A simple chicken dish with fresh mushrooms and melted cheese.

4 tablespoons butter
4 skinless boneless chicken breast halves
1 cup sliced fresh mushrooms
2 tablespoons minced shallots
1/4 teaspoon salt
1/4 teaspoon pepper
4 oz grated mozzarella cheese

Steps:

  • Melt butter over medium heat. Add mushrooms and shallots and sprinkle with salt and pepper. Cook 10 minutes. Remove vegetables with slotted spoon. Add chicken to pan and cook 10 minutes on each side, or until tender. Transfer chicken to platter and sprinkle with grated cheese. Top with mushroom mixture. Let stand 5 minutes before serving or just until the cheese has melted.

This is from the May /June 2009 issue of Paula Deen's magazine under party menus "Meet the Parents Menu" as the appetizer. I made these for my family and guests and they all really enjoyed them. I didn't tell my husband and he said they seemed more upscale than most appetizers. The secret is the filling for the pockets. This is a delightful little mouthful. This is made for a party so it makes a lot of pockets. Enjoy ChefDLH!

2 tablespoons butter
1 (8 ounce) package sliced fresh mushrooms
1/2 cup minced green onion
2 garlic cloves, minced
1 1/2 cups chicken, finely chopped
1 (8 ounce) package cream cheese, softened (I used Philadelphia)
1 (5 ounce) package shredded parmesan cheese
1/2 teaspoon ground black pepper
3 (8 ounce) cans unperforated crescent roll dough

Steps:

  • In a large skillet melt butter over medium heat.
  • Add mushroom, onion and garlic.
  • cook for 6 to 7 minutes or until mushrooms are tender.
  • Reduce heat to low and add chicken and cream cheese, stirring until cream cheese is melted and smooth.
  • Remove from heat and stir in cheese and pepper.
  • Let mixture cool for 20 minutes.
  • Preheat oven to 375 degrees.
  • Line baking sheets with parchment paper.
  • On a clean flat surface unroll one can of dough. Cut the dough lengthwise into 3 equal parts making 15 squares. Spoon about 1 tablespoon filling onto center of each square. Pull up the corners of dough over filling, pressing dough together gently to seal.
  • Repeat procedure with remaining dough and filling.
  • Place on prepared baking sheets.
  • Bake for 10 -12 minutes or until golden brown.
  • Serve immediately.
  • NOTE: be sure to use unperforated crescent roll dough.
  • Cooking time includes cooling time for the mixture.

This recipe originated with Paula Deen of Food Network fame. You could easily add more chicken and vegetables and serve 6 with the same amount of sauce and pastry as well as substitute a lower-calorie milk for all of the cream. Enjoy those calories, we did! I'm going for a long walk now!

2 -4 sheets frozen puff pastry (her original recipe called for 4, I felt 2 was plenty)
1 egg, beaten
4 chicken breast halves (or 2 cups leftover cooked chicken)
2 tablespoons cooking oil
1/3 cup butter
2/3 cup all-purpose flour (or less ( see chef's note in directions)
1 quart milk (Paula's recipe called for cream)
1/4 cup chicken base (or less ( see chef's note in directions)
1 tablespoon minced garlic
1/2 small yellow onion, minced
1 cup frozen green pea, cooked
1 cup chopped cooked carrot
1 pinch fresh grated nutmeg (optional)

Steps:

  • For Crust: Preheat oven to 350°F Cover large cookie sheet with parchment paper. Cut each sheet of frozen puff pastry into 1-inch strips long enough to cover each pie. On cookie sheet, weave strips into squares. (I made one large square to cover 8x8 casserole with pieces close together. As a result, it didn't cook all the way through in the center.) Brush beaten egg onto each lattice square.
  • Bake for 15-18 minutes, or until pastry has risen and is a nice golden brown. (It should be cooked through at this stage). Set aside until ready to assemble pies.
  • For Filling: Heat oil in a large skillet over medium-high heat. Add chicken and sauté until cooked through. Remove from heat and cut into chunks.
  • In a large saucepan melt butter and then slowly add flour, stirring until consistency of peanut butter, but do not brown like a roux. NOTE: You may not need all of the flour--stop with it is the right consistency--it may only take 1/4 cup. Slowly add cream and keep stirring.
  • Add chicken base (NOTE: here again you may not want to use all 1/4 cup--it may be too salty so use caution), garlic, and onion and stir until thickened.
  • Add cooked peas and carrots, nutmeg, if using, and cut up chicken. Remove from heat.
  • To serve fill 4 individual oven-proof bowls with chicken mixture and then top each with a pre-cooked lattice square.

I like the idea that they can be made ahead, covered, and chilled. Or they can be baked and then frozen making it handy for busy people. Serve with warmed pizza sauce.

8 ounces Italian sausage, skin removed
1/4 cup onion, chopped
3/4 cup mushroom, fresh and chopped
4 ounces cream cheese, softened
3 tablespoons roasted red peppers, diced
1/8 teaspoon salt
1/8 teaspoon black pepper
1 teaspoon basil
1/4 cup parmesan cheese, finely shredded plus more for garnish
2 (13 7/8 ounce) packages pizza dough, from refrigerator case
1 egg
1 tablespoon water

Steps:

  • In a medium skillet, cook sausage, onion, and mushrooms until sausage is brown, drain off fat, cool slightly.
  • In a medium bowl, stir together the cream cheese, roasted red pepper, salt, black pepper, basil, and the 1/4 cup parmesan cheese.
  • Stir sausage mixture into cheese mixture.
  • Preheat oven to 425 degrees.
  • Spray two large baking sheets with cooking spray; set aside.
  • On a lightly floured surface, unroll each package of the pizza dough.
  • If necessary gently stretch each dough piece into a 12 X 9 inch rectangle.
  • Using a sharp knife, cut each rectangle into twelve 3-inch squares.
  • Place about 1 tablespoon of the sausage/cheese mixture in the center of each square.
  • Fold dough over filling, forming triangles.
  • Press edges of triangles with tines of a fork to seal.
  • Place triangles on prepared baking sheets.
  • Prick tops with a fork.
  • In a small bowl, beat together egg and the water; brush on triangles.
  • Sprinkle with additional parmesan cheese.
  • Bake about 12 minutes or until pockets are golden.
  • Serve warm with pizza sauce.
  • Make ahead tips: Prepare as directed through step 13. Cover loosely with plastic wrap; chill up to 4 hours. Proceed with step 14 and bake as directed. (OR if freezing, prepare as directed. Place baked pockets in freezer containers. Seal, label, and freeze for up to 1 month. To serve, preheat oven to 350 degrees. Arrange frozen pockets on lightly greased baking sheets. Bake for 10 to 12 minutes or until heated through.).

1 (10 3/4 ounce) can cheddar cheese soup
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 ounce) can tomatoes (can use Ro-Tel tomatoes)
4 cups leftover cooked chicken
1 (11 1/2 ounce) package flour tortillas
2 cups shredded cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F. Spray a 13 by 9-inch pan with the cooking spray.
  • In a large bowl, stir together the 3 kinds of soup and the tomatoes. Stir in the chicken.
  • Layer the tortillas and the chicken mixture in the pan, beginning and ending with tortillas.
  • Sprinkle the cheese over the casserole and bake for 30 minutes.
  • Enjoy!

A recipe that I thought sounded delicious from Paula Deen's Comfort Food Magazine. Posting for safe keeping. Update 10/17/2013: Made this for DH and myself, so I made 1/3 of the recipe, but still made 2 pieces of bacon (will even make more next time) and I added some additional heavy cream as we like it creamy. We loved the addition of the bacon, onion and garlic to the normal Chicken Alfredo, DH even went back for seconds.

4 slices bacon (I would double this amount)
1 3/4 lbs boneless skinless chicken breasts (about 3)
3/4 teaspoon pepper
1/2 teaspoon salt
2 tablespoons chicken broth
3/4 cup onion, chopped
5 garlic cloves, minced
2 cups heavy whipping cream (add more if you want it extra creamy)
1 1/2 cups parmesan cheese, shredded
3 tablespoons parsley, freshly chopped
16 ounces fettuccine pasta (cooked and kept warm)
1/4 cup water (reserved water from boiling pasta)

Steps:

  • Heat a large skillet over medium heat. Add bacon; cook until crisp. Remove bacon to paper towels to drain, reserving drippings in skillet. Crumble bacon and set aside.
  • Sprinkle chicken with salt and pepper. Brown chicken in drippings; add chicken broth. Cover and cook for 15 to 20 minutes or until cooked through. Remove chicken; shred meat.
  • Add onion and garlic to skillet; cook for 7 minutes over medium-high heat or until onion is tender. Add shredded chicken to skillet, and stir in cream; cook for 5 minutes or until thickened slightly. Remove from heat; add cheese and parsley, stirring until cheese melts.
  • Tossed cooked fettuccini with chicken mixture. Add enough reserved cooking liquid to reach desired consistency. Sprinkle with crumbled bacon and enjoy!
