1 tsp. oil
3 skinless chicken breasts (about 500g/1lb 2oz), cut into bite-sized pieces
25 g (1oz) butter
25 g (1oz) plain flour
200 ml (7fl oz) double cream
200 ml (7fl oz) chicken stock
150 g (5oz) asparagus, roughly chopped into 4cm (1½in) pieces
150 g (5oz) frozen peas
Finely grated zest 1 lemon
Small handful fresh parsley leaves, chopped
320 g sheet ready-rolled puff pastry
1 medium egg, beaten

Steps:

  • Preheat the oven to 200°C (180°C fan) mark 6. Heat oil in a large pan and fry chicken for 8min until golden. Tip chicken out on to a plate and set aside.
  • Heat butter in empty chicken pan until melted, stir in flour, then cook for a further minute. Remove from heat and gradually whisk in cream and stock until smooth. Put back on the heat, bring mixture to the boil and bubble for 3min, stirring constantly, until thickened. Stir in chicken, asparagus, peas, zest and parsley and check the seasoning.
  • Spoon mixture into a 2 litre (3½ pint) ovenproof serving dish. Unroll puff pastry and position over top of dish to cover (trim if needed). Brush pastry well with some of the egg, then cook for 25-30min in the oven until pastry is golden and puffed up. Serve.

500 g chicken breasts, cubed
200 g mushrooms, sliced
1 (375 ml) can low-fat evaporated milk
1 tablespoon cornflour
2 teaspoons grainy mustard
2 teaspoons chicken stock powder
1 (400 g) can asparagus, cuts drained
1 sheet puff pastry

Steps:

  • Pre-heat oven to 200°C.
  • Heat oil in pan over medium heat.
  • Brown chicken, add mushrooms and cook for 2 minutes.
  • Add combined evaporated milk, cornflour, mustard, and stock powder.
  • Bring to the boil, simmer covered for 6 minutes, stirring twice.
  • Remove from heat, stir in asparagus.
  • Spoon mixture into 6 individual oven proof dishes.
  • Dive the pastry sheet into 6 squares and top dishes with pastry.
  • Brush with a little egg yolk and slit the pastry.
  • Bake for 15-20 minutes until golden.

8 boiling onions or 8 white pearl onions, peeled
1/4 lb button mushroom
1 ounce unsalted butter
3/4 ounce plain flour
15 fluid ounces milk
1 lb cooked chicken, cut into strips
6 ounces fresh asparagus
salt & freshly ground black pepper
2 tablespoons table cream
1/2 lb puff pastry
egg wash

Steps:

  • Sauté the carrots, onions and mushrooms in the butter, cook for 5 minutes.
  • Stir in the flour and gradually add the milk stirring until the sauce thickens, boils and is smooth.
  • Add the chicken, asparagus, seasoning and cream to the sauce.
  • Pour the mixture into a 1¼-quart pie dish.
  • Roll the pastry to the same size as the dish, dampen the rim and cover with the pastry.
  • Brush with egg wash.
  • Bake at 400°F for 25 minutes until the pastry is golden brown.

3/4 cup sliced large asparagus spears (cut on the bias, 14-inch thick)
One 10-ounce ball white or whole-wheat pizza dough
3/4 cup Cajun Alfredo Sauce, recipe follows
3/4 cup fresh crabmeat, drained and well picked for shells
1/4 cup grated mozzarella cheese
2 tablespoons diced roasted red bell pepper
Freshly cracked black pepper
1/4 cup shaved Parmesan cheese, for garnish
lemon wedges, for garnish (optional)
1 green onion, sliced, for garnish (optional)
Grated zest of 1 lemon
1 tablespoon olive oil
1 tablespoon all-purpose flour

Steps:

  • 1. Place a pizza stone (if using) in a cold oven and preheat the oven to 500 degrees F.
  • 2. Bring 1 quart of salted water to a boil in a medium saucepan and fill a large bowl with water and ice. Add the asparagus to the boiling water and cook for 1 to 2 minutes, then immediately drain the asparagus and drop them into the ice water to stop the cooking. Drain again when cool.
  • 3. When all the ingredients are ready, roll the dough into a 10.5-inch round. Build the pizza in this order: sauce, crab, mozzarella, asparagus, roasted pepper. Add some freshly cracked pepper.
  • 4. Bake the pizza for 12 to 15 minutes, until golden brown.
  • 5. Shave the Parmesan onto the pizza, slice it, and serve with a squeeze of fresh lemon and green onion, and half of the lemon zest.
  • 1. In a medium skillet over medium-high heat, heat the olive oil. Add the flour and stir constantly for 2 minutes to create a roux. Lower the heat to medium, add the garlic, cayenne, ancho chile, nutmeg, cracked pepper, and paprika and stir for 1 minute. Gradually stir in the cream, whisking constantly until the mixture is thickened, about 10 minutes. Stir in the Parmesan and remove from the heat. Season with salt and pepper to taste.

CRUST:
2 2/3 c all purpose flour
3/4 tsp salt
1 c butter
1 large egg
1 Tbsp water
1 1/2 tsp vinegar
1 Tbsp molasses
FILLING:
1 Tbsp butter
1 Tbsp vegetable oil
4 medium carrots, peeled and sliced
1 small bunch asparagus (about a pound), cut into 1 inch pieces
1 small onion, diced
1 lb mushrooms, quartered or sliced
1 lb boneless skinless chicken breast, cooked and diced
SAUCE:
1 c water
1 Tbsp better than boullion mushroom stock base
2 Tbsp parmesan cheese
1/2 tsp pepper
milk, up to 1 cup
1/4 c flour

Steps:

  • 1. Preheat oven to 350. Prepare filling. Heat 1 tbsp butter and 1 tbsp canola oil in a large skillet over medium. When the butter is melted add mushrooms, onions, carrots and asparagus. Depending how large your skillet is you may need to do 2 batches. Cook veggies until nearly tender, then remove from heat and set aside. Add diced chicken to the veggies, stirring gently to combine.
  • 2. Prepare crust. In a large bowl, combine flour and salt. Use a pastry blender to cut in the butter until large crumbs form. Set aside. In a small bowl, beat together the egg, water, vinegar and molasses. Add liquid to flour mixture, stirring just until dough forms. It may be necessary to use your hands to make a smooth dough. Try not to handle it too much or it becomes tough. Divide the dough into two portions. Roll each into a circle between waxed paper. Use one to line a round casserole dish, then bake about 10 minutes. Set the other circle of crust aside for now.
  • 3. Prepare sauce. In a small pot, combine water, mushroom bouillon and pepper. Heat to nearly boiling. In a small bowl or glass Pyrex style measuring cup combine flour with enough milk to equal about 1 cup total. Stir thoroughly until smooth. Slowly pour into hot bouillon, stirring constantly. Add parmesan. Cook and stir until the mixture thickens. Remove from heat and set aside.
  • 4. Build the pot pie. Transfer the chicken and veggie mixture to the prepared crust. Pour over about 1 cup of the sauce. Top with remaining circle of crust, tucking under edges like for pie. Put at least one slit in the top of the crust to vent. It's best to bake it on top of a cookie sheet just in case it drips, it's a bit of guesswork how much sauce to add for which casserole dish you're using.
  • 5. Bake at 350 for about an hour, until crust is golden. Let cool a few minutes before serving - the crust will become more crisp as it begins to cool. Slice, serve and enjoy!

HEARTY ASPARAGUS PIE

This hearty quiche is as attractive as it is flavorful! It looks complicated to make but is actually a simple recipe. The secret is the crust - it's refrigerated pizza dough that I season with basil and Parmesan cheese. But the asparagus spokes are what make this pie special for the holidays. It almost seems too nice to cut, but we're always glad we did when we taste a slice.

2 teaspoons canola oil
1/2 cup grated Parmesan cheese

1/2 cup whole milk
1/8 teaspoon salt

  • In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry. Toss with oil; set aside., In a small bowl, combine Parmesan cheese and basil; sprinkle half over work surface. Place pizza dough on surface; roll into a 12-in. circle. Sprinkle with remaining Parmesan mixture; gently press into dough with a rolling pin. Transfer to a greased 9-in. springform pan. Press dough onto the bottom and 1-1/2 in. up the sides of pan. , Line unpricked dough with a double thickness of heavy-duty foil. Bake at 425° for 8 minutes. Remove foil; bake 5 minutes longer. Place on a wire rack. Reduce heat to 350°. , In a small skillet, cook bacon over medium heat until crisp; using a slotted spoon, remove bacon to paper towels. Drain, reserving 1 tablespoon drippings. In the drippings, saute onion until tender; drain., In a large bowl, whisk the eggs, milk, salt and nutmeg. Stir in onion and reserved bacon. Toss the Swiss cheese and flour; stir into egg mixture. This recipe sounds very good and uses fresh asparagus. Again, it is a recipe from Betty Crocker Bisquick cookbooklet, October 1998. If you are like me and do not like to debone and pick thru canned salmon there is also a package of salmon. I believe it is Chicken of the Sea and is in the aisle with the tuna in the grocery store. My mom has used the packaged tuna and said it does taste a bit better than the canned and not so much of the mess.

It will always be Jenny W.'s recipe to me, a lovely woman I worked with when I first came to New Zealand. She used to make them for morning tea, something I had never experienced before - a tea break where you actually talk to your workmates and share food. Brilliant idea! 5 sheets of frozen ready rolled puff pastry
400 g chicken breasts
425 g tinned asparagus
1/2 teaspoon chicken stock powder
salt
pepper
1 egg
4 tablespoons sesame seeds

Steps:

  • Preheat the oven to 220°C.
  • Lay out the sheets of puff pastry. They will defrost while you prepare the chicken.
  • Cut the chicken breast into long strips. You will need half a large chicken breast or half a medium chicken breast plus the tenderloin from the other half.
  • Sprinkle the stock powder over the chicken. I use an organic vegetable stock but use whatever you have. I have tried soy sauce but it makes the chicken too wet. Dry ingredients are better and light flavours don't overpower the asparagus. Add a grind or two of black pepper and a good pinch of salt. Make sure all the chicken is coated with some seasoning.
  • Drain the asparagus well. Tinned/canned asparagus works really well in this recipe.
  • The pastry should be defrosted enough to be able to cut the sheets in half. Cut each sheet in half to give you 10 strips.
  • Put asparagus spears down the middle of each strip. Then lay a strip of chicken beside the asparagus.
  • Beat an egg lightly and then brush some eggwash along the cut in the middle of the sheet of pastry.
  • With a sheet in front of you with the cut going left to right (not up and down), take the edge near you and fold it over the chicken and asparagus. Use the folded edge to shove the filling nearer to you until it is tucked around the filling quite tightly.
  • Now roll up the pastry to the eggwash and make sure the cut edge stays on the bottom of the roll.
  • Brush the top with egg and sprinkle plenty of sesame seeds on top.
  • Cut into 6 pieces.
  • Repeat for the other 9 strips to give you 60 little bites.
  • Place on a lightly greased baking sheet and bake in the oven for 20 minutes or until the top is golden brown and the pastry is cooked through. The chicken will cook in this time and will still be moist and tasty.
  • Take the rolls off the baking tray and cool slightly on a wire rack. Then serve warm or leave on the rack and serve cold. They are equally good warm or cold. They can be reheated but, like all pastry dishes, are better freshly baked.
  • The rolls in the photograph I have posted were made with a low-fat puff pastry. As expected, they haven't puffed up as much as usual pastry but still tasted good. Let's face it, pastry is never going to be a low-fat food so you may as well enjoy it but just not eat it all the time. I'll be going back to the usual next time. 14/12/07 - Edited to add an updated photo of rolls made with regular puff pastry. Also, I increased the amount of chicken.
  • Note: put the sesame seeds in a dish and discard any that you don't use. They could be contaminated by the chicken so you don't want to put them back in the bag.

Add the chicken; cook and stir until the chicken is browned, about 3 minutes. Reduce heat to medium; cook, stirring occasionally, until the chicken is no longer pink inside, about 10 more minutes.

300g asparagus spears
4 chicken breasts
10 slices prosciutto
1.2kg good quality pork sausages , meat squeezed out of the skins, or sausagemeat
150g shelled pistachios
pinch cayenne pepper
75g butter , plus extra for the tin
600g strong white flour , plus extra for dusting
1 tsp mustard powder
whole nutmeg , for grating
75g lard
5 tbsp milk
1 egg , beaten
shallots , finely sliced into rings, salad leaves and French dressing (optional)

Steps:

  • Trim the woody ends off the asparagus (see pic 1 in step by step above) ), bring a large pan of salted water to the boil and cook them for 2 mins, then lift into a bowl of iced water. Slice the tips off the asparagus and set aside. Cut each chicken breast into long two-finger-thick strips (pic 2), then wrap the prosciutto slices around some of the asparagus spears and chicken strips (pic 3) and set aside. Using your hands, scrunch the sausagemeat with the pistachios in a bowl, season with the cayenne and lots of black pepper, then set aside.
  • Cut a piece of baking parchment to fit the bottom and sides of a lightly buttered 2-litre terrine dish or loaf tin, leaving an overhang (pic 4). To make the pastry, tip the flour into a bowl with 2 tsp salt and the mustard powder, then grate in a small pinch of nutmeg. Put the lard, butter and milk in a pan with 250ml water and heat until the fats have completely melted. Pour into the flour and beat with a wooden spoon until combined. Tip onto your work surface and knead briefly until it all comes together.
  • Take 2/3 of the dough and wrap the rest so it doesn't dry out. Roll it out into a rectangle to line the dish with an overhang. Lay the dough into the dish and, using your fingers, press it into the bottom, corners and up the sides (pic 5).
  • Take 1/4 of the sausage mixture and pat it into a shape that will fit the dish, then lay it in. Now build up the pie with alternate layers of the asparagus, chicken strips and sausagemeat (pic 6), pressing down the mixture with your hands as you go, finishing with a bulging top layer of sausagemeat.
  • Brush the overhanging pastry with the beaten egg, then roll out the remainder and drape it over the top of the pie filling (pic 7). Press the edges together gently, then use a small knife to trim the pastry (pic 8). Crimp the edges by pinching your fingers (pic 9) and use pastry trimmings to decorate the top, if you like. Brush with egg and pierce three holes along the top.
  • Heat oven to 200C/180C fan/gas 6 with a baking sheet in it. Place the pie on the hot sheet and bake for 1 hr 45 mins. Lower the heat to 180C/160C fan/gas 4 if the pie is browning too much. When the pie has 20 mins left, brush the top with more egg and season with flaky sea salt. (Don't worry if some juice leaks out of the side.) It's ready when the pastry is dark golden brown or when a digital cooking thermometer inserted through one of the holes reads 70C or more. Leave to cool, then chill. Can be made up to three days ahead. To serve, carefully remove from the tin, place on a board and slice. Make a salad with the asparagus tips, shallot rings, salad leaves and French dressing, if you like.

100g asparagus , cut into bite-size pieces
100g spring green vegetable (we used baby spinch and defrosted peas)

  • Heat grill to medium. Spread the chicken out evenly in a shallow baking dish. Dot with half the butter and grill for 7-10 mins, turning occasionally until cooked through. Meanwhile, put the vegetables in a bowl and pour a kettle of boiling water over them. Leave for 2-3 mins, then drain.
  • Scatter the veg and ham over the chicken, dollop on the crème fraîche and season to taste. Sprinkle on the breadcrumbs, dot with remaining butter, then slide under the grill for 5 mins more until heated through and the topping is crisp.

4 skinless, boneless chicken breast halves
4 slices provolone cheese

Steps:

  • Preheat oven to 475 degrees F (245 degrees C). Grease a baking dish. In a bowl, mix together the mayonnaise, Dijon mustard, lemon juice, lemon zest, tarragon, salt, and pepper until the mixture is well combined. Set aside.
  • Cook asparagus in the microwave on High until bright green and just tender, 1 to 1 1/2 minutes. Set the asparagus spears aside. Place a chicken breast between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken breast with the smooth side of a meat mallet to a thickness of about 1/4 inch. Repeat with the rest of the chicken breasts.
  • Place 1 slice of provolone on each chicken breast, and top the cheese with 4 asparagus spears per breast. Roll the chicken breasts around the asparagus and cheese, making a tidy package, and place, seam sides down, in the prepared baking dish. With a pastry brush, apply a coating of the mayonnaise mixture to each chicken breast, and sprinkle each with panko crumbs, pressing the crumbs into the chicken to make a coating.
  • Bake in the preheated oven until the crumbs are browned and the chicken juices run clear, about 25 minutes.

Chicken, morel mushroom & asparagus one-pan pie image

Cook up a spring chicken and asparagus pie using seasonal morel mushrooms. This hearty one-pan dish is a fresh new take on the classic chicken pie

100g fresh morel or 30g dried morels
200ml chicken stock (if using fresh morels)
50g butter
2 shallots , finely sliced
3 thyme sprigs , leaves picked
2 bay leaves
1 tbsp plain flour , plus extra for dusting
100ml dry sherry or white wine
200ml crème fraîche
6 skinless boneless chicken thighs , cut into large chunks
bunch asparagus , woody ends removed, stalks cut into 4cm pieces
½ pack tarragon , leaves roughly chopped, plus a sprig to decorate
1 block puff pastry (375g), all-butter is best
1 egg , beaten, to glaze

Steps:

  • If you are using dried mushrooms, heat the stock and soak them for 10 mins, then remove them, strain the liquid and set it aside. If you're using fresh mushrooms, clean them thoroughly before using. Set a couple of the nicest-looking morels aside to decorate the top of the pie, and halve the rest.
  • Heat half the butter in a skillet and fry the halved morels for 3-4 mins or until wilted. Scoop them onto a plate and set aside. Heat the remaining butter and gently cook the shallots in the pan with the thyme and bay. Once softened, stir in the flour and cook for 1 min or until you have a sandy paste.
  • Pour in the sherry and sizzle, then carefully stir in the strained soaking liquid (or 200ml chicken stock if you've used fresh morels), followed by the crème fraîche. Season well and bring the sauce to a gentle simmer. Add the chicken and poach in the sauce for 10 mins or until the chicken is just cooked through. Remove the bay, stir through the asparagus, tarragon and fried morels, then remove from the heat.
  • Heat oven to 220C/200C fan/gas 8. The pastry needs to sit on top of the ingredients, so if your pan is too deep, use a pie dish instead. Roll out the pastry on a floured surface to the thickness of a £1 coin, then cut the pastry to fit the pan or dish, and drape it over the pie mixture using a rolling pin to help you. Liberally brush with egg, season the pastry with flaky sea salt, and pop your reserved morels on the top. Bake for 20 mins or until the pastry has puffed and is a deep golden brown. Leave tor rest for 5 mins before serving straight from the pan.

2 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Butter the inside edges of a 2-quart casserole dish.
  • Stir flour, 1/2 teaspoon salt, sugar, black pepper, fresh thyme, and milk together in a large bowl until smooth.
  • Whisk eggs and lemon zest into milk mixture to form a smooth batter.
  • Melt butter in a heavy skillet over medium heat.
  • Cook and stir asparagus and 1/4 teaspoon salt in melted butter until the asparagus turns dark green and is coated with butter, 1 to 2 minutes.
  • Layer asparagus in the bottom of the prepared casserole dish. Pour batter evenly over the top.
  • Bake in the preheated oven until the pie has puffed up and is browned around the edges, 40 to 45 minutes.

4 whole chicken breasts, halved, boned and pounded (very important step, pound them)
24 medium asparagus spears, lightly blanched
1/4 cup butter, melted
1/4 cup Dijon mustard
2 garlic cloves, finely chopped
1/4 cup white wine
1 1/2 cups breadcrumbs
1 tablespoon parmesan cheese
2 tablespoons parsley
1 cup butter
4 egg yolks
1/4 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon Tabasco sauce
1/4 teaspoon dry mustard
2 tablespoons fresh lemon juice

Steps:

  • Prepare chicken and asparagus.
  • Combine butter, mustard, garlic and wine in a pie plate.
  • Dip the chicken breast in butter mixture to coat them.
  • Place 3 asparagus spears on each breast and roll, securing with a toothpick.
  • Mix bread crumbs, parmesan and parsley together in a different pie plate.
  • Roll chicken breasts in the bread crumb mixture.
  • Bake 30 minutes at 350.
  • I serve this with blender hollandaise sauce and lemon rice.
  • Blender Hollandaise Sauce:.
  • Heat butter to a full boil, being careful not to brown.
  • Combine all other ingredients in blender with blender turned on high, slowly pour butter into yolk mixture in a thin stream until all is added.
  • Keeps well in refrigerator for several days.
  • When reheating, heat over hot (not boiling water) in top of double boiler.
  • Makes 1 1/4 cups of sauce.

5 eggs
½ cup half-and-half
1 tablespoon dried parsley
½ teaspoon salt
ground white pepper to taste
¼ teaspoon green (mild) hot pepper sauce (such as Tabasco®)
2 cups diced cooked rotisserie chicken
1 cup shredded Swiss cheese
½ cup shredded Monterey Jack cheese
½ cup sliced fresh mushrooms
4 green onions, chopped
2 teaspoons all-purpose flour
1 unbaked 9-inch pie crust
3 spears fresh asparagus, trimmed
¼ cup cherry tomatoes, quartered

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover pan and bring the water to a boil. Place 1 pound of asparagus into the steamer insert, cover, and steam until just tender, 4 to 6 minutes. Drain asparagus and set aside.
  • Beat eggs, half-and-half, parsley, salt, white pepper, and green hot sauce in a bowl until smooth.
  • Stir together cooked chicken, Swiss cheese, Monterey Jack cheese, mushrooms, and green onions in a bowl; mix in flour.
  • Line a 9-inch pie dish with pie crust.
  • Spread about half of the cooked asparagus over the bottom of the crust.
  • Spread about half of the chicken mixture over the asparagus.
  • Repeat layers of asparagus and chicken mixture.
  • Gently pour the egg mixture over the layers.
  • Arrange 3 asparagus spears decoratively on top of the quiche.
  • Bake in the preheated oven until the filling is slightly puffed and lightly browned and a toothpick inserted into the center of the quiche comes out clean, 40 to 50 minutes.
  • Sprinkle quiche with cherry tomatoes, if desired.
