CHERRY TOMATO SALAD

Cherry or grape tomatoes are just plain cheery and delicious, and here they are the start of their own little show.

Number Of Ingredients 8

¼ cup olive oil
3 tablespoons balsamic vinegar
2 teaspoons Dijon mustard
2 teaspoons honey
½ teaspoon minced garlic
Kosher salt and freshly ground pepper (to taste)
4 cups cherry tomatoes (halved)
¼ cup chopped fresh oregano

Steps:

  • In a large bowl, combine the olive oil, balsamic vinegar, Dijon mustard, honey, garlic, salt and pepper.
  • Add the tomatoes and the oregano and toss to combine. Taste and adjust seasonings as needed.

This recipe evolved from a need to use the bumper crops of delicious cherry tomatoes we grow. It's one of my favorite cherry tomato recipes, especially at cookouts. -Sally Sibley, St. Augustine, Florida

1 quart cherry tomatoes, halved
1/4 cup canola oil
3 tablespoons white vinegar
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 cup minced fresh parsley
1 to 2 teaspoons minced fresh basil
1 to 2 teaspoons minced fresh oregano

Steps:

  • Place tomatoes in a shallow bowl. In a small bowl, whisk oil, vinegar, salt and sugar until blended; stir in herbs. Pour over tomatoes; gently toss to coat. Refrigerate, covered, overnight.

Summer Cherry Tomato Salad image

This is a great slad for those home growm little beauties! So easy, and is especially lovely when different colour cherry tomatoes are used.

1 red onion, peeled and finely chopped
1/4 cup red wine vinegar
2 tablespoons olive oil
600 g mixed cherry tomatoes, cut in half
flaked sea salt
cracked pepper
2 tablespoons basil, finely shredded

Steps:

  • Put onion in a bowl with the vinegar and oil. Toss well and leave to marinate in refrigerator for 1 hour, until flavours blend.
  • When marinated, remove from fridge and add tomatoes, salt flakes, and cracked pepper.
  • Toss salad and just before serving, sprinkle tomato salad with the basil.
  • Serve.

MARINATED CHERRY TOMATO SALAD



Marinated Cherry Tomato Salad image

This is a very delicious way to use an overabundance of cherry tomatoes.

4 cups halved cherry tomatoes
¼ cup vegetable oil
3 tablespoons cider vinegar
1 teaspoon dried parsley
1 teaspoon dried basil
1 teaspoon dried oregano
½ teaspoon salt
1 ½ teaspoons white sugar

Steps:

  • In a small bowl or cup measure, mix together oil, apple cider vinegar, herbs, salt, and sugar.
  • Pour dressing over cherry tomatoes in a serving dish, and gently stir to coat. Chill for at least 2 hours. Gently stir from bottom to top, coating all tomatoes, before serving.

This is a nicely-flavored simple salad that I love and make often in the summer. My husband is not as crazy about tomatoes as I am, but he will eat seconds of this dish. I clipped the recipe out of a newspaper several years ago.

1/3 cup mayonnaise
2 teaspoons red wine vinegar
1 teaspoon Dijon mustard
1 pint cherry tomatoes, halved (I usually use grape tomatoes)
1/4 cup finely chopped red onion
2 tablespoons chopped fresh parsley
salt and pepper, to taste

Steps:

  • Whisk mayonnaise, vinegar and mustard together.
  • Add tomatoes, onions and parsley.
  • Toss well and season to taste.

1 lb cherry tomatoes
1 lb Brussels sprout
1 large jalapeno pepper
30 g fresh dill weed
4 tablespoons lemons
4 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Cut tomatoes in halves or quarters depending on their size. Add to a large salad bowl.
  • Cut end (stem) off of Brussels sprouts, then separate leaves and add to salad bowl.
  • Cut off top and stem of jalapeno, cut in half lengthwise, then quarters. Cut out white part and seeds. Then chop into small pieces (or larger according to taste).
  • Chop dill, not too fine. Scatter over the salad in the bowl.
  • With one hand, squeeze lemon juice into salad, using other hand beneath to catch seeds.
  • Add a pinch of salt and fresh ground black pepper.
  • Drizzle in the olive oil.
  • Toss the salad well to coat with the dressing.
  • Serve chilled or at room temperature.
  • Bon Appetit!
