GARLIC ROASTED CHICKEN AND POTATOES

I've been making this recipe for so many years, I can't remember where I got it from. It's really quick to throw together. After fixing it several times, my husband 'discovered' that you were supposed to spread the garlic on the chicken. It's one of his favorites now. This recipe is very easy to adjust up or down. Just make sure your pan is big enough if adjusting up. I usually add more potatoes, since we like them. Serve with a mixed greens salad.

¼ cup butter
6 chicken leg quarters, split into drumsticks and thighs
6 large Yukon Gold potatoes, cut into chunks
24 cloves garlic, unpeeled
salt and ground black pepper to taste
¼ cup maple syrup

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place the butter into a roasting pan, and melt in the oven. When butter is melted, swirl to coat the bottom of the roasting pan, and place the chicken drumsticks and thighs, potatoes, and unpeeled garlic cloves into the pan. Sprinkle with salt and black pepper; turn the chicken, potatoes, and garlic to coat with butter.
  • Bake in the preheated oven until the chicken is no longer pink inside and the juices run clear, about 40 minutes, basting 3 times with pan drippings. Brush maple syrup over the chicken pieces, and spoon pan drippings over the potatoes.
  • Return to oven, and bake until the chicken and potatoes are tender and browned, about 20 more minutes. An instant-read thermometer inserted into a thick part of a thigh should read at least 165 degrees F (74 degrees C). To serve, squeeze garlic from the baked cloves, and spread the soft garlic over the chicken. Pour pan juices over chicken and potatoes.

4 chicken breasts (bone-in, skin on)
6-8 potatoes (Yukon Gold or red-skinned are best)
1 tsp Kosher salt
1 tsp cumin
1 tsp dry thyme
1 tsp paprika
1 tsp chili powder
1 clove garlic (crushed minced)
2 tbs. olive oil
2 tbs. rice wine vinegar

Steps:

  • Preheat oven to 425 degrees.
  • Dice the potatoes and put in large mixing bowl.
  • Whisk together the salt, spices, garlic, oil and vinegar.
  • Pour most of mixture over the potatoes, and mix to coat them.
  • Scoop out the potatoes and place in large baking dish or roast pan.
  • Add the rest of the spice sauce to mixing bowl, then put in chicken breasts, and coat them well.
  • Put the breasts on top of the potatoes bone side down. Cover dish snugly with foil, and bake for 30 minutes.
  • Uncover and bake for 8-10 minutes to brown chicken. Reserve the foil.
  • Remove the chicken so it doesn't dry out. Put on the foil and wrap loosely (It will be warm and perfectly rested when the potatoes are done).
  • Stir the potatoes, then put them back in the oven, raise temp to 450, and bake for 8-10 more minutes.
  • Serve with vegetable of choice.

3 tablespoons extra-virgin olive oil
1/2 teaspoon cumin seeds (optional)

2 tablespoons packed light brown sugar
1 lemon (1/2 juiced, 1/2 cut into wedges)
Pinch of red pepper flakes
4 skinless, boneless chicken breasts (1 1/2 to 1 3/4 pounds)
2 tablespoons chopped fresh cilantro or parsley

Steps:

  • Position a rack in the lower third of the oven and preheat to 425 degrees F. Toss the potatoes with 1 tablespoon olive oil, the cumin seeds, 3/4 teaspoon salt, and pepper to taste. Spread in a large baking dish and roast until the potatoes begin to brown, 25 to 30 minutes.
  • Meanwhile, heat the remaining 2 tablespoons olive oil in a small skillet over medium heat. Add the garlic and cook, stirring frequently, until lightly golden, about 2 minutes. Remove from the heat and stir in the brown sugar, lemon juice and red pepper flakes. Remove the baking dish from the oven, push the potatoes to the sides and arrange the chicken breasts in the middle. Season the chicken with salt and drizzle with the garlic mixture. 1 1/2 lbs ruby gold petite potatoes

3 tablespoons chopped fresh or 1 tablespoon dried oregano, divided
2 garlic cloves, minced
8 fresh basil leaves

  • Preheat oven to 450 degrees.
  • Remove and discard giblets and neck from chicken. Rinse chicken with cold water; pat dry. Trim excess fat. Starting at neck cavity, loosen skin from breast and drumsticks by inserting fingers, gently pushing between skin and meat.
  • Combine 2 tablespoons chopped oregano and garlic cloves. Rub seasoning mixture under loosened chicken skin and drumsticks. Carefully place basil leaves under loosened skin. Tie ends of legs with cord. Lift wing tips up and over back; tuck under chicken.

1(3 to 4 pound) chicken, rinsed and patted dry
4 tablespoons (1/2 stick) unsalted butter, softened
2 tablespoons minced fresh rosemary
2 tablespoons minced fresh thyme
1 clove garlic, minced
Kosher salt and freshly ground black pepper
1/2 cup white wine
1 1/2 pounds red potatoes
2 tablespoons extra-virgin olive oil
Juice of 1/2 lemon

Steps:

  • Allow the chicken to rest at room temperature for 30 to 60 minutes.
  • Preheat the oven to 425 degrees F.
  • In a small bowl or mini prep, mix together the butter with the rosemary, thyme, garlic, salt, and pepper. Pat the chicken dry with paper towels, then rub the chicken all over with 3 tablespoons of the herbed butter. Cook's Note: Make sure chicken is dry. Slide some of the butter underneath the breast skin. Tie the chicken legs together with kitchen string.
  • In a small roasting pan, pour in the white wine and place the chicken breast side down. Roast for 15 minutes. In a medium bowl, season the potatoes with salt, and pepper and drizzle with oil to coat. Remove the roasting pan from the oven. Remove the chicken to a plate turning it breast-side up. Brush the rest of the herbed butter on top of the chicken. Add the potatoes to the bottom of the pan and place the chicken on top.
  • Lower the oven temperature to 325 degrees F, and return the chicken to the oven to finish roasting until an instant-read thermometer inserted in the thickest part of the inner thigh, not touching the bone, reaches 160 degrees F, about 1 hour more. Once done, remove the chicken to a carving board and let rest 10 minutes before carving. Remove the potatoes to a serving bowl.
  • Return the roasting pan to the stovetop over high heat. Deglaze the pan with the lemon juice, scraping up the bits stuck to the bottom of the pan.
  • To serve: Place slices of chicken on plate with potatoes and drizzle the pan sauce over both.

Roast the whole chicken breasts with the skin on and bone in to yield maximum flavor and juiciness, but remove the skin before eating for a lighter meal.

3 one-and-a-half-pound whole chicken breasts, bone in and skin on
3 pounds mixed small potatoes, such as red new potatoes, Yukon gold, and fingerling
1 head garlic
2 tablespoons olive oil
1 1/2 teaspoons salt
1/2 teaspoon freshly ground pepper
Rosemary springs for garnish
Olive-oil, cooking spray

Steps:

  • Let the chicken breasts stand at room temperature for 15 minutes. Heat oven to 400 degrees with two racks centered. Lightly spray two 14-by-12-inch roasting or jelly-roll pans with cooking spray. The potatoes may be peeled or not, as desired. If the potatoes are larger than 1 1/2 inches in diameter, cut them into 1 1/2- to 2-inch chunks.
  • Separate garlic head into cloves. Divide potatoes and garlic cloves between roasting pans. Drizzle potatoes and garlic in each pan with 1 tablespoon olive oil. Lightly toss potatoes and garlic until they are covered with oil. Place one whole chicken breast, skin-side up, in one pan. Place remaining two whole breasts in the other pan, skinsides up. Golden chicken and potatoes roast together in a buttery seasoning that starts with Italian salad dressing mix.

2 small heads garlic, unpeeled
¼ cup butter, at room temperature
1 (.6 ounce) package dry Italian salad dressing mix (such as Good Seasons®)
1 teaspoon chopped fresh thyme
½ teaspoon ground paprika
1 (6 pound) roasting chicken
1 ½ pounds red new potatoes, halved

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Cut off and discard 1/2 inch from the top of each garlic head.
  • Combine butter, Italian dressing mix, thyme, and paprika in a large bowl.
  • Place chicken in a large roasting pan. Spread 1/2 of the butter mixture over the chicken skin.
  • Add potatoes to the bowl with the remaining butter mixture; toss until coated. Place potatoes in the pan around chicken, then add garlic heads, with cut-sides up.
  • Roast in the preheated oven until no longer pink at the bone and the juices run clear, about 1 hour 50 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 180 degrees F (82 degrees C). Remove from the oven, and let rest 10 minutes.
  • While the chicken is resting, remove garlic from the pan. Allow it to cool slightly, then slip garlic cloves from the skins. Place 1/2 of the garlic in a bowl; stir in potatoes and transfer to a platter.
  • Carve chicken and transfer to the platter.
  • Skim and discard fat from pan drippings; transfer drippings to a bowl. Mash remaining garlic into the drippings. Serve with chicken and potatoes.

3/4 pound ramps
1 (3- to 3‚-pound) chicken, cut into 8 pieces
1 pound small red potatoes, halved
2 1/2 tablespoons olive oil
1/2 cup dry white wine
1 cup chicken broth

Steps:

  • Preheat oven to 500°F.
  • Trim roots from ramps and slip off outer skin on bulbs if loose. Cut off and reserve leaves, leaving white bulbs attached to slender pink stems.
  • Put leaves and bulbs in separate bowls.
  • Pat chicken dry. Put in a flameproof large shallow roasting pan, without crowding, and surround with potatoes. Drizzle with 2 tablespoons oil and rub all over to coat evenly. Arrange chicken skin sides up and season with salt and pepper. Roast in upper third of oven 20 minutes.
  • Toss bulbs with remaining 1/2 tablespoon oil and season with salt. Scatter bulbs around chicken and roast mixture until breast pieces are just cooked through, 10 to 15 minutes. Transfer breast pieces to a platter and keep warm. Roast remaining chicken and vegetables 5 minutes more, or until cooked through. Transfer to platter and keep warm, loosely covered with foil. (If crisper skin is desired, broil chicken only, skin sides up, about 2 minutes.)
  • Pour off fat from roasting pan and straddle pan across 2 burners. Add wine and deglaze pan by cooking over high heat, scraping up brown bits.
  • Boil wine until reduced to about 1/4 cup and add broth. When broth boils, add ramp leaves and stir until wilted and tender, 1 to 2 minutes. Remove with tongs and add to chicken. Boil pan juices until reduced to about 1/2 cup and pour around chicken.

1 cup kosher salt or 1/2 cup table salt (for brine)
1/2 cup sugar
1 whole chicken (3 1/2 to 4 pounds)
3 tablespoons garlic butter, for, placing, under, skin, optional
2 1/2 lbs russet potatoes, peeled and sliced 1/4-inch thick (4 to 5 medium)
vegetable oil cooking spray
1 1/2 tablespoons olive oil
3/4 teaspoon salt (for potatoes)
black pepper

Steps:

  • Dissolve salt and sugar in 2 quarts cold water in large container.
  • Immerse chicken and refrigerate until fully seasoned, minimum 1 hour, maximum 4 hours.
  • If you're planning on cooking immediately adjust oven rack to lower-middle position and heat oven to 500 degrees.
  • Line bottom of broiler pan with aluminum foil and spray with spray.
  • Remove chicken from brine, rinse with water.
  • Butterfly chicken, flatten breastbone and smeer on flavored butter.
  • Place chicken on the top of the broiler pan.
  • For the crispest skin the bird should be placed, uncovered in the fridge for 8 hrs or overnight, Toss potatoes with oil, salt, and pepper in medium bowl.
  • Spread potatoes in even layer in foil-lined broiler pan bottom.
  • Place broiler pan rack with chicken on top.
  • Rub chicken with remaining 1 1/2 teaspoons oil and sprinkle with pepper.
  • Roast chicken until spotty brown, about 20 minutes.
  • Rotate pan and continue to roast until skin has crisped and turned deep brown-- 20-25 minutes longer.
  • A thermometer should registers 160 degrees in thickest part of breast Transfer chicken to cutting board and tent with foil.
  • Remove HOT broiler pan rack; soak up excess grease from potatoes with paper towels.
  • Carefully peel back foil, using a metal spatula to help scrape potatoes off foil as needed.
  • With additional paper towels, pat off remaining grease.
  • Cut chicken into serving pieces and serve with potatoes.

Steps:

  • Place the chicken, potatoes and garlic in a large roasting pan. Drizzle with butter; sprinkle with 3/4 teaspoon salt. Toss to coat. 1 chicken breast, skin on
1/2 cup potato
1 teaspoon turmeric
1 lemon
1/2 teaspoon ground cumin
5 sprigs of chopped fresh cilantro
1/4 of a red pepper
1 inch piece fresh ginger
olive oil
sea salt & freshly ground black pepper

Steps:

  • Preheat the oven to 400°F.
  • Peel a large potato, cut them into 1-inch dice and put them into a pan of cold salted water. Bring to the boil, simmer for a few minutes, drain and allow to steam in a colander.
  • Put a heaped teaspoon of turmeric into a bowl and add the zest of 1 lemon, half a teaspoon of ground cumin, 5 sprigs of chopped fresh cilantro, a quarter of a red pepper, roughly chopped and a 1-inch piece of fresh ginger, peeled and finely sliced into matchsticks.
  • Cut 3 slices off the lemon and set aside. Squeeze the juice from the remainder of the lemon into the bowl.
  • Shake the potatoes up in the colander and add them to the bowl with 1 chicken breast, skin left on. Toss everything around with a splash of olive oil and season well with sea salt and freshly ground black pepper.
  • Remove the chicken, put the potatoes into the pan in one layer, and top with the lemon slices and the chicken. Drizzle with olive oil and cook in the middle of the oven for 25 to 35 minutes.

I like to par boil the potatoes and place them in the baking pan along with the chicken. They can easily be butter tossed and seasoned after they roast. Also, I have found that 1/2 a cup of bread crumbs isn't enough to well cover 4 breasts.

1/2 cup breadcrumbs
1 teaspoon salt
1/2 teaspoon paprika
1/8 teaspoon salt
1/8 teaspoon ground black pepper
2 eggs, beaten
1 lb small red potato
1 tablespoon butter

Steps:

  • Heat oven to 375°F.
  • Place chicken breasts between layers of plastic wrap or waxed paper; pound to 1/2-inch thick and set aside.
  • In a shallow dish, combine bread crumbs, salt and paprika on a plate.
  • Season chicken breasts with salt and pepper; dip into beaten egg, then coat with bread crumb mixture.
  • Place in an oven-proof dish and bake until lightly brown, crisp and no longer pink on the inside.
  • Meanwhile cook the potatoes in water to cover until they are tender but not mushy, about 12 minutes. Drain, toss with butter and season with salt and pepper.
