CHICKEN AND HAM CASSEROLE
This dish made good use of my leftovers. Some chicken, ham, noodles and cheese, and you've got dinner. Try adding whatever leftovers you may have in your fridge.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Melt butter in a large saucepan over low heat. Stir in the flour and heat until bubbly. Slowly add the milk, stirring constantly, until mixture is thickened and smooth.
- Remove from heat and stir in the chicken, ham, noodles, celery, salt and ground black pepper. Transfer this mixture to a 1 1/2 quart casserole dish.
- Bake at 400 degrees F (200 degrees C) for 15 minutes. Remove from oven, sprinkle with the cheese and top with paprika, as desired. Return to oven and bake for 5 to 10 minutes, or until cheese is bubbly.

CORDON BLEU CHICKEN ROLLS
This is the best Chicken Cordon Bleu recipe! Chicken stuffed with ham and Swiss cheese. I hope you enjoy it as much as I have.

- Preheat oven to 400 degrees F (200 degrees C).
- Place each chicken breast half between sheets of plastic wrap and pound with a meat mallet to about 1/8 inch thickness. Place a finger of cheese on each ham slice and sprinkle lightly with thyme and salt and pepper to taste. Roll up seasoned ham and cheese 'jellyroll-style', then roll each chicken breast with ham and cheese inside. Tuck in ends and fasten with toothpicks.
- Place melted butter in a small bowl and place cereal crumbs in a shallow dish or bowl. Dip each chicken roll in butter or margarine, then roll in crumbs, turning to coat thoroughly. Place coated rolls in a lightly greased 9x13 inch baking dish.
- Bake at 400 degrees F (200 degrees C) for about 40 minutes or until chicken is golden brown and juices run clear. Serve with cordon bleu sauce, if desired.
- To Make Cordon Bleu Sauce: In a small saucepan mix together the soup, sour cream and lemon juice. Heat over low heat, stirring occasionally, and serve hot over chicken rolls. Makes about 2 cups; 8 servings of 1/4 cup each.

CHICKEN AND HAM PILLOWS
This is a recipe that I made after making some modifications on a recipe by Lubie, recipe#55385. I had a few things I wanted to add, and a few things that I didn't want to use, and here is the final product!

Steps:
- Mix together chicken, ham, bell pepper, and cream cheese.
- Take crescent rolls out of package, and separate, but leave two together, pressing seams together, creating a rectangle.
- Take the chicken mixture, and equally put some in each rectangle.
- Bring up the corners of the crescents, and press the seams together creating your pillow.
- Brush a little of the olive oil over each pillow.
- Place on a greased baking sheet, and bake in a preheated 375° oven for 20-25 minutes.
- FOR SAUCE: Place soup, pepper and sour cream in saucepan and heat through.
- Let everyone drizzle the sauce over each pillow when ready to eat!

CHICKEN & HAM CASSEROLE WITH MUSTARDY DUMPLINGS
Serve mustardy dumplings with our chicken and ham casserole for a comforting and filling family feast. You can freeze any leftovers, too - if there are any!

- Heat the oil and butter in an ovenproof casserole over a medium heat. Add the onion, leeks and carrots and a pinch of salt, and fry gently for 10 mins until softened and translucent. Add the chicken, turn up the heat and fry for 5 mins. Pour in the cider, cook for 3 mins, then pour in the chicken stock and add the bunch of thyme. Bring to a simmer, season to taste, then reduce to a low heat and cover the pan. Cook for 30 mins.
- Heat the oven to 180C/160C fan gas 4. Make the dumplings by mixing together the flour, baking powder, mustard powder, the suet or butter, parsley and ½ tsp salt. Swiftly mix in 8-10 tbsp of water and bring together with your hands. The dough should be firm and pliable. Divide into eight equal-sized pieces, weighing for accuracy if you like.
- Remove the bunch of thyme from the stew and discard. Spoon a little of the liquid into a bowl and mix with the cornflour, then stir the mixture into the casserole. Add the ham hock, peas and mustard. Arrange the dumplings on top of the stew, then put in the oven, covered, for 30 mins. Remove the lid and cook for a further 10 mins until the dumplings are puffed up and golden brown. Serve in bowls. To freeze the stew, leave to cool completely, then transfer to a freezerproof container. Will keep for up to three months. Defrost thoroughly, then reheat until piping hot.

- Preheat oven to 325°F.
- Place one chicken breast cutlets between two pieces of clear plastic wrap; working from the center to the edges, pound the chicken lightly with a meat mallet, forming a rectangle about 1/4 inch thick; remove the plastic wrap.
- Place all cutlets in a single layer on a work surface. Season both sides with salt, pepper, basil and cayenne.
- Evenly distribute 1/2 the pine nuts (reserving 1/2 for garnish) on the cutlets, top with tomatoes, cheese and spinach leaves.
- Roll up the chicken securing them up with string or tooth picks into bundles. Repeat with remaining chicken.
- Coat each bundle with flour then dip into egg then back into flour.
- Whisk the remaining flour (about 1-2 tablespoons) into 1/4 cup of the chicken stock and set aside.
- In a large hot skillet cook chicken bundles in butter and oil 5-10 minutes turning until golden brown, adding additional butter if needed. Remove chicken and place in warm oven.
- Place garlic in pan and saute for 2 minutes. Add 1/3 cup white wine to the garlic to deglaze the pan. Add chicken stock and the flour/stock mixture. Whisk till smooth and thicken if to thick add additional stock. Simmering for 5 minutes.
- Remove chicken from oven top with sauce and garnish with pine nuts and fresh basil.

A wonderful lady in our church gave this to me. In October when I broke my arm, she made this dish and brought it over to us. It was so good that I asked her for the recipe, and last night, Dec. 19th, 2006, she brought the recipe and all the ingredients over to us. Thank you Debbie Lusty!

Steps:
- Mix chicken, softened butter and cream cheese together.
- Place by heaping spoons full in the middle of the crescent roll and roll up.
- Roll crescent roll in melted butter and then in bread crumbs.
- Place on cookie sheet and bake at 350 degrees until brown, about 10-15 minutes.
- Serve with mashed potatoes and chicken gravy.
