CHESTNUT PUREE

Chestnut Puree image

Use this puree in our Chestnut Cake with Chocolate-Armagnac Glaze recipe.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Yield Makes about 2 1/2 cups

Number Of Ingredients 4

1 jar (14.8 ounces) chestnuts
2 1/4 cups whole milk, plus more if needed
Pinch of salt
1/2 vanilla bean, halved lengthwise

Steps:

  • Combine chestnuts, milk, and salt in a saucepan. Using the tip of a paring knife, scrape seeds from vanilla bean into pan, and toss in pod. Bring to a simmer, and cook, partially covered, until chestnuts are very soft and all but about 1/2 cup of the liquid has been absorbed, about 20 minutes.
  • Pour mixture through a fine-mesh sieve into a bowl, reserving chestnuts and cooking liquid separately and discarding vanilla pod. Process chestnuts in a food processor until very smooth, adding reserved cooking liquid (and additional milk if needed), 1 tablespoon at a time, until mixture is the consistency of a thick spread. Pour through a large-mesh sieve. Cover with plastic wrap, and refrigerate until ready to use.

Chestnut-Potato Puree image

Provided by Anne Burrell

Categories     side-dish

Time 35m

Yield 4 servings

Number Of Ingredients 5

1 bag frozen peeled chestnuts
Kosher salt
1/2 pound Yukon gold potatoes, peeled and quartered
1/2 to 1 cup heavy cream, heated
4 tablespoons cold unsalted butter, cut into pieces

Steps:

  • Place the chestnuts in a large saucepot and fill with water. Season generously with salt and bring the pot to a boil. Add the potatoes and continue to boil until the potatoes are fork-tender, 20 to 25 minutes.
  • Drain the cooked potato-chestnut mixture and return to the pot. Add the hot cream and cold butter and stir vigorously until combined. Check the seasoning; add salt, if needed. If the mixture is a little stiff, add more cream and butter until it reaches the desired consistency. Place in a serving bowl and cover with foil until ready to serve.

CHESTNUT CHEESECAKE

Chestnut Cheesecake image

I'm still on a chestnut kick. This recipe is from Nigella Lawson. I love the flavor combinations she comes up with. The cook time includes 1 day refrigeration, because this needs to be made a day in advance.

Provided by JenPo

Categories     Cheesecake

Time P1DT1h40m

Yield 8 serving(s)

Number Of Ingredients 17

2 cups graham cracker crumbs
1/4 cup butter
1 tablespoon sweetened chestnut puree ("heaped")
2 cups fat free cream cheese
3/4 cup superfine sugar
3 eggs
3 egg yolks
3/4 cup fat free sour cream
1 teaspoon lime juice
2 tablespoons rum
1 teaspoon vanilla extract
1 cup sweetened chestnut puree
1/3 cup water
1/4 cup rum
1 tablespoon sweetened chestnut puree
1/4 cup superfine sugar
1 tablespoon butter

Steps:

  • Preheat the oven to 350°F.
  • Combine the crackers, butter and heaped tablespoon chestnut purée in a food processor and pulse fine and crumbly. Press into the bottom of a 9-in springform pan and refrigerate until needed.
  • Beat the cream cheese until smooth and add the sugar. Blend in the eggs and egg yolks, one by one to combine completely. Add the sour cream, lime juice, rum, and vanilla, and beat again until smooth and creamy. Fold in the 1 cup chestnut purée by hand. It doesn't have to be fully incorporated, because it will give it a swirl or streak effect.
  • Boil some water and keep it ready.
  • Wrap the whole outside of the springform pan with plastic wrap, then with aluminum foil, covering the plastic wrap to make the pan watertight. Stand the pan in a roasting pan and pour in the chestnut filling. Once that's done, pour the boiled water into the roasting pan to come just over an inch up the side of the pan. Bake 1 hour.
  • The cheesecake should be just set because it will continue cooking in the pan outside of the oven. Take the springform pan out of the roasting pan and the foil and plastic wrap and cool on a wire rack. Refrigerate overnight.
  • Unmold it and let it come to room temperature for about 20-30 minutes. (You can unmold it and return it to the refrigerator, just remember to bring it back to room temp in time.).
  • Combine the remaining ingredients (water, rum, chestnut puree, sugar, and butter) in a saucepan and melt together. Let the syrup boil 10 minutes, then cool to room temperature until ready to use.
  • To serve, drizzle room temperature or slightly warmed syrup over cheesecake.

PURéE DE CHâTAIGNES (CHESTNUT PURéE)

Purée de châtaignes (chestnut purée) image

Enjoy this rich and smooth chestnut purée alongside turkey or veal on Christmas Eve. In France, chestnuts are synonymous with the Christmas season

Provided by Amanda Nicolas - Associate editor

Categories     Condiment, Side dish

Time 50m

Number Of Ingredients 7

360g whole cooked vacuum-packed chestnuts
700ml whole milk
1-2 thyme sprigs
35g butter
2 shallots, sliced
1 tbsp crème fraîche
ground white pepper, to taste

Steps:

  • Tip the chestnuts into a saucepan with the milk and thyme. Bring to the boil over a medium heat, then reduce the heat to a gentle simmer and cook for 10-15 mins. The chestnuts are ready when they start to fall apart slightly when pricked with a fork.
  • Meanwhile, heat the butter in a small pan and fry the shallots over a medium heat until softened.
  • Remove the thyme from the chestnuts and discard. Use a slotted spoon to transfer the chestnuts to a food processor, then pour in 100ml of the poaching milk, reserving the rest. Add the fried shallots and crème fraîche, then blitz to a thick purée, adding more of the reserved poaching milk to loosen if needed. Season with salt and some white pepper to taste. To freeze, leave to cool fully, then seal in an airtight container and freeze for three weeks.
  • Tip the purée back into the saucepan and cover to keep warm until you're ready to serve. If the purée needs reheating, add a splash of the reserved poaching milk and warm through over a low heat.

10 IMPRESSIVE CHESTNUTS NUTRITION FACTS AND HEALTH BENEFITS

From nutrition-and-you.com
  • Chestnuts, unlike other nuts and seeds, are relatively low in calories and fats. Nonetheless, they are rich sources of minerals, vitamins, and phytonutrients that immensely benefit health.
  • Another unique feature of chestnuts is that they primarily compose of starch (carbohydrates) in contrast to other kinds of tree seeds and nuts which are rather high in calorie, protein, and fat.
  • They are an excellent source of dietary fiber; provide 8.1 g (about 21% of RDI) per 100 g. Fiber diet helps lower blood cholesterol levels by limiting excess cholesterol absorption in the intestines.
  • Chestnuts stand out from other edible nuts for their distinctive nutrition profile. They are exceptionally rich in vitamin-C. 100 g nuts provide 43 mg of vitamin-C (72 % of DRI).
  • Again, chestnuts are rich in folates akin to green leafy vegetables, which is quite a rare but unique feature for nuts and seeds. 100 g nuts provide 62 µg of folates (or 15.5%).
  • Like true nuts, they too are a rich source of mono-unsaturated fatty acids like oleic acid (18:1) and palmitoleic acids (16:1). Studies suggest that monounsaturated fats (MUFs) in the diet help lower total as well as LDL (bad cholesterol) and increase HDL (good cholesterol) levels within the blood.
  • The nuts are an excellent source of minerals such as iron, calcium, magnesium, manganese, phosphorus, and zinc, besides providing a very good amount of potassium (518 mg / 100 g).
  • Further, they are also rich in many important B-complex groups of vitamins. 100 g of nuts provide 11% of niacin, 29% of pyridoxine (vitamin B-6), 100% of thiamin, and 12% of riboflavin.
  • Chestnuts, just like hazelnuts and almonds, etc., are gluten free food items. Moreover, for the same reason, they are one of the popular ingredients in the preparation of gluten-free food formulas intended for use in gluten-sensitive, wheat allergy, and celiac disease patients.
