HOT AND SWEET ITALIAN SAUSAGES IN TOMATO SAUCE

Steps:
- In a large saute pan or pot, cook the sausage over medium-high heat until the fat is rendered and the sausages start to brown, about 5 minutes. Remove with a slotted spoon and drain on paper towels. Remove all but 2 tablespoons of fat from the pan.
- To the fat remaining in the pan, add the onions and garlic and cook, stirring, over medium-high heat until soft, about 3 minutes. Add the fennel seeds, salt, and red pepper, and cook, stirring, until fragrant, 20 to 30 seconds. Add the tomatoes and their juice, the tomato paste, oregano, and cooked sausage and cook, stirring, until thick and fragrant, 20 to 25 minutes. Remove from the heat and adjust the seasoning, to taste.
- Meanwhile, in a pot of salted water, cook the pasta until al dente. Drain and toss in the pot with the sauce. Stir in the ricotta salata and basil. Serve immediately and garnish with Parmesan cheese at the table.
HOT CHICKEN WITH SAUSAGES, TOMATOES & PEPPERS

- Heat oven to 200C/180C fan/gas 6. Heat half the oil in a big shallow casserole dish in which the thighs can lie in a single layer - one 30cm across is ideal, if you use a bigger dish the sauce may evaporate. Quickly brown the chicken on both sides - you don't want to cook the chicken through, just get some colour on it - then remove from the pan. Do the same with the sausages in the remaining oil, colouring them all over. Cut the sausages on the diagonal into three or four pieces. Drain the peppers of their brine and cut into broad strips.
- Add the onions and tomatoes to the dish or roasting tin with the chilli, garlic, seasoning, sherry vinegar, rosemary and sausages. Heat the stock and add that too. Mix everything together. Arrange so that the chicken is on top. Bake in the oven for 30 mins, stirring the 'sauce' that forms around the vegetables halfway through.
- When 30 mins is up, add the peppers and cook for another 10 mins. The chicken should be cooked through with a thick sauce around it. Serve with rice pilaf, little potatoes that you've roasted in olive oil or mashed potato (mash or rice with a little saffron in it would be lovely).

CHICKEN SAUSAGE WITH PASTA AND TOMATO SAUCE
I found this recipe in Woman's World and made it last night. It is so fresh tasting and flavourful. It is a nice change for a pasta dish.

Steps:
- Cook pasta according to package directions adding peas during the last 5 minutes of cooking time.
- Drain pasta and reserve 1/2 cup of cooking water.
- Meanwhile, heat 1 tblsp. of oil in a large non-stick skillet over med. high heat.
- Add the sausage and cook until browned and cooked through.
- Remove sausage from the pan and reserve.
- Slice the sausage into 1/2" thick slices.
- Heat the remaining oil over medium heat in the same skillet as the sausage was removed from.
- Add onion and garlic and cook until softened, about 5 minutes.
- Stir in the next 5 ingredients.
- Cook, stirring occasionally, until tomatoes soften and start to reduce, about 8 minutes.
- Toss with pasta, sausage and cheese.
- Stir in reserved pasta water.
- Sprinkle with basil.
- Enjoy!

MINI CHICKEN SAUSAGE MEATBALLS WITH GNOCCHI AND TOMATO SAUCE

- Bring a pot of water to a boil for gnocchi. Salt boiling water but wait a while to drop in gnocchi.
- Preheat oven to 400 degrees F.
- Place chicken in a medium bowl with grill seasoning and fennel seeds. Pile sun-dried tomatoes on top of each other in small stacks then slice into thin strips. Coarsely chop the thin strips and add to bowl. Stack the basil leaves together then roll them up into a log. Shred the basil by thinly slicing the log. Add the half the basil to the bowl. Drizzle extra-virgin olive oil over the bowl. Mix chicken together, roll into mini balls, 1 1/2 inches across, and arrange on a nonstick cookie sheet. Bake at 400 degrees F for 10 to12 minutes or until firm and lightly golden.
- Heat a large skillet over medium heat. To the hot skillet, add extra-virgin olive oil, 2 turns of the pan then the garlic, onions and crushed red pepper flakes. Cook until tender, about 5 to 6 minutes. Add crushed tomatoes, tomato sauce and season sauce with salt and pepper.
- Drop gnocchi in boiling water and cook 5 minutes or to package directions.
- Stir basil into sauce to wilt it. Drain gnocchi and arrange on a platter. Remove balls from oven and add to gnocchi, equally distributing them. Sprinkle cheese over meatballs and hot dumplings then top with sauce by carefully ladling it all over and around the platter. Gently toss to combine then serve with crusty bread and Peppery Salad.
- Place the steak seasoning and vinegar in the bottom of a small bowl then whisk in extra-virgin olive oil and let dressing stand 10 to 15 minutes.
- Add the radishes, peppers, pickled vegetables, arugula and parsley to a salad bowl. When you're ready to serve the salad, dress it, toss and season it with salt, if necessary, to taste.
CHICKEN AND SAUSAGE IN TOMATO SAUCE
Steps:
- Heat Oil in a large heavy skillet. Add the garlic and sauté until light golden. Remove the garlic and reserve. Prick the sausages in several places and then sear them in the hot oil. Remove and set aside, covered. Brown chicken well on all sides in the same skillet. Remove and set aside, covered. Pour 1 tablespoon of the drippings into a large Dutch oven or casserole. Discard remaining drippings or save them for another use. Crush the tomatoes with your hands and add them, with their juice, to the drippings. Add the tomato paste, salt, freshly ground pepper, basil and reserved garlic. Simmer, uncovered, for 15 minutes. Add the sausage and simmer, covered, for 20 minutes. Add the chicken, cover, and simmer for 20 minutes more. Meanwhile, deglaze the skillet with the wine. Stir wine into the sauce and simmer for a final 10 minutes. Sprinkle with parsley. Serve with pasta and freshly grated Parmesan Cheese.

Adopted recipe.This is an easy recipe.I used 6 chicken breast halves and 1 lb bulk Italian sausage and it worked out just fine. I served it with rice. It reminded me slightly of an Asian dish. It was very good. I even liked the green peppers in it and I don't usually like green peppers.

- In a large skillet, heat the oil over medium-high heat. add the chicken and cook until browned.
- Remove the chicken; set aside. Reduce the heat to medium.
- In the same skillet, cook the sausage, green pepper, and garlic, stirring, until the sausage is browned and the pepper is tender.
- Spoon off the fat. Stir in the soup, water, tomato sauce, and Italian seasoning.
- Heat to boliling and return the chicken to the skillet. Reduce the heat to low.
- Cover; cook for 6-7 minutes more, or until the chicken is no longer pink, stirring occasionally.
- Mix the 1 tablespoon cornstarch with the 2 tablespoons of water.
- Stir into the sauce and bring to a boil.
- Reduce heat and continue cooking, stirring occcasionally, until the sauce thickens.
- Serve over hot cooked noodles or rice.
- Note: Sauce freezes well.

- Heat oil in heavy large pot over medium-high heat. Add sausages, onion, and garlic. Sauté until onion begins to color, about 10 minutes. Add crushed tomatoes and herbs and bring sauce to boil. Reduce heat to medium-low, cover, and simmer until flavors blend and sausages are cooked through, stirring often, about 30 minutes. Season with salt and pepper. Slice sausages thinly, if desired.
