SPEEDY HUMMUS PIZZA
What started as an appetizer is now one of my favorite Mediterranean meals. I make sure I always have the ingredients, so I can whip it up in a hot minute. I like to use fresh tomatoes instead of sun-dried ones when they're in season, and sometimes I throw in some chopped artichoke hearts, too. -Nikki Haddad, Germantown, Maryland

- Preheat oven to 450°. Place crust on an ungreased baking sheet or 12-in. pizza pan., In a small bowl, mix hummus, oregano and pepper flakes; spread over crust. Sprinkle with cheese, tomatoes and olives. Bake 8-10 minutes or until heated through. Drizzle with oil.

I'll bet you never thought about this combination for pizza. I assure you it is fantastic. Any flavor hummus will work and choose between red bell pepper or spinach topping. Make your own hummus or use prepared to taste.

- Preheat oven to 450 degrees.
- Small cube the chicken breast and season with salt and pepper. Saute in a skillet with a few dollops of hummus until cooked completely through.
- Spread a layer of hummus over the crust. Arrange spinach or bell peppers and chicken over the hummus. Top with shredded cheese.
- Bake for 10-15 minutes until crust is golden brown and cheese is melted.

- Preheat broiler.
- Line a large shallow baking pan with foil.
- Stir together oil, salt, cumin, pepper, and oregano in a large bowl, then toss with chicken and vegetables. Arrange in baking pan without crowding and broil 4 to 6 inches from heat, stirring once, until chicken is just cooked through and vegetables are lightly charred, about 8 minutes. Divide hummus among plates and top with chicken and vegetables.

- Mix 2 tbsp of the hummus with half the lemon juice, the lemon zest and enough water to make a drizzly dressing. Squeeze the grain pouch to separate the grains, then divide between two shallow bowls and toss through the dressing. Top each bowl with a handful of the spinach.
- Squeeze the remaining lemon juice over the avocado halves, then add one half to each bowl. Divide the chicken, pomegranate seeds, onion, almonds and remaining hummus between the two bowls and gently mix everything together just before eating.

- Mix chicken sausage and breadcrumbs in a large bowl until well combined. Start forming into small meatballs. Set aside.
- Preheat oven to 400 degrees. Slice tomatoes into 1/2 inch slices and place on a cooling rack, on top of a baking sheet. Sprinkle with salt and pepper. Bake for 20-25 minutes until soft in the center and crisp around the edges.
- Stretch pizza dough to fit into a baking sheet, leaving a small crust on each edge. Brush with 1 tablespoon olive oil and sprinkle with seasonings, salt and pepper. Bake for 7 minutes until lightly brown.
- While crust is baking, brown meatballs in a non-stick skillet with 1 tablespoon olive oil.
- Top pre-baked crust with meatballs, tomatoes and sprinkle with parmesan cheese. Bake for 5 minutes until meatballs and crust are finished cooking.
- Remove crust from oven. Using a small ice cream scoop, add dollops of ricotta to pizza. Place back in oven and turn off heat. Let sit for 5 minutes in the oven to warm through the ricotta, without cooking it.
- Remove from oven, top with chives and serve!
