1 tablespoon olive oil
1 pound chicken breasts (sliced into 1/4" slices then 2" pieces)
1/2 large onion, chopped
1 red bell pepper (chopped into 1" pieces)
5 oz. (1 cup) green beans (chopped into 1" pieces)
2 cups cauliflower (chopped into bite size pieces)
2 teaspoons freshly grated ginger
3 cloves garlic (minced)
2 tablespoon curry powder
1 13.5 oz. can coconut milk ((I like Chaokoh))
1 tablespoon cornstarch
2 tablespoons less sodium soy sauce
2 tablespoon fish sauce (may sub soy sauce)
2 tablespoons lime juice
2 tablespoons Asian/Thai Sweet Chili Sauce ( like Mae Ploy)
1/2 tablespoon brown sugar
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
1-3 teaspoons Asian hot chili paste/sauce (or more to taste)
cilantro
crushed peanuts

Steps:

  • Heat oil over medium high heat in large skillet. Add chicken, onions and curry powder and cook just until chicken is no longer pink. Add bell peppers, cauliflower, green beans, ginger and garlic, and sauté 1 minute.
  • Add half of the coconut milk (eyeball it). Mix remaining coconut milk with 1 tablespoon cornstarch and add to skillet along with all remaining ingredients (expect Garnishes).
  • Bring to a boil, then reduce to a simmer for 5 minutes or until the sauce thickens and the vegetables reach desired crisp-tenderness.
  • Garnish with additional optional fresh basil, cilantro, lime zest, lime juice and chili sauce to taste. Serve with rice.

Steps:

  • Heat the oil in a large sauté pan on medium heat. Add the onion, red bell pepper and garlic cloves and cook for 3-4 minutes.
  • Add the cubed chicken and sprinkle the spices on top. Cook for 5-7 minutes or until the chicken is cooked through, stirring frequently.
  • Add the coconut milk and lime juice and simmer for an additional 5 minutes.
  • Serve with rice and garnish with fresh cilantro.

2 Skinless, boneless chicken breasts
2 teaspoons Vegetable oil
1 Whole green onion, chopped
2 teaspoons Thai Red Curry
1/3 Cup Canned low salt chicken broth
1/2 Cup Canned unsweetened coconut milk
1 Tablespoon Fresh lime juice

Steps:

  • Place the chicken between two sheets of waxed paper, using a mallet or rolling pin, pound out the chicken until an even 1/2 inch thickness. Dice chicken into bite-sized pieces. Season the chicken with salt and pepper. Heat oil in a large nonstick skillet over high heat. Add the chicken, saute until browned and almost cooked through, about 2 minutes. Transfer chicken to a plate. While chicken is cooking, combine curry powder with a few spoonfuls of warm water and stir it into a paste.Reduce heat to medium-low, add the green onion and curry paste to the skillet, stir 1 minute. Add broth and boil until reduced to a glaze, about another minute. Add the coconut milk and cook down, stirring constantly, until the sauce coats a spoon. Mix in lime juice. Return chicken and any collected juices to the skillet. Reduce the heat to med-low, simmer until the chicken is fully cooked, about 2 minutes. Transfer the chicken to plates, and spoon the sauce over evenly.

This is what I feel better represents the sweet and savory flavor you get in a restaurant. I use generous amounts of sugar, cinnamon, and some butter, so if you plan on making this often you might want to try some of the others since mine is packed with the best stuff on earth that is worst for you! But it tastes so good!

2 skinless, boneless chicken breast halves

1 tablespoon vegetable oil
2 green onions, chopped
1 tablespoon curry paste, or more to taste
⅓ cup chicken broth
½ cup coconut milk

2 teaspoons chopped fresh cilantro

Steps:

  • Place the chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken with the smooth side of a meat mallet to a thickness of about 1/2 inch. Sprinkle the chicken on both sides with salt and pepper.
  • Heat the vegetable oil in a skillet over high heat, and pan-fry the chicken breasts until the meat is no longer pink, about 4 minutes per side. Transfer the chicken breasts to a plate.
  • Reduce the heat to medium; stir the green onions and curry paste into the skillet, and cook for 1 minute, stirring frequently. Pour the broth into the skillet, and scrape up and dissolve any brown flavor bits in the skillet with a spoon. Mix the lime juice into the sauce, and stir in any juices that have collected from the chicken. Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F. Spray a 9 x 13-inch glass baking dish with nonstick cooking spray and set aside.
  • In a large saucepan, combine butter and olive oil over medium heat and heat until butter melts. Add onion and garlic; cook and stir until tender, about 6 to 7 minutes.
  • Add curry powder to saucepan; cook and stir for 1 minute. (This helps bloom the spices in the curry powder and enhances the flavor.)

This dish from "Burma Superstar" by Desmond Tan and Kate Leahy (Ten Speed Press, 2017), needs time on the stove but not much attention, and gets even better after resting in the fridge, making it an ideal weeknight meal that can last days. There's plenty of coconut milk broth to spoon over rice or noodles. At his restaurant, Burma Superstar in Oakland, Calif., Mr. Tan also serves this with platha, a buttery, flaky Burmese flatbread, for dipping.

2 1/2 pounds boneless, skinless chicken thighs
1 tablespoon ground paprika
1/2 teaspoon ground turmeric

Steps:

  • Trim the chicken thighs of excess fat and cut into 1/2- to 1-inch pieces; transfer to a bowl. Add the paprika, turmeric and salt, and use your hands to mix well. Let the chicken marinate at room temperature while you prepare the other ingredients, or cover and refrigerate overnight.
  • In a large pot, heat the oil over medium-high. Stir in the onions, lower the heat to medium-low and cook gently, stirring often to prevent scorching, until tender and translucent, 8 to 10 minutes. Add the garlic and continue to cook, stirring often, until most of the water from the onions has been cooked out and a glossy layer of oil has risen to the surface, about 5 minutes more.
  • Add the marinated chicken and stir to release the spices into the onion. Pour in the coconut milk and bring to a near boil. Let the coconut milk simmer briskly for about 4 minutes to thicken a bit. Lower the heat to medium-low and add the fish sauce. Stir in 1 1/2 cups water and bring to a near boil. The broth will thin out as the chicken starts to release its juices.
  • Lower to a gentle simmer and cook, stirring occasionally, until the chicken is tender, 30 to 45 minutes. Droplets of paprika-red oil will rise to the surface. Stir in the curry powder and cayenne, simmer briefly and remove from the heat.
  • If time permits, let the curry sit for at least 20 minutes before serving. This allows the chicken to soak in more flavors as the curry cools. Bring to a simmer again right before serving and taste, adding more salt or fish sauce if desired. Serve over rice or noodles, with bowls of cilantro and lime wedges.

MARINATED CHICKEN BREAST WITH COCONUT CURRY SAUCE

This is different from any other curry I've made in that the chicken is first marinated, and not cooked in the curry sauce itself. The contrasting yet complementary flavors of the marinade and sauce make for an unusual and attractive dish. This pairs especially well with the "Cardamon and Fennel Flavored Rice" recipe which I've posted as well. Preparation time includes 2 hour marinating time. Do not marinate this overnight as the lemon juice will break the fibers of the chicken down too much.

1 lemon, juice of

  • Cover, and refrigerate for 2 hours.
  • Pre-heat oven to 400°F.
  • Heat the olive oil in a frying pan and brown the chicken on both sides.
  • Season with salt and pepper to taste.
  • Transfer chicken to a small roasting pan and cook in the oven for 20 to 30 minutes, or until juices run clear.
  • As this is cooking, place the chili, lemon grass, coriander seeds, lime juice, shallot, garlic and ginger in a small food processor and blend into a paste.
  • Heat the peanut oil in a small sauce pan.
  • Add in the paste and gently fry for 5 minutes, stirring often.
  • Add in the coconut milk and mix well.
  • Bring to a boil, stirring, then reduce the heat and simmer until the sauce reduces and thickens.
  • Remove the chicken to the serving plate and spoon the sauce over the top.
  • Serve with rice.
