These are wheat free, dairy free, low sugar, low fat muffins and you'd never know it. Sucant is dried can juice. It can be found in health food stores. If you don't eat them in the first two days, freeze them. Thaw in microwave for 30 seconds apiece and they will taste freshly baked.

Steps:
- Preheat oven to 400 degrees F (205 degrees C). Lightly grease or line a 12-cup muffin tin with paper liners.
- In a large bowl blend the banana, egg substitute, soy milk, oil and applesauce together. Stir in the rice flour, sucanat, baking powder and salt. Mix until just moistened then stir in the dried cherries and vanilla chips. Pour batter into the prepared muffin tin, filling each cup 2/3 full.
- Bake at 400 degrees F (205 degrees C) for 30 minutes.

- 1. Preheat oven to 375. Line muffin tins with liners or spray with cooking spray.
- 2. Make the crumb topping: In medium bowl, combine all dry ingredients. Stir in butter then pinch mixture until it forms pea size chunks.
- 3. Make the muffins: In a small bowl whisk the flour, baking powder and salt. In a large bowl, combine the sugar, eggs and oil and beat with a hand mixer until well combined. Beat in the milk and vanilla. Add the flour mix and beat on low speed until the batter is smooth. Stir in the cherries.
- 4. Spoon the batter into muffin tins filling about 3/4 full. Sprinkle crumb topping on each muffin and bake for about 30 minutes until a toothpick inserted in center comes out with a few moist crumbs attached.
- 5. Let cool for 10 minutes before removing from pan.

- In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the egg, milk and oil; stir into dry ingredients just until moistened. Drain cherries, reserving 2 tablespoons of juice for glaze (discard remaining juice or save for another use). Chop cherries; fold the chips, pecans and cherries into the batter. , Drop by tablespoonfuls into greased or paper-lined heart-shaped or miniature muffin cups. Bake at 375° for 10-13 minutes or until a toothpick inserted in the center comes out clean. , Cool for 10 minutes; remove from pans to wire racks. Combine confectioners' sugar and reserved cherry juice to make a thin glaze; drizzle over muffins. Serve with cream cheese if desired.

CHERRY COBBLER MUFFINS

- Preheat the oven to 375°F. Line a 12-cup muffin pan with parchment paper muffin liners or spray with non-stick cooking spray.
- Sift together flour, salt, and baking powder in a small bowl and set aside.
- In a large mixing bowl beat or whisk together eggs, melted butter, sugar, vanilla extract, and milk.
- Dump the dry ingredients into the egg/milk mixture and stir gently, just until combined. Do not overmix.
- Transfer ½ (about 1 cup) of the canned cherry pie filling to a strainer and rinse the pie filling from the cherries. Allow to drain completely.
- Toss the rinsed cherries in the remaining tablespoon of flour. Then fold into muffin batter, stirring just until cherries are distributed.
- Divide the batter evenly between 12 muffin cups.
- From the remainder of the cherry pie filling can, drop 2 to 3 cherries over the top of the muffins along with a small amount of pie filling.
- In a small bowl use your fingers or a fork to mix butter, flour, baking powder, sugar, and cinnamon until crumbles form.
- Mix heavy cream into the butter/flour mixture. Sprinkle streusel over the top of the cherries and muffin batter.
- Bake approximately 22 to 25 minutes or until a toothpick inserted in the center of muffins comes out with only a few crumbles.
- Cool for 10 minutes and then remove muffins from the pan onto a cooling rack.
- Serve warm.

- Mix all your dry ingredients together in one bowl (including Vanilla Powder)
- Lightly beat the eggs and add in the Greek Yogurt, oil, lemon zest, and juice from the lemon. Mix all these ingredients until well blended.
- Add wet mixture to dry mixture and mix just enough to blend.
- Fold in the Cherries into the muffin mix. (donot over mix; it will make the muffins tough)
- Sprinkle the tops with granola.
- Bake for 25-30minutes at 350 degrees until the tops are golden brown.
- This will yield 6 large muffins or 12 small muffins

CHOCOLATE CHIP CHERRY MUFFINS
I created these muffins this morning when I couldn't find a recipe for what I wanted. I get my dried cherries from nutsonline.com, and they are very moist (for a dried fruit, that is), so I didn't need to plump them first. Because there is so little fat in the batter, muffin papers will stick, so grease your muffin cups well. These do not rise very high, but they taste wonderful.

- Preheat oven to 400.
- Grease a 12-cup muffin pan.
- Mix whole wheat pastry flour, baking powder, and salt in a large bowl.
- In a slightly smaller bowl mix milk, vanilla yogurt, egg whites, brown sugar, and almond extract.
- Pour wet ingredients on top of dry ingredients. Mix until dry ingredients are just barely moistened.
- Gently fold in chocolate chips and dried cherries.
- Spoon into muffin cups, about 2/3 full.
- Bake for 18 to 20 minutes, until toothpick comes out clean.
- Let rest in muffin pan for 5 minutes, then remove the muffins and place them on a cooling rack.

- Preheat oven to 350 degrees. Line your muffin pan with liners or spray with baking spray. I used silicone muffin pans and sprayed it with olive oil spray. Set aside.
- In one bowl, add flour, salt, baking powder together and mix with a whisk.
- In another bowl, lightly beat egg and add in yogurt, sugar, oil or applesauce, vanilla and milk and mix until well blended.
- Add dry mixture to wet mixture until just blended. (Don't over mix - you will get tough muffins!)
- Toss fresh or frozen cherries with 1 tablespoon flour & 1 tablespoon sugar before adding to muffin mixture and fold about 3-4 times and then scoop muffin mixture into prepared muffin cups. Will rise 1/2 inch or more.
- Bake for 20 to 25 minutes or until tops become golden brown.
- Recipe makes 12-14 regular muffins.
