I found this on another site and it is really good. I cook on the stove but it is also great on the grill! Use leftovers and pantry staples to make a delicious and savory burger. This is one of the best Ritz cracker recipes for the grill.

2 cups cooked chicken, finely chopped
8 slices bacon, crisply cooked and crumbled
1/4 cup Ritz cracker, crushed (about 7)
2 eggs, lightly beaten
1 tablespoon Worcestershire sauce
1 dash pepper
2 tablespoons oil
4 slices American cheese
4 hamburger buns, partially split
4 dill pickle slices
4 lettuce leaves

Steps:

  • 1.Mix chicken, bacon, Ritz cracker crumbs, eggs, Worcestershire sauce and pepper until well blended. Shape into 4 patties.
  • 2.Heat oil in large skillet on medium heat 1 minute. Add patties; cover. Cook 3 to 4 minutes on each side or until cooked through, topping each burger with a slice of cheese for the last minute of the cooking time.
  • 3.Place burgers on bottom halves of buns; top each with 1 pickle slice and 1 lettuce leaf. Cover with tops of buns.

A burger recipe that never fails and always tastes great. Quick and simple to prepare but looks (and taste's) like it's been cooked by a gourmet chef! A combination of two different recipes from Bill Granger and Women's Weekly.

1 slice stale bread (torn into chunks)
250 g ground chicken
2 green onions (shallots, finely chopped)
1/4 cup coriander (chopped)
1 egg (lightly beaten)
200 g green capsicum (sliced thinly)
150 g tomatoes (quartered, sliced thinly)
100 g celery (trimmed, sliced thinly)
2 green onions (Shallots, sliced thinly)
1 tablespoon white wine vinegar
1 teaspoon coarse grain mustard
430 g Turkish bread (1 Loaf)
4 butter lettuce leaves
2 tablespoons mayonnaise

Steps:

  • Place bread in a small bowl and cover with water. Set aside to soak for 5 minutes, then drain and squeeze dry. Place in a large bowl with chicken mince, chopped green onion, half of coriander and egg. Mix thoroughly and season. Using wet hands, shape into 4 patties, or flatened balls.
  • Lightly spray a griddle or sandwich press with olive oil and cook patties until browned and cooked through. Set aside.
  • Combine capsicum, tomato, celery, onion, parsley, vinegar, mustard and salt to taste in a medium bowl.
  • Cut the bread into four pieces crossways; split the bread pieces in half. Toast, cut side up, under a preheated grill.
  • Layer four toasted bread pieces with lettuce, capsicum mixture, patties and mayonnaise. Top with the remaining bread slices. Garnish with remaining corriander.

EASY BAKED GROUND CHICKEN BURGERS



Easy Baked Ground Chicken Burgers image

With this burger, you may not even miss the beef. The bacon gives this the perfect 80/20 fat ratio, so don't skip it.

2 pounds ground chicken
½ cup dry bread crumbs
¼ cup dry French onion soup mix
4 ounces bacon, roughly chopped
2 tablespoons butter
1 small onion, sliced
1 cup sliced mushrooms
salt and ground black pepper to taste
6 medium croissants croissants, halved and toasted
6 slices Swiss cheese
6 slices bacon, halved and cooked

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Combine ground chicken, bread crumbs, and soup mix in a large mixing bowl.
  • Place 4 ounces bacon in a food processor. Pulse 10 to 12 times and scrape down the sides. Combine the bacon with the ground chicken mixture; form into 6 patties and place on a baking sheet. Place in a freezer to chill for 12 minutes.
  • Bake patties in the preheated oven for 8 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue cooking until browned, no longer pink, and an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), about 12 minutes more.
  • Meanwhile, set a sauté pan over medium heat. Add butter and once butter is melted, add onion and mushrooms. Allow to soften, about 5 minutes. Sprinkle with salt and pepper.
  • Assemble chicken burgers by adding a chicken patty to each croissant, top with Swiss cheese, bacon, and the onion mushroom mixture. Serve immediately.

There is practically no excuse to have fast food for dinner when it is this quick an easy to fix a tasty meal. Serve this with rice or buttered noodles. Bacon and chicken make a good marriage!

8 slices bacon
3 lbs boneless skinless chicken breasts
salt and pepper
6 scallions
2 tablespoons white wine or 2 tablespoons chicken stock

Steps:

  • Cut bacon into 1/2 inch pieces.
  • Cut the chicken across the grain into 1/2 inch slices and sprinkle with salt.
  • Cut the scallions, including the green tops, into thin slices.
  • Brown the bacon in a large frying pan.
  • Remove it from pan.
  • Put half the chicken in the pan and cook over medium-high heat, stirring frequently, about 3 minutes.
  • Set aside with cooked bacon.
  • Cook remaining chicken in the same way.
  • Return all the chicken and bacon to the pan and cook for another 5 minutes, until chicken is done.
  • Add the wine or stock and stir to deglaze the bottom of the pan.
  • Stir in the scallions.
  • Season to taste with salt and pepper.
