CHICKEN & PUMPKIN TORTILLA (21 DAY WONDER DIET: DAY 21)



Chicken & Pumpkin Tortilla (21 Day Wonder Diet: Day 21) image

This is Day 21: Lunch, on the 21 Day Wonder Diet. You can make the filling the night before, and then fill the tortilla in the mornng. I have posted the assembly instructions as they were written in the book, but I simply rolled mine like burritos, and toasted them in the sandwich press. Delicious! This lunch is to be followed by an afternoon snack of 100g skim-milk fruit flavoured yogurt.

160 g chicken breast fillets
1 tablespoon taco seasoning mix
cooking spray
150 g butternut pumpkin, cut into 1cm cubes
2 tablespoons fresh coriander, coarsely chopped
1/3 cup low fat cottage cheese
2 green onions, finely chopped
2 tablespoons lime juice
1 garlic clove, crushed
30 cm flour tortillas

Steps:

  • Combine chicken and seasoning in a small bowl.
  • Spray chicken with cooking oil. Cook chicken on 1 side, in a medium heated frying pan for 5 minutes. Turn chicken; add pumpkin. Cook chicken and pumpkin, uncovered, about 5 minutes or until both are cooked.
  • Chop chicken coarsely, combine in medium bowl with umpkin and coriander.
  • Combine cheese, onion, juice and garlic in small bowl.
  • Spread cheese mixture, then chicken mixture on one tortilla; top with remaining tortilla. Serve cut into wedges.

This is Day 18: Breakfast, on the 21 Day Wonder Diet. These beans are so rich and filled with flavour that it is hard to believe they are such a low-kilojoulle, healthy meal! This is one of my favourite breakfasts! You can use any canned white bean you like (my favourites to use are butter beans or cannelini beans). This breakfast is to be followed by a mid-morning snack of 2 kiwifruit.

1 small brown onion, finely chopped
1 garlic clove, crushed
2 shortcut bacon, rashers chopped finely
400 g diced tomatoes
1 tablespoon tomato paste
1 tablespoon coarse grain mustard
400 g white beans, rinsed and drained
2 tablespoons flat leaf parsley, coarsely chopped
2 slices rye bread, toasted

Steps:

  • Cook onion, garlic, and bacon in heated medium saucepan until onion softens. Add undrained tomatoes, paste, and mustard;cook, stirring, until hot. Add beans. Cook, stirring, until hot. Stir in parsley.
  • Serve bean mixture with toast.

This is Day 21: Breakfast, on the 21 Day Wonder Diet. These are totally delicious, and easily doubled to feed the family! This breakfast is to be followed by a mid-morning snack of 1 muesli muffin (See day 20: Breakfast, Recipe #366085 ).

2 slices shortcut bacon, rashers chopped finely
2 eggs
2 slices rye bread, toasted
1 small tomatoes, chopped finely

Steps:

  • Preheat oven to 200°C.
  • Divide bacon between 2 muffin pan holes. Crack an egg into each hole. Bake about 15 minutes, or until egg is set. Loosen edges of pies from pan.
  • Serve pies on toast, sprinkled with tomato.

CHICKEN WALDORF SALAD (21 DAY WONDER DIET: DAY 11)

This is day 11: Lunch, on the 21 Day Wonder Diet. If you are taking this salad to work, make sure the apple is coated with the dressing to stop the flesh discolouring. This lunch is to be followed by an afternoon snack of 1 medium orange.

2 cups water
200 g chicken breast fillets
1/4 cup skim-milk natural yogurt
2 tablespoons lemon juice
1 teaspoon coarse grain mustard
1 small red apple, thinly sliced
3 trimmed celery, salks sliced diagonally
2 tablespoons flat leaf parsley, coarsely chopped

Steps:

  • Bring the water to th eboil in a medium saucepan; add chicken. Simmer, covered, about 10 minutes or until chicken is cooked. Cool chicken in poaching liquid for 10 minutes; drain, then slice thickly.
  • Meanwhile, combine yogurt, juice and mustard in medium bowl. Add apple, celery, parsley and chicken; mix gently.

This is Day 4: Dinner, on the 21 Day Wonder Diet. if you prefer not to use tenderloins, you can use 280g chicken breast, cut into strips, instead.

1/3 cup skim-milk natural yogurt
1/3 cup coriander, coarsley chopped
2 tablespoons lemon juice
2 small pappadams, 20g
280 g chicken tenderloins
2 tablespoons tandoori spice mix
cooking spray
100 g baby spinach leaves
130 g lebanese cucumbers, halved lengthways and sliced thickly
125 g yellow teardrop tomatoes

Steps:

  • Combine yogurt, coriander and juice in small bowl.
  • Cook pappadums in microwave oven on medium (50%) for about 40 seconds; break into pieces.
  • Sprinkle chicken with tandoori owder; spray with cooking oil. Cook chicken on heated grill plate. Slice thickly.
  • Combine spinach, cucumber and tomatoes in medium bowl; add chicken. Serve salad sprinkled with pappadums, then drizzled with coriander yogurt.

1/3 cup low fat cottage cheese
4 slices rye bread, toasted
20 g baby rocket
1 small tomatoes, thinly sliced

Steps:

  • Spray chicken with olive oil, heat medium frying pan, cook chcken. Cover chicken; stand 5 minutes, then slice thinly.
  • Cook bacon in same pan until crisp.
  • Divide half the cheese between two toast slices; top with rocket, tomato, chicken, bacon, remaining cheese, and toast.
