This simple turkey gravy is...wait for it...simple! You don't want to use gravy from a can or from a package when it's this easy and delicious!

Steps:
- Heat fat from turkey drippings in a saucepan over medium-low heat until liquefied, 2 to 3 minutes. Whisk flour into turkey fat until golden, about 5 minutes.
- Whisk liquid from turkey drippings and turkey stock into fat-flour mixture; increase heat to medium and cook, whisking continuously, until gravy is smooth and desired consistency, 5 to 10 minutes. Season gravy with pepper.

Steps:
- In a saucepan, saute onion, mushrooms and parsley in ¼ cup broth until vegetables are tender.
- Combine cornstarch, pepper, and ½ cup of broth; stir until smooth.
- Add to pan with the remaining broth.
- Bring to a boil, stirring occasionally; boil for 2 minutes.
GRAVY FOR BEEF, PORK, CHICKEN OR TURKEY
This is for all the 30-something's learning to cook and say, "but I don't know how to make gravy like Mom's!" This is a basic "how-to" but you can be individually creative with your tastes by spicing it up with hot spices or giving it a foreign flare with curry or chinese 5-spice. Use your imagination and don't be surprised if you like your results, better than Mom's!

- Variations: Add fresh sliced mushrooms, or onions, or hot pepper flakes, or any special spice to create a foreign flavor such as cummin or curry.
- This is a basic recipe to making gravy for any type of oven-roasted meat.
- In a small bowl, add water and flour, stirring to get out all lumps.
- Remove meat from the roasting pan leaving all the liquid and dried bits.
- On the stovetop, over a low heat, add water to pan drippings, stirring constantly with a wooden spoon, dissolving all the flavors from the bottom of the pan.
- As the liquid thickens, add salt, pepper, and spices, including the gravy master.
- If gravy is too thick, add more water, a little at a time while stirring.
- Stop at the desired thickness.
- Remove from the heat.
- Pour gravy through a strainer to remove any lumps, debris that did not dissolve.
- Fill your favorite gravy boat and serve!
- *If gravy is too thin, add 1 teaspoons of flour at a time (again, diluted in 1/4 cup of cold water) until the desired thickness is achieved.
- Amount will depend on how much liquid is in your roasting pan after meat has cooked.
- By adding more water and adjusting the flavorings, you could s-t-r-e-t-c-h this recipe to accommodate the servings required, but be careful not to lose the richness of the meat flavor.

- Remove the wrapping, and place the giblets and turkey neck into a large saucepan with onion, celery, white pepper, and turkey gravy mix. Pour the chicken broth over the mixture, bring to a simmer over medium-low heat, and simmer for 30 minutes. Remove the turkey liver and set aside. Allow the stock to simmer for 2 1/2 more hours. Stock should equal about 3 cups; add more chicken broth if necessary. Remove the giblets and chop them if you want to put them back into the gravy. Chop the liver if desired. Strain the stock into a saucepan; discard bones and spent vegetables.
- When the turkey is finished roasting, pour the drippings into a fat separator or bowl, and skim off the fat. In a bowl, whisk the quick-mixing flour with the pan drippings until smooth, then whisk the flour mixture into the stock. Bring the gravy mixture to a simmer over medium heat, whisking constantly, and add the chopped giblets, if desired.

GRAVY WITHOUT THE TURKEY
I don't remember where I found this, but I added in my own spices to give it my own flare! This is awesome gravy when you don't have beef or turkey drippings, tastes exactly the same.

Steps:
- In a small pan on medium heat mix the 3 cups of water with the chicken and beef bouillon. Keep stirring until its all dissolved. Don't let it come to a boil. Add the sage, thyme and pepper; mix well and set this aside.
- in another pan melt the butter on low heat. When its all melted add the flour and gravy mix. Keep stirring till it looks like a paste and all flour is dissolved.
- Next add the bouillon mixture into the paste, stir until all the paste has dissolved and you have a gravy consistency. If you like your gravy a bit thinner, you can add water to thin it out.
- ENJOY!
