1 cup and 2 Tablespoons Water
1 Tablespoon active yeast
1 Tablespoon raw sugar or Maple syrup
2 cups unbleached white flour or bread flour
1 cup whole wheat flour
1 cup cauliflower rice/grated/pulsed
1 1/4 tsp salt
1/4 tsp cumin powder (optional)
1/4 tsp Italian herb blend (optional)
1 Tablespoon extra virgin olive oil (optional

Steps:

  • Activate the yeast in 1/4 cup warm water, with sugar. Mix and let sit for 5 minutes or until frothy. Grate, pulse or rice the cauliflower and measure 1 packed cup. I put 1.5 loaded cups small florets in the Blendtec and it game me a cup of cauliflower rice. In a bowl, mix all the flours, salt, spices, grated cauliflower. Add the yeast mixture, oil and a 3/4 cup water and knead into a dough. Add more water if needed. I needed 2 Tablespoons more. Knead for 6-8 minutes. Spray water on top, cover with a towel and let the dough rise until doubled. 1.5-2 hours. Punch the dough down, use a tablespoon or so flour and shape into a jelly roll. Place seam side down in a bread pan. Spray water on top. Sprinkle Sesame seeds or oats. Cover with a towel and let rise for 45 minutes, or until close to doubled. The rise time depends on the ambient temperature, so as soon as the the bread has risen more than 1.5 time its original size, start up the oven to pre-heat. Bake in pre-heated 375 degrees F for 35-40 minutes. Take bread out and remove from pan. Let cool completely before slicing.

1 head cauliflower
1/4 cup extra-virgin olive oil
2 teaspoons mustard powder
2 teaspoons smoked paprika
Kosher salt and freshly ground pepper

1/4 cup yellow mustard
Kosher salt and freshly ground pepper
1 tablespoon stone-ground mustard
1 tablespoon honey
Kosher salt and freshly ground pepper
4 tablespoons salted butter, at room temperature
8 slices sourdough bread
8 ounces butterkase or gruyere cheese, shredded
2 pears, thinly sliced

Steps:

  • Roast the cauliflower: Preheat the oven to 450 degrees F. Cut off the cauliflower stem, then place the head cut-side down and slice into 1/2-inch-thick steaks. In a small bowl, whisk together the olive oil, mustard powder, paprika and some salt and pepper. Brush the cauliflower steaks with the spiced oil. Place them flat on a baking sheet and roast for 10 minutes. Carefully flip the cauliflower, return to the oven and roast until golden, another 10 to 12 minutes.
  • Meanwhile, make the honey mustard: In a small bowl, mix together the yellow mustard, stone-ground mustard and honey. Season with salt and pepper. Set aside.
  • For the sandwich build: Melt 2 tablespoons butter on a griddle over medium-low heat. Spread some honey mustard on 4 pieces of bread; top each with some cheese, roasted cauliflower, sliced pears, more cheese and another piece of bread. Place 2 sandwiches on the griddle and cover with a metal bowl. Cook until golden and crisp on the outside and gooey in the middle, 4 to 5 minutes per side. Add the remaining 2 tablespoons butter to the griddle and repeat with the remaining sandwiches. Serve with the remaining honey mustard.

The age old question - what to do with cauliflower? This is a fabulous sandwich filling reminicent of egg salad. Delicious with sliced tomatoes or bits of broccoli added, and great stuffed into a pita. Also great on whole wheat toast. Healthy too!

1 head cauliflower
1 teaspoon Dijon mustard
2 tablespoons regular mayonnaise or 2 tablespoons light mayonnaise
1 teaspoon lemon juice
salt and pepper
1 sliced tomatoes
1 slice whole wheat bread or 1 slice pita bread
sliced red onion (for garnish) (optional)

Steps:

  • Wash and chop the cauliflower into small pieces. Steam in vegetable steamer or microwave until tender (about 5-8 minutes for small chunks).
  • Drain cauliflower well. Place in bowl and mash with potato masher until crumbly.
  • Add remaining ingredients and mix well. Season to taste.
  • Spread filling onto whole wheat vegan bread or stuff into pita. Garnish with tomato slices (or any other vegetable you like on sandwiches).
  • Enjoy!
