I absolutely love this Passover sedar staple. It's wonderful on the sedar table eaten on some matzo, but is also great leftover as a side dish for lunch or dinner. This basic recipe would serve 2 people. For a big family dinner, I would suggest making 6-8 apples and increasing the rest of the ingredients accordingly. This is traditionally made with Mogen David sweet wine, but any sweet red wine or even grape juice would do.

1/2 cup pecans, chopped
1 apple, peeled and diced
2 tablespoons concord grape wine
cinnamon, to taste

Steps:

  • Chop apple into very small pieces and mix with pecans.
  • Add cinnamon and wine.
  • Mix well and refrigerate.

3 medium Gala or Fuji apples, peeled and finely chopped
1/2 cup finely chopped walnuts, toasted
2 tablespoons sweet red wine or grape juice
2 tablespoons sugar
1 teaspoon ground cinnamon
Matzo crackers, optional

Steps:

  • In a large bowl, toss apples and walnuts with wine. Mix sugar and cinnamon; sprinkle over apple mixture and toss to combine., Refrigerate, covered, 1 hour before serving. If desired, serve with matzo crackers.

2 apples, peeled, cored and cut into cubes
2 cups walnuts, chopped
1 teaspoon cinnamon
1/2 cup orange juice, freshly squeezed
1 tablespoon lemon juice, freshly squeezed
3/4 cup currants

Steps:

  • In food processor, combine apples, walnuts, cinnamon, orange juice, lemon juice and currants.
  • Pulse briefly until desired texture is achieved.
  • Serve.

160g walnut halves
3 apples, such as Pink Lady or Royal Gala
1½ ground cinnamon
1 tbsp lemon juice
2 tbsp honey or silan
1 tsp grated orange zest
50ml - 60ml sweet red wine, or grape juice

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Toast the walnuts until dark and fragrant, about 7-10 mins, taking care not to burn them. Allow to cool, then chop finely.
  • Peel, core and finely chop the apples. Mix with the cinnamon, lemon juice, silan (date syrup), orange zest, sweet wine or grape juice and salt. Add the cooled nuts and stir again to combine. Transfer it to a closed container and keep chilled.

  • Optional: If you like your apples more chopped, change to the stainless steel blade and then pulse about 1/3 of the shredded apples mixture 3-5 times in your food processor, working in batches. Combine with the shredded apples.
  • Add walnuts to food processor (using the stainless steel blade) and pulse 4-6 times to finely chop the walnuts into small pieces. Do not overmix, otherwise you'll have walnut paste. Add chopped walnuts to apple mixture.
