A wildly popular Latin snack food throughout the Americas, chicharrones are made from pork belly that has been cooked for a long time with the skin on, and contains a little meat (what we think of as pork rinds in the United States). Though usually eaten as a crispy snack, they also make a tasty taco filling when heated in a sauce until softened and chewy. The most unusual chicharrones are those made from the whole pork skin fried in one piece-they're about four feet long by two feet wide and resemble some dried prehistoric animal. You'll see them for sale on weekends along the highways in areas of Mexico where there are a lot of pigs, sometimes next to a huge pot of pork fat boiling over an open fire. They're almost always made to order; you stop and buy a piece or buy the whole thing. I'm guessing you only see them by the highways because they are so enormous you need a car or pickup truck to get one home.

2 pounds pork belly fat, cut into 1 by 1 by 2-inch pieces
1 tablespoon kosher salt
1 1/2 cups Tomatillo-Blackened Serrano Chile Salsa (page 135)
10 (5 1/2-inch) soft white corn tortillas (page 13), for serving
Garnish: Pickled jalapeño rings, chopped fresh cilantro leaves

Steps:

  • In a large, heavy skillet, add the pork fat and salt and cook over low heat until the pork has fully rendered its fat and the pieces are puffed and airy, about 40 minutes. Transfer the chicharrones to a large saucepan, add the tomatillo salsa, and cook on medium-high heat until the sauce is almost dried up and coats the chicharrones, about 9 minutes.
  • Remove from the heat and serve immediately, or keep warm in the pan until ready to serve.
  • To serve, lay the tortillas side by side, open face and overlapping on a platter. Divide the filling equally between the tortillas and top with garnish and salsa. Grab, fold, and eat right away. Or build your own taco: lay a tortilla, open face, in one hand. Spoon on some filling, top with garnish and salsa, fold, and eat right away.

2 teaspoons kosher salt
1 teaspoon ground cumin
1 teaspoon ground arbol chile
1/2 teaspoon ground cayenne pepper
Vegetable oil, for frying
1 1/2 cups dried chicharrones de harina
1 lime

Steps:

  • Mix the spices. Combine salt, cumin, chile, and cayenne in a small bowl.
  • Heat the oil. Heat about 3 inches of oil in a deep pot over medium heat until it reaches 350°F on a deep fat fry thermometer or until a piece of bread browns in 30 seconds. Line a baking sheet with paper towels and set near the pot.
  • Fry chicharrones. Once oil is hot, carefully add the chicharrones a few at a time. Fry on one side until they poof open (about 30 seconds), flip and cook for another 30 seconds or until they have opened completely and are beginning to brown.
  • Drain with a bamboo skimmer. Remove with a slotted spoon or a bamboo skimmer to the paper towel-lined baking sheet. Repeat with the remaining chicharrones checking occasionally that the oil is maintaining a constant temperature.
  • Season. Squeeze the lime over the top and sprinkle with the spice mixture. Serve immediately.

3/4 cup mayonnaise
2 garlic cloves, finely chopped
1 scallion, white and light green parts only, sliced
1 to 2 chipotles in adobo, seeds removed and finely chopped
1/2 lime, juiced
Salt
2 pounds skinless Pacific cod (or other firm, flaky white fish), cut into 1-inch chunks
4 garlic cloves
1 teaspoon coarse salt, plus additional for seasoning
2 tablespoons Worcestershire sauce
Freshly ground black pepper
1 cup all-purpose flour
Vegetable oil, for frying
Salt
8 (8-inch) flour tortillas
1 cucumber, peeled, halved lengthwise, seeded, halved crosswise and sliced into 1/2-inch thick strips, for serving
2 cups arugula, stems removed, for serving
1 cup fresh cilantro leaves, for serving
1 ripe Hass avocado, halved, pitted, peeled, and sliced, for serving
2 oranges, zested, for serving
Lime wedges, for serving

Steps:

  • To prepare the tartar sauce: Combine the mayonnaise, garlic, scallion, chipotle, and lime juice in a small bowl and mix well. Add salt, to taste. Cover with plastic wrap and refrigerate until ready to use. Keep covered in the refrigerator up to 1 week.;
  • To prepare the tacos: Put the fish in a large bowl. Place the garlic cloves on a cutting board. Slice the cloves in half lengthwise and then smash with the side of a chef's knife. Sprinkle 1 teaspoon of salt over the garlic and chop and smear the garlic against the cutting board until it makes a paste. Add the garlic paste to the bowl of fish. Add the Worcestershire sauce and 1/2 teaspoon pepper; turning the fish to coat. Cover with plastic wrap and refrigerate for at least 20 minutes or up to 4 hours.
  • Place the flour in a shallow dish and toss the fish pieces in it a few at a time, until they're all evenly coated. Shake off the excess flour.
  • Heat 2-inches of oil to 375 degrees F in a heavy skillet or deep pot over medium-high heat. Carefully add a few pieces of the fish at a time and fry until golden brown all over, about 4 to 6 minutes. Transfer to a paper towel-lined plate to drain. Season with salt and pepper while they are still hot. Allow the frying oil to return to temperature and continue to fry the fish in batches until finished.
  • Wrap the tortillas in a damp kitchen towel and place in the microwave. Microwave on full power for 30 seconds until they are soft and pliable. Keep warm.
  • To serve: Spread a dollop of the chipotle tartar sauce onto a warmed tortilla. Add a few strips of cucumber and top with 3 or 4 pieces of fish. Cover with a few arugula leaves, cilantro leaves, avocado, and a little orange zest. Serve with more tartar sauce on the side and lime wedges.

You will want cracklins from pork, duck or goose to make this recipe. You can buy them in Latin markets, in Cajun markets and in some specialty markets, but mostly you will make this recipe after rendering some lard or duck fat yourself.

1 recipe salsa verde ((see notes))
4 tablespoons chopped cilantro
1/2 cup diced white onions
1/4 cup lime juice
Cotija cheese, crumbled, for garnish
18 corn tortillas

Steps:

  • Pour your salsa over the cracklins in a pot, cover the pot and bring to a simmer for 20 minutes. You might need to add a little water or stock to keep it from sticking. You want the mixture to be stiff enough to not splooge out of a taco, though. You can cook your cracklins for more than 20 minutes if you want a softer texture.
  • Heat up your tortillas and make your tacos! Top with cilantro, the onions soaked in the lime juice and cotija cheese.

2 garlic cloves, finely chopped
1 -2 chipotle chile in adobo, seeded and finely chopped
3/4 cup mayonnaise
1 scallion, white and light green parts only, finely chopped
1 tablespoon lime juice
salt, to taste
2 lbs skinless red snapper fillets (or other firm, flaky white fish)
2 tablespoons Worcestershire sauce
4 garlic cloves, finely minced
1 teaspoon salt
1/8 teaspoon fresh ground black pepper
1 cup all-purpose flour
3 cups vegetable oil, for frying (more if necessary)
8 flour tortillas (6 inch size)
1 cucumber, peeled, seeded, and sliced into 1/2 inch thick long strips
6 ounces arugula leaves
1 cup cilantro leaf
2 oranges, zest of
lime wedge, for serving

Steps:

  • Tartar Sauce:.
  • Combine all of the sauce ingredients in a bowl and mix well. Adjust the salt to taste. Cover with plastic wrap and refrigerate until ready to use.
  • Tacos:.
  • Rinse the fish under cold running water and pat dry with paper towels. Cut the fish into 1 inch cubes and put in a large bowl. Add the Worcestershire sauce, garlic, salt and pepper and turn the fish carefully to coat. Cover with plastic wrap and refrigerate at least 20 minutes or up to 4 hours.
  • Put the flour on a plaate and toss the fish pieces in it a few at a time, until they are all evenly coated.
  • Heat the vegetable oil in a large pot over medium-high heat to 375 degrees F. Carefully add a few pieces of the fish at a time, shaking off any excess flour before placing them into the oil. Fry until the fish pieces are golden brown all over, about 4-6 minutes. Then transfer them to a paper towel lined plate to drain.
  • Meanwhile, heat a medium skillet over medium-high heat. Add a tortilla and warm for 10-15 seconds. Flip the tortilla and warm until it is pliant and heated through, another 10-20 seconds. Place on a plate and cover with a towel to keep them warm. Repeat with the remaining tortillas.
  • Spread a dollop of the chipotle tartar sauce onto a warmed tortilla. Add a few strips of cucumber and top with 3 or 4 pieces of fish. Cover with a few arugula leaves and cilantro leaves and a sprinkling of the orange zest. Serve with more chipotle tartar sauce and the lime wedges on the side. Enjoy!

  • Cut the pork skin into large pieces. The easiest way to cook chicharrónes is to roast the pork skin in large-ish pieces—about 6 inches long by 4 inches wide is a good manageable size.
  • Roast the pork skin. Before you deep-fry the pork skin into puffy chicharrones, you need to roast it for a few hours at low heat to dry it out. Extra fat will drip out of the skin during this phase, so arrange the pork skin on a wire rack set inside a foil-lined rimmed baking sheet to catch the drips.
  • Heat the frying oil. Traditionally, chicharrónes are fried in lard, but that can get a little stinky to do at home, so you can use canola, grapeseed oil, or another vegetable oil with a high smoke point instead.

  • Some people will remove all the excess fat and meat and leave only the skin to have the fluffy, light chicharrones. But I like to make them like these sold in a local butcher shop in my hometown. With some fat and meat on them.
  • Melt the lard and heat until it is very hot. Carefully place the pieces of skin into the pot. Be very careful because the fat will splatter during the process. Stir frequently to avoid the skins from sticking to the bottom of the pot. After one hour the skin will be soft like in this picture; these are called “cueritos” in Mexico. Add the salt to the season at this time.
  • Keep cooking and stirring frequently for about another hour or more until they become golden brown, taking care not to overcook them. Overcooked chicharrones will be rubbery and hard to eat. Usually when the lard starts bubbling the skin will pop. That will tell you that your chicharrones are almost ready. Check them out by taking one out and let it cool a little to see if it is on the desired consistency, meaning crunchy, crispy but not hard.
  • Once they are ready, remove from the pot and drain in paper towels let them cool slightly before you eat them. Now pass the salsa and the warm tortillas for your tacos.
