Chicken Breasts and Endive With Fennel-Coriander Marinade image

2 tablespoons coriander seeds
4 teaspoons fennel seeds
1/2 cup olive oil
1/4 cup freshly squeezed lime juice
3 cloves minced garlic
4 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
4 boneless, skinless chicken-breast halves (about 2 pounds)
4 Belgian endive, split in half

Steps:

  • Place the coriander and fennel seeds in a spice grinder and process until coarsely ground. Place them in a small bowl and whisk in the oil, lime juice, garlic, salt and pepper. Split each chicken breast in half lengthwise to form two thin paillards. Place them in a nonreactive bowl and toss with 2/3 of the marinade. Place the endive in another nonreactive bowl and toss with the remaining marinade. Cover the bowls and refrigerate for at least 1/2 hour and up to 6 hours.
  • Prepare a charcoal or gas grill. Remove the chicken and endive from the marinade and grill until the chicken is just cooked through, about 5 minutes, and the endive is soft and browned, about 5 to 6 minutes. (Alternatively, heat 2 large heavy skillets over high heat and preheat the broiler. Cook the chicken, turning once, until just cooked through, about 5 minutes. Place the endive on a sheet pan and cook in the broiler, turning occasionally, until tender and browned, 6 to 7 minutes.) Transfer the chicken to a serving plate and surround with the endive. Serve immediately.

We have one of those electric table-top grills which we often get out for informal parties. It means you can put out a selection of different types of meats and people can cook it the way they like it. It's sociable and fun, and easy with a couple of side dishes of salad, potatoes, pasta, rice, or whatever you fancy. I made this marinade up yesterday to jazz up the chicken breasts I had, and it was delish. Lovely and moist with a nice flavour.

2 chicken breasts
1 lime, juiced
1 tablespoon minced garlic
1 tablespoon minced ginger
1 teaspoon salt
100 ml olive oil
handful fresh coriander, chopped

Steps:

  • Slice the chicken into bite-sized pieces (I prefer strips like goujons rather than cubes).
  • In a bowl, mix all the ingredients together and add the chicken.
  • Leave to stand for at least one hour, stirring occasionally.
  • Heat your grill and cook each piece for a couple of minutes, until cooked through.

Sauteed Chicken Breasts With Fennel and Rosemary image

The flavors of fennel, garlic, and rosemary married with chicken. The original recipe appeared in Food and Wine and later reprinted on another site. This is my own rendition designed to be both WW point friendly and core. This works really well with steamed carrots, polenta or mashed potatoes.

4 teaspoons olive oil, separated
1 large fennel bulb, cut into 1/2-inch slices (about 1 1/4 pounds, use 2 smaller heads if need be)
2 teaspoons dried rosemary or 2 tablespoons fresh rosemary, crumbled
1/4 teaspoon salt
2/3 cup fat free chicken broth
4 boneless skinless chicken breasts (about 1 1/3 pounds in all)
1/4 teaspoon fresh ground black pepper
2 garlic cloves, minced
2 tablespoons chopped flat leaf parsley

Steps:

  • In a large nonstick frying pan, heat 2 1/2 teaspoon of the oil over moderately high heat. Add the fennel and half of the rosemary.
  • Cook, stirring frequently, until the fennel is golden brown and almost done, about 10 minutes. Add broth and bring to a boil. Cover, reduce the heat and simmer until the fennel is tender, about 3 minutes. Remove the fennel and the cooking liquid from the pan.
  • Heat the remaining 1 1/2 teaspoons oil over moderate heat. Pound chicken breasts so they are of an even thickness. Season the chicken with the 1/4 teaspoon salt and 1/8 teaspoon of the pepper. Add the chicken to the pan with the remaining 1 teaspoon of rosemary and cook until brown, about 4 minutes. Turn and cook until almost done, about 3 minutes longer.
  • Add the garlic; cook, stirring, for 30 seconds. Add the fennel and its cooking liquid and the remaining 1/8 teaspoon pepper. Bring to a simmer. Move the fennel so that it sits on top of the chicken. Cover the pan and simmer on very low heat for 3 minutes. Stir in the parsley and serve.

Found the original recipe in one of those supermarket magazines. (Don't ask me why I still buy them despite the fact that I have hundreds of recipes saved in my cookbooks here waiting to try.) Easy to prepare and great results make this a winner for me. The original calls for conventional (out of the jar) ground corriander. I like to toast my seeds and coarsely grind them as it adds a nice toasty flavor and rustic look to the dish. Do what works best for you. Please note preparation time does not include 3-24 hour marinading time.

4 boneless skinless chicken breasts
salt and pepper
3 garlic cloves, minced
3 lemons, juice and zest of
1 jalapenos or 1 red chili pepper, seeded and finely chopped
4 tablespoons honey
3 -4 tablespoons coriander seeds or 2 tablespoons ground coriander

Steps:

  • Start off by putting the coriander seeds in a skillet over high heat. Toast for a few minutes until the seeds begin to release a pleasant aroma. Crush the seeds in a grinder, with a mortar and pestle, or with the back of thick knife.
  • Measure out 2 tablespoons of the ground coriander and place into a resealable bag or non reactive dish. Add in the garlic, lemon zest, minced peppers, lemon juice and honey.
  • Prepare the chicken breasts with a light dusting of salt and pepper and place in the marinade. Marinate for a minimum of 3 hours or up to 24 hours.
  • Preheat oven to 400 degrees. Place the chicken breasts skinned side up into a roasting pan. Cover with the marinade. Cover dish with foil or lid and bake 20 minutes. Remove foil or lid and baste the chicken breasts with the glaze at the bottom of the pan. bake and additional 18-20 minutes until the chicken is tender and juices run clear. Give a final baste and serve.
