Number Of Ingredients 11

1 cup all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 cup packed light brown sugar
1/2 cup sugar
1-1/3 cups old-fashioned oats
1 cup salted whole cashews
ADDITIONAL INGREDIENTS:
2/3 cup butter, softened
3/4 teaspoon vanilla extract
1 large egg plus 1 large egg yolk, room temperature

Steps:

  • Whisk flour, baking soda and cinnamon. In a 1-qt. glass jar, layer flour mixture, brown sugar, granulated sugar, oats and cashews in order listed. Cover and store in a cool dry place up to 3 months., To prepare cookies: Preheat oven to 350°. Beat butter and vanilla extract until light and fluffy. Add egg and yolk until well blended. Add cookie mixture; mix well., Drop by tablespoonfuls 1-1/2 in. apart on parchment-lined baking sheets. Bake until lightly browned, 10-12 minutes. Remove from pans to wire racks to cool. Store in an airtight container.

1 teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter, softened
½ cup white sugar
1 teaspoon vanilla extract
½ cup cashew butter
½ cup firmly packed brown sugar
1 egg
2 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix flour, baking soda, and salt together in a small bowl.
  • Beat butter, white sugar, and vanilla extract together with an electric mixer in a large bowl until smooth. Add cashew butter, brown sugar, egg, and milk to the butter mixture; beat until smooth. Gradually add flour mixture and mix until just incorporated into a dough.
  • Roll dough into 1 1/2-inch balls and arrange onto a baking sheet. Lightly press a fork into the top of the balls to make a crosshatch pattern.
  • Bake in preheated oven until golden brown, 12 to 14 minutes.

225 g butter
200 g caster sugar
200 g dark brown sugar
2 eggs
1 teaspoon vanilla
250 g flour
1 teaspoon bicarbonate of soda
1 teaspoon salt
1 1/2 teaspoons cinnamon
1 1/2 teaspoons ground ginger
1 teaspoon fresh ground black pepper
270 g rolled oats
150 g chopped cashews

Steps:

  • Pre-heat oven to 190°C.
  • Cream the butter and two sugars until fluffy.
  • Beat in the eggs one by one and add the vanilla.
  • In a separate bowl, mix together the flour, bicarbonate of soda, salt, cinnamon, ginger and pepper.
  • Stir this mix into the butter mixture.
  • Stir in the oats and cashew nuts.
  • Chill for an hour in the fridge, then spoon golfball-sized balls of mixture onto a baking sheet and bake for 8-10 minutes.
  • When ready, remove from the oven and allow to cool for 5 minutes before removing them from the baking sheet onto a cooling rack.

4 ounces bacon fat (may substitute vegetable oil) or 4 ounces beef suet (may substitute vegetable oil)
2 onions, finely chopped
4 -6 ounces chicken stock
8 ounces old-fashioned oatmeal, lightly toasted (do not use instant or quick-cooking oats)
salt and pepper

Steps:

  • Melt the fat or heat the oil in a large frying pan.
  • Add the onion and cook until soft and golden.
  • Add the oatmeal and mix in well.
  • Cook for about 5 minutes, stirring frequently.
  • Add the stock and allow it to be absorbed by the oatmeal.
  • Season well and serve with light creamy mashed potatoes.
  • (Skirlie may also be used as a stuffing for any kind of game bird or poultry. It is also a very good accompaniment to rich meaty and gamy stews).

2 large eggs
1 tablespoon molasses
2 teaspoons vanilla extract
2 cups all-purpose flour
2 cups quick-cooking oats
1-1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup each raisins and chopped pecans
1 cup semisweet chocolate chips

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, molasses and vanilla; beat well. , Combine the flour, oats, baking soda, cinnamon and salt; gradually add to creamed mixture and mix well. Stir in the raisins, pecans and chocolate chips. Drop by tablespoonfuls 2 in. apart onto greased baking sheets. , Bake at 350° for 9-10 minutes or until lightly browned. When these came out of the oven, all I wanted to do was pour a tall glass of milk and dig in! I've never eaten a cookie with cashews before. And, I'm wondering why not?! Next time, I may add a few chocolate chips. These are becoming a regular in my house.

1 c real butter
1 c sugar
1 c light brown sugar
2 large eggs
2 c all purpose flour
3/4 tsp salt
1 tsp baking soda
3 c quick cooking oats
1 tsp vanilla
1/2 tsp cinnamon
2 c cashews (halves/pieces)
1/2 c sweetened flaked coconut

Steps:

  • 1. Preheat oven to 350.
  • 2. Mix salt, flour, cinnamon, oatmeal and baking soda together thoroughly with fork and set aside.
  • 3. Soften butter, add sugar(s) and mix thoroughly until creamy. Add vanilla and one egg. Beat in the other egg. Mix thoroughly. Add dry ingredients gradually. Dough will be thick. Fold in nuts and coconut.
  • 4. Using your hands, shape dough the size of walnuts and press down flat.
  • 5. Bake on ungreased cookie sheet for 8-9 minutes. Cool on wire racks.

  • Lightly brown butter in a small saucepan over low heat.
  • Remove from the heat.
  • Add cream and vanilla.
  • Beat in confectioners' sugar until smooth and thick.
  • Frost cookies.
  • Top each with a cashew half if desired.

1 1/4 cups Splenda sugar substitute
2 teaspoons sweet n low brown sugar substitute (optional)
1 cup unsweetened applesauce
2 egg whites or 1 egg
2 tablespoons nonfat milk
2 teaspoons vanilla
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/8 teaspoon cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground ginger
3 cups Quaker Oats (quick or old fashioned, uncooked)
1 cup diced dried mixed fruit or 1 cup raisins (optional)
powdered sugar, glaze (optional)
cinnamon (for sprinkling) (optional)

Steps:

  • Heat oven to 350°F.
  • Line cookie sheets with parchment.
  • You only need 2.
  • In large bowl, beat sugars and applesauce until well blended.
  • Add egg whites, milk and vanilla; beat well.
  • Add combined flour, baking soda, cinnamon, nutmeg, and ginger; mix well.
  • Add oats and dried fruit; mix well.
  • (Dough will be moist.) Drop dough by rounded tablespoonfuls onto cookie sheets.
  • I fit them in 4 X 5 rows with one cookie squeezed into the side.
  • Press down cookies to desired thickness and width (these cookies will NOT spread because of no fat) Bake 4 minutes, then turn cookie sheet around to the other side and bake another 4.
  • Cool 1 minute on cookie sheets; remove to wire rack.
  • Cool completely.
  • Store tightly covered.
  • I suggest using my Splenda Powdered Sugar Glaze.
  • One recipe should do the trick.
  • Sprinkle with extra cinnamon for an extra kick, if desired.
