CREAMY CHICKEN AND ASPARAGUS PASTA



Creamy Chicken and Asparagus Pasta image

My family loves this easy pasta dish with penne noodles, chicken and asparagus tossed in a creamy parmesan sauce.

12 ounces penne pasta (, or other bite size pasta)
1 pound boneless skinless chicken breasts (, cut in small pieces)
1 Tablespoon olive oil
1 bunch fresh asparagus spears (, ends removed)
1 1/2 Tablespoons garlic (, minced)
1/4 teaspoon onion powder
1 teaspoon dried basil
1 teaspoon dried oregano leaves
pinch crushed red pepper flakes
1/2 cup low-sodium chicken broth
1/4 cup half and half (, or substitute whole milk or cream)
4 ounces cream cheese (, cut into pieces)
1/3 cup freshly grated parmesan cheese
salt and freshly ground black pepper (to taste)

Steps:

  • Cook pasta according to package instructions. During the last 5 minutes of cooking, add the asparagus to the water. Drain pasta and asparagus.
  • Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 2 minutes, browning it on all sides.
  • Reduce heat to medium. Add the garlic, onion powder, basil, oregano and red pepper flakes to the skillet. Cook for 2 minutes.
  • Add chicken broth, half & half, cream cheese, and half of the parmesan cheese. Stir until well combined. Cook until cream cheese is melted and chicken is cooked through.
  • Add cooked pasta and asparagus toss to combine.
  • Add remaining parmesan cheese and salt and pepper, to taste.
  • Taste and adjust seasonings, if needed. You could also add a splash of milk or chicken broth to thin the sauce, if needed.

1 16 oz. box Bowtie Pasta
2 cups chicken (cubed)
1 bunch asparagus (trimmed and cut into 4)
1/2 cup chicken broth
1/2 cup reserved pasta water
1 tbsp olive oil
2 tbsp minced garlic
1/4 tsp onion powder
1/4 tsp garlic powder
1 tsp dried basil
1 tsp dried oregano
pinch of red pepper flakes
4 oz cream cheese
1/3 cup Half and Half
1/2 cup parmesan cheese (shredded)
garlic salt and pepper to taste (to taste)

Steps:

  • Heat olive oil in a skillet over medium heat and saute your chicken for approximately 15 minutes.
  • Cook pasta according to directions on the package. In the last 5 minutes of cooking, add the asparagus to the water. Drain and set aside while reserving a cup of the pasta water.
  • Once chicken is cooked add minced garlic, onion powder, garlic powder, basil, oregano and red pepper flakes to the skillet. Saute for 5 minutes.
  • To your skillet combine the broth, half & half, cream cheese and half of your parmesan.
  • Add pasta and asparagus to your skillet and stir until well combined. If pasta seems too dry, add reserved cooking water a little bit at a time. Stir over med heat until desired consistency. Add salt, pepper and extra Parmesan to taste

1 (8-ounce) package sliced fresh white mushrooms
1 cup fresh or frozen chopped onion (about 1 medium-large yellow onion)
1 small garlic clove, minced
1/2 teaspoon dried marjoram, crumbled
1/4 teaspoon dried thyme, crumbled
1/4 teaspoon freshly ground black pepper
1 (10-ounce) package carved, fully cooked chicken breast
1 (10-ounce) package prepared alfredo sauce (from the refrigerator counter; use light or reduced-fat, if you like)
1/4 cup dry Marsala, Sherry, or white wine
1 (9-ounce) package frozen asparagus cuts (do not thaw but do separate into individual pieces)
3 cups Al Dente Make-Ahead Rice, reheated, recipe follows
2 quarts water
4 cups uncooked converted white rice (no substitute)

Steps:

  • Heat oil in large, heavy skillet over moderate heat 2 minutes. Add mushrooms, onion, garlic, marjoram, thyme, and pepper and cook, stirring often, until the juice released from the mushrooms evaporates, about 5 minutes.
  • Add chicken, alfredo sauce, and wine; adjust heat so mixture bubbles gently, then cook, stirring frequently and breaking up chicken, until steaming, about 3 minutes.
  • Add asparagus, distributing evenly over surface of mixture, cover and cook just until crisp-tender, 2 to 3 minutes; no longer or asparagus will become mushy.
  • Make a bed of rice on heated deep platter, spoon chicken mixture on top, and serve.
  • Bring water to rapid boil in large (at least 4 1/2-quart), heavy saucepan over high heat.
  • Add rice, stir well, and then return to rapid boil. Adjust heat so water stays at gentle but steady ripple and cook uncovered until all water is absorbed, about 20 minutes. Do not stir.
  • Fluff rice gently with fork and cool 1 hour. Do not cover.
  • Fluff rice gently again, then spoon lightly, do not pack, into plastic storage containers, snap on lids, label, and date. Set in refrigerator or freezer.
  • To reheat refrigerated or frozen rice, pile rice in large fine sieve, fork lightly apart and balance sieve in top of large, heavy saucepan over 2-inches boiling water. Cover loosely with lid or foil and steam until just heated through, 3 to 5 minutes, but times will vary according to amount of rice being reheated and whether it's refrigerated or frozen. Fluff with fork and serve.

red pepper flakes (To taste)

5 oz cream cheese

Steps:

  • Wash and cut asparagus into bite sized pieces and set aside. Bring a pot of water to a boil over high heat on the stove.

4 whole chicken legs, backs removed
3 tablespoons all-purpose flour
3 tablespoons canola oil
1/2 cup white wine
1/2 cup blue cheese, crumbled
2 (10 3/4 ounce) cans condensed cream of chicken soup
1/4 teaspoon salt
1/4 teaspoon pepper
2 lbs asparagus

Steps:

  • Preheat oven to 375 degrees.
  • Cut chicken legs in half at joint.
  • Dredge with flour and set aside.
  • Heat oil in frying pan.
  • Brown chicken pieces on all 4 sides.
  • In a medium bowl, combine wine, blue cheese, soup, salt and pepper.
  • Pour half this mixture into a 12" x 10" glass casserole dish.
  • Place browned chicken on top.
  • Pour remaining soup mixture over chicken.
  • Bake in oven, uncovered, for 30 minutes.
  • Meanwhile, prepare asparagus.
  • Gently bend stalk near end of spear.
  • Stalk will break at point where it becomes too tough to eat.
  • Discard end.
  • Rinse spears under cold, running water.
  • Drain.
  • Cut each spear into 1 1/2" pieces.
  • At end of 30 minutes, remove casserole dish from oven.
  • Scatter asparagus between chicken pieces.
  • Cover tightly with aluminum foil and continue baking for 30 minutes longer or until chicken is cooked.
  • Serve over cooked white rice.

10 uncooked lasagna noodles (about 8 oz), broken into 2-inch pieces
1 bunch asparagus (about 1 lb), trimmed, cut diagonally into 1 1/2-inch pieces
1 jar (15 oz) Alfredo pasta sauce
1/3 cup refrigerated basil pesto (from 7-oz container)
2 cups shredded cooked chicken
1/4 teaspoon salt
1/3 cup shredded Parmesan cheese
1 small tomato, chopped (1/2 cup)

Steps:

  • To toast pine nuts, sprinkle in ungreased heavy skillet. Cook over medium heat 3 to 5 minutes, stirring frequently until nuts begin to brown, then stirring constantly until nuts are light brown. Remove from skillet to plate; set aside to cool.
  • Cook and drain noodles as directed on package, adding asparagus during last 3 minutes of cooking time.
  • Meanwhile, in 3-quart saucepan, heat Alfredo sauce to boiling. Stir in pesto with whisk. Stir in chicken and salt.
  • Reserve 1/4 cup asparagus for garnish. Stir noodles and remaining asparagus into Alfredo-pesto mixture. Cook and stir over medium heat until hot. Sprinkle with toasted pine nuts and cheese; garnish with tomato and reserved asparagus.
