CHICKEN WITH CARAMELIZED PEARS

Tender chicken gets an upscale treatment in this simple entree with sweetened pears. Remember this idea-it also works with pork loin chops and thinly sliced apples. -Taste of Home Test Kitchen

Number Of Ingredients 10

4 boneless skinless chicken breast halves (6 ounces each)
1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons butter
1 medium red onion, halved and thinly sliced
2 medium pears, thinly sliced
2 teaspoons brown sugar
1/2 cup balsamic vinaigrette
1/2 teaspoon dried thyme
2 packages (8.8 ounces each) ready-to-serve long grain and wild rice

Steps:

  • Sprinkle chicken with salt and pepper. In a large skillet, brown chicken in butter; remove and keep warm. In the same skillet, saute onion until tender. Add pears and brown sugar; cook 3 minutes longer. Stir in vinaigrette and thyme., Return chicken to skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 4-6 minutes or until chicken juices run clear. Meanwhile, cook rice according to package directions. Serve with chicken.

2 teaspoons olive oil
1 small onion, thinly sliced
2 medium tomatoes, chopped
2 cloves garlic, minced
1 tablespoon minced fresh parsley
1 tablespoon minced basil
1 1/2 cups sliced zucchini
salt and pepper
1 tablespoon parmesan cheese

Steps:

  • In a skillet over medium heat, heat oil.
  • Add the onion and saute for 4 minutes.
  • Add the tomatoes, garlic, parsley, and basil.
  • Cook for 3 minutes Add the zucchini and cook for 5 minutes.
  • Season with salt and pepper and sprinkle with Parmesan cheese.

I actually haven't had the time to try this recipe yet, but I bet it's really decadent and just totally yummy so I'm posting it here just in case it gets lost in my piles of magazines.

2 bosc pears, ripe and firm
2 lemons
8 cups water
2 cups granulated sugar
397 g packaged frozen puff pastry, thawed
125 g bleu de bresse cheese, cheese
2 tablespoons unsalted butter
1 tablespoon demerara sugar
1/2 cup whipping cream
1 tablespoon granulated sugar
3 tablespoons plain yogurt
1/4 cup chopped toasted walnuts

Steps:

  • Peel pears. Rub peeled pears with the cut side of half a lemon.
  • Combine water, sugar,and remaining lemons in a large saucepan. Bring to a boil and cook for 5 minutes to dissolve the sugar.
  • Carefully drop in pears. Simmer and poach pears just until tender (about 20 minutes).
  • Remove pears and place in a bowl to cool. Preheat oven to 425°F.
  • Roll out half the puff pastry on a floured surface just until it's large enough to cut out two 4 inch rounds. Repeat with remaining half of puff pastry, discarding scraps.
  • Place pastry rounds on baking sheet and top each with cheese.
  • Thinly slice pears and fan over cheese.
  • Sprinkle with demerara sugar.
  • Bake in the centre of the preheated oven for 12 to 15 minutes or until pastry is golden and cheese is bubbling. Remove to a rack to slightly cool.
  • Whip cream and 1 tablespoon sugar ina bowl with an electric mixer until stiff peaks form.
  • Stir in plain yogurt until blended.
  • To serve, sprinkle warm tarts with walnuts and a dollop of whipped cream.

I have to say that I tried this with a bit of trepidation and was most pleasantly surprised! This is really excellent. I served it with unadorned brown rice and a simple green salad. Be sure to give it the full cooking to to allow the flavors to come together. I have company coming in a couple of weeks and this is going to be on the table fro them.

1 (16 ounce) can sliced pears with juice, drained
2 tablespoons vegetable oil
4 boneless skinless chicken breast halves
1/2 teaspoon salt
1 cup sliced onion
2 garlic cloves, finely chopped
1/4 cup dry white wine
2 tablespoons soy sauce
2 tablespoons cornstarch
1/2 teaspoon crushed dried thyme
4 cups packed spinach leaves, torn (about 5-oz.)

Steps:

  • Drain pears, reserving ¾ cup liquid; set aside. In large skillet, heat oil over medium-high heat until hot; cook chicken breasts until brown on both sides.
  • Remove and set aside. Add onion and garlic to skillet; cook and stir 3 to 5 minutes or until onion is crisp-tender.
  • In small bowl, combine reserved pear liquid, wine, soy sauce, cornstarch and thyme; mix until cornstarch is dissolved.
  • Gradually add to vegetables in skillet; cook and stir until mixture thickens. Return chicken to pan; cover and cook 10 minutes. Add pear slices to skillet.
  • Place spinach on top of pears and chicken in skillet; cover and cook 5 minutes or until spinach is wilted and chicken is cooked through.
  • Serve at once.
