 7 minutes or until no longer pink. Add onion, ginger and garlic to same pan; stir-fry 3 minutes more.
  • Combine reserved juice, soy sauce, stir-fry sauce, and cornstarch in a small bowl; add to pan. Add broccoli and pineapple. Cover, cook 2 to 3 minutes more or until broccoli is tender-crisp. Serve over brown rice.

For the sauce:
⅓ cup low sodium soy sauce
3 tablespoons water
2 tablespoons rice wine vinegar
2 tablespoons honey
1 tablespoon brown sugar (or sub coconut sugar)
3 cloves garlic, minced
2 teaspoons freshly grated ginger
½ tablespoon arrowroot starch (or cornstarch)
For the stir fry:
1 tablespoon toasted or regular sesame oil, divided
1 pound boneless skinless chicken breast, diced into ½ inch chunks
1 large red bell pepper, chopped into large chunks
1 small red onion, chopped into large chunks
1 head broccoli, cut into florets (about 4 cups broccoli florets
1 cup fresh or frozen pineapple chunks
For serving:
Cooked brown or coconut rice, for serving
Chopped fresh scallions, for topping

Steps:

  • First make your stir fry sauce: in a medium bowl, whisk together the soy sauce, water, rice wine vinegar, honey, brown sugar, garlic, ginger and arrowroot starch (or cornstarch). Set aside.
  • Add 1/2 tablespoon sesame oil to a deep skillet and place over medium heat. Add diced chicken breast and cook until no longer pink, about 5-8 minutes. Once cooked, transfer meat to a bowl and set aside. Keep the heat in the pan.
  • In the same pan, add the remaining ½ tablespoon sesame oil. Add in bell pepper chunks, onion chunks and broccoli. Cook, stirring frequently for 5-8 minutes until broccoli is slightly tender but still has a bite. Stir in pineapple and cooked chicken breast. Pour sauce over and bring to a slight simmer then reduce heat to low and cook for an additional 2-4 minutes until sauce begins to thicken.
  • Serve with brown rice, coconut rice or quinoa for a healthy dinner. Garnish with scallions. Serves 4.

2 cups fresh pineapple chunks
3 tablespoons molasses
2 tablespoons fresh lime juice
1/4 teaspoon crushed red pepper flakes
8 green onions, cut into 2 nch pieces
1/4 cup minced crystallized ginger

Steps:

  • Heat a large wok or skillet over high heat.
  • Add oil and when hot add chicken and stir-fry until brown on all sides, about 6 minutes.
  • Remove chicken and set aside.
  • Add pineapple and molasses to wok and stir-fry until pineapple is brown and tender.
  • Stir in the lime juice, red pepper flakes, green onions and chicken.

You don't need a wok to make this just a large skillet --- this recipe will feed 2-3 people but can be doubled easily and all amounts may be adjusted to taste --- if you prepare the chicken and broccoli florets ahead of time this recipe takes little time to prepare, I sometimes add in matchstick-size carrots also, the red pepper flakes may be adjusted to suit heat level, my family likes extreme spice so add in lots! :)

2 tablespoons chopped fresh garlic (or to taste)

1 1/2 lbs boneless skinless chicken breasts (cut into thin slices)
5 green onions, chopped
1/4 cup hoisin sauce (can use more)
3 tablespoons oyster sauce (can use more)

Steps:

  • In a large skillet heat about 1-1/2 tablespoons sesame oil over medium-high heat.
  • Add in chopped garlic and dryed chili flakes; saute for about 1 minute.
  • Add in broccoli florets and 4 tablespoons chicken broth; cover skillet and cook until the broccoli is just crisp-tender (about 2 minutes) transfer to a bowl.
  • Add in 1 tablespoon more sesame oil to the skillet.
  • Season the chicken strips with salt and pepper, then add to the hot skillet with green onions; saute until the chicken is cooked through (about 3 minutes).
  • Add in remaining 2 tablespoons chicken broth, hoisin sauce and oyster sauce. Add in the broccoli florets back to the skillet; toss to combine until heated through (about 1-2 minutes).
  • Transfer to a platter or large bowl and sprinkle with sesame seeds.
  • Serve with cooked rice.

Steps:

  • Stir soy sauce, brown sugar, ginger, and red pepper flakes together in a bowl to dissolve sugar into the liquid. Mix water and cornstarch together in a small bowl; stir with a whisk until cornstarch dissolves completely.
