450g self-raising flour
1 tsp bicarbonate of soda
100g cold butter , diced
2 tbsp caster sugar
284ml pot buttermilk
2 tbsp milk
2 tsp vanilla extract
100g glacé cherry , chopped
clotted cream and cherry or strawberry jam, to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. Put the flour, ½ tsp salt, bicarb and butter into a bowl and rub in with your fingertips until the mixture resembles breadcrumbs. Mix in the sugar.
  • Quickly mix in the buttermilk, a splash of milk, vanilla and cherries and bring together to form a soft dough. Press out onto a lightly floured surface, to about 3cm thick. Cut out with 5cm cutters.
  • Transfer to a lightly floured baking sheet, brush with the remaining milk and bake for 12-15 mins until golden and well risen. Serve with clotted cream and jam.

My friend loves a good cherry scone, and can't bake or she thinks she can't, so when she pops in for a cuppa, I make her these. It only takes 15 mins and they are lovely with fresh butter. A light touch is all you need.

225 g self raising flour
40 g butter or 40 g margarine
40 g cherries
150 ml milk
1 1/2 tablespoons caster sugar
1 pinch salt
1 little extra flour

Steps:

  • Pre heat oven to 425f 220c.
  • Sift flour into a bowl.
  • Rub butter into flour.
  • Mix in sugar and salt and cherrys.
  • Add milk a little at a time and mix with a knife.
  • Make sure you don't over mix or your scones will be hard.
  • when your mix is ready it should be moist and not too dry turn out dough on floured surface and roll out to 2cm thick, I don't use a rolling pin I just shape with my hands and use a 4cm pastry cutter.
  • Place the scones on a greased baking sheet.
  • brush with a little milk.
  • Bake in oven for 12-15 mins untill med brown.
  • Enjoy with a nice cup of tea.

1 3/4 cups all-purpose flour, plus more for work surface
2 1/2 teaspoons baking powder
2 1/2 tablespoons sugar, plus more for sprinkling
1/4 teaspoon salt
6 tablespoons unsalted butter, cut into 1/2-inch pieces, chilled
1/2 cup dried cherries
1 teaspoon grated lemon zest
1 large egg
5 tablespoons heavy cream, plus more for brushing on scones

Steps:

  • Preheat oven to 425 degrees. Line a baking sheet with parchment paper or a nonstick baking mat; set aside.
  • In the bowl of a food processor, combine flour, baking powder, sugar, and salt. Add butter and pulse 3 to 6 times until mixture resembles a coarse meal. Transfer mixture to a large bowl; stir in cherries and lemon zest.
  • In a small bowl, beat together egg and cream. Add to flour mixture; stir gently with a fork until mixture just comes together. If dough seems too dry, add a splash of cream; mixture should not be too sticky.
  • Transfer dough to a lightly floured work surface. Shape dough into a 6-inch circle, about 1 inch thick. Using a sharp knife, cut dough into 8 equal wedges. Place scones on prepared baking sheet; lightly brush tops with heavy cream and sprinkle with sugar. Bake until golden brown, 12 to 14 minutes.
  • Let cool slightly on baking sheet before transferring to a wire cooling rack to cool completely. Scones are best eaten the day they are made.

A very easy cherry scones recipe made with fresh cherries. Frozen or preserved cherries can be used as well.

15-20 fresh cherries (depending on size)
450 g all-purpose flour (1 lb/ 3 ¾ cups )
2 teaspoons baking powder
pinch of salt
60 g granulated sugar (2 oz/ 1/3 cup )
80 g unsalted butter (2.8 oz/ 1/3 cup )
2 medium eggs
200 ml milk (6.7 fl.oz/ ¾ cup + 2 tablespoons )
1-2 tablespoons brown sugar (as needed)

Steps:

  • Preheat the oven to 240 degrees Celsius/ 460 degrees Fahrenheit. Line a baking tray with baking paper.
  • Stone and chop the cherries. Set aside.
  • Sift the flour, baking powder, and salt in a wide bowl. Lightly stir in the sugar.
  • Cut the butter into cubes and rub them into the flour mixture with your fingertips until the mixture resembles crumbs. Stir in the chopped cherries.
  • You will need about 1 ½ egg for the dough and ½ egg for the egg wash. Break one egg in a cup. Whisk lightly. Pour ½ of the egg into another bowl. Set the cup with the remaining egg aside.Add the second egg to the half egg in the bowl. Add the milk and whisk together.
  • Combine: Pour the egg-milk mixture into the flour mixture. Stir to mix with a spoon. The dough will be rather soft.
  • Cut scones: Turn the dough onto a floured surface and shape with your hands into a round shape, about 22 cm/ 8.7 inches diameter and 2,5 cm/ 1 inch thick. Cut into 8 triangles, flouring the knife, if necessary.
  • Brush: Transfer the scones to the prepared baking tray and brush them with the remaining egg in the bowl. Sprinkle with brown sugar.
  • Bake for about 12 minutes or until golden brown. Transfer to a wire rack and let cool.

3/4 cup dried cherries
1 cup boiling water
3 cups all-purpose flour
3 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt

1 large egg, separated
1/2 cup sour cream
3/4 cup half-and-half cream
1-1/2 teaspoons almond extract

Steps:

  • Soak cherries in water for 10 minutes. Drain and set aside. In a large bowl, combine flour, sugar, baking powder, salt and cream of tartar. With a pastry blender, cut in the butter. Set aside. , Preheat oven to 400°. In a small bowl, combine egg yolk, sour cream, cream and extract. Add to flour mixture; stir until a soft dough forms. Turn out onto a lightly floured surface; knead gently six to eight times. Knead in cherries. , Divide dough in half and shape into balls. Roll each ball into a 6-in. circle. Cut into six wedges. FRESH CHERRY SCONE RECIPE

1 cup fresh cherries, measure after pitting and cutting in half or quarters
1 cup flour (plus about 1/4 cup additional flour)
1/4 cup brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup cold unsalted butter
1/4 cup heavy cream
1 teaspoon vanilla extract
1 egg

Steps:

  • Preheat oven to 400 degrees
  • Blend flour, brown sugar, baking powder, and salt.
  • Cut in cold butter with pastry cutter until mixture resembles coarse crumbs.
  • Add in heavy cream, egg, vanilla extract. Mix until all combined.
  • Gently stir in cherries until they are barely incorporated.
  • Darker cherries that are overmixed with turn the dough blueish, so just fold them.
  • If your cherries are soft and not firm, freeze them for 10 minutes so they mix easier.
  • Place dough into a greased cast iron scone pan (the scones don't get as crisp in the cast iron but they taste great) I have pre-heated my cast iron and tried it also and the timing was about 15 minutes, but they still didn't get a crisp edge.
  • Alternatively, I like to GENTLY knead out on the dough on a lightly floured surface. Use extra flour if dough is sticky.
  • Knead may be to strong of a word for these fruit scones, GENTLY FOLD the dough over twice to combine it on a well-floured surface.
  • Bake scones on a parchment lined baking sheet for 20 minutes at 400 degrees.

DRIED CHERRY ALMOND SCONES

1 cup sugar
1 tablespoon baking powder
1 lemon, zested
Pinch salt
1/2 teaspoon ground cinnamon
1 1/2 sticks cold butter, cut into pea size pieces
1 cup dried cherries
1/2 cup toasted sliced almonds
1/2 cup heavy cream
Turbinado sugar, for garnishing
Honey Butter, recipe follows
1/2 pint cold heavy cream
2 tablespoons honey
1 orange, zested

Steps:

  • Preheat oven to 375 degrees F.
  • In a small bowl, combine the flour, sugar, baking powder, lemon zest, salt and cinnamon. Add in the butter and rub with your fingers into the dry ingredients until a coarse meal forms. Add in the cherries and almonds. Add the heavy cream and combine it into the butter flour mixture.
  • Form the dough into a 1-inch thick disk and cut it into 6 wedges. Sprinkle each wedge generously with the turbinado sugar. Transfer the wedges to a parchment-lined sheet pan and bake in the preheated oven for 17 to 18 minutes, turning the pan halfway through. Serve warm with Honey Butter.
  • In a stand mixer fitted with the whisk attachment, add all ingredients and whip on high speed until the cream starts to clump and turn light yellow. Continue mixing as butter forms and the buttermilk begins to separate out. Scrape sides and continue mixing until mixture is one lump of butter. Place butter into a clean container or serving dish and store in the refrigerator until ready to use.

Steps:

  • Preheat the oven to 220°C/200°C Fan/Gas mark 7 and place a baking tray in the oven.
  • In a large bowl place the flour, salt and baking powder and mix through. Add the butter and rub in with your fingers until the mix looks like fine crumbs. Stir in the ground almonds and caster sugar.
  • Put the milk into a jug and heat in the microwave for about 30 secs until warm, but not hot. Now add the lemon juice and almond essence, set aside.
  • Make a well in the dry mix, then add the milk mixture and combine it quickly with a cutlery knife. Now add the cherries and combine. Scatter some flour onto the work surface and tip the dough out. Dredge the dough and your hands with a little more flour, then fold the dough over 2-3 times until it's a little smoother. Pat into a round about 4cm deep.
  • Use a 5cm smooth cutter dipped in flour to stamp out rounds and repeat. You may need to press what's left of the dough back into a round to cut out more scones. Brush the tops with a beaten egg, then carefully place onto the hot baking tray.
  • Bake for 10 minutes until well risen and golden. Serve warm or cold on the day of baking, generously topped with lashings of jam and clotted cream. Enjoy!

250 g self-raising flour, (plus extra for rolling out)
½ teaspoon salt ((2.5ml))
50 g butter, (frozen. See note)
50 g caster sugar
80 g glacé cherries
150 ml milk

Steps:

  • Preheat the oven to 220°C/ 200°C fan/ gas mark 7/ 425°F
  • Grease the baking tray with a little butter or use a liner (which you don't need to grease)
  • Sift a little flour onto your worktop or rolling out mat
  • Roughly chop the cherries into quarters
  • Mix the flour and salt in a large mixing bowl. Grate the butter into the mixture and rub it in with your fingertipsTo rub in, have your palms up and move your thumbs over fingers from the little fingers inwards
  • Stir in the sugar and cherries. Add the milk and combine to make a smooth dough. Use a knife and then your hands
  • Transfer the dough to the floured surface and pat with your hand to make a level top, at least 2cm thick
  • Cut out the scones and move to the baking sheet. Pull the remaining dough together and repeat until all the dough is used
  • Brush the tops of the scones with milk or sprinkle with a little flour
  • Cook for 12-15 minutes until golden. Cool on a wire rack
  • Serve with butter.

1/4 teaspoon salt
1 tablespoon baking powder
1/4 cup chopped pecans, toasted
6 tablespoons shortening
1 egg, well beaten
1/3 cup half-and-half
1/2 cup dried cherries
2 tablespoons brandy or 2 tablespoons apricot nectar
1 tablespoon half-and-half
2 teaspoons sugar

Steps:

  • Combine 1/2 cup of dried cherries (or other dried fruit) with 2 tablespoons brandy or apricot nectar.
  • Let stand for 15 minutes.
  • Combine dry ingredients (flour, sugar, salt, baking powder).
  • Cut the shortening into the dry ingredients well.
  • Add pecans.
  • Make a 'hole' in the center of the dried mixture.
  • Stir together well beaten egg and half-and-half.
  • Add egg and fruit mixtures to dry ingredients all at once.
  • Using a fork, stir just until moistened.

  • Knead for 12 to 15 strokes.

1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt ((reduce to 1/4 teaspoon if using salted butter))
8 tablespoons cold butter, diced
1 large egg
1/2 cup whipping cream
1/2 teaspoon almond extract
1/2 cup sliced almonds
1/2 cup dried cherries

Steps:

  • Dice a stick of butter and place back in the refrigerator.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a small mixing bowl, beat together the egg, whipping cream, and almond extract. Set aside.
  • Remove the butter from the refrigerato,r and using a pastry blender, cut it into the flour mixture. (You will have small chunks of butter. That's fine.)
  • Pour the whipping cream mixture into the flour/butter mixture.
  • Stir with a large spatula until the liquid is incorporated into the flour.
  • Add the dried cherries & almonds, and mix one more time.
  • Put the dough out onto a cutting board that's sprinkled with a little flour.
  • Using your hands, mold the dough together, and begin shaping into a disc.
  • Use a rolling pin to flatten the disc so it measures 8 to 9 inches in diameter.
  • With a large sharp knife, cut the disc into eight sections.
  • Place the sections on a cookie sheet lined with parchment paper, at least 2 inches apart.
  • Refrigerate the cookie sheet for 30 minutes.
  • When the refrigeration time is almost over, preheat your oven to 400 degrees F.

These are hands down the most tender and delicious scones I have ever eaten. (The scone dough must be frozen for up to 12 hours before use). For tender, flaky scones refer to these guidelines: 1. Do not over mix. If you work the dough too much, your scones will be tough and chewy. 2. Roll or pat the dough so that it is at least one-half inch thick. Thicker dough results in a better shape and lighter texture. 3. Watch the clock when baking. Like most baked goods, scones continue to bake as they cool.

  • Sift the flour, sugar, baking powder, and salt together into a mixing bowl; Make a well in the center of the flour mixture; Add one cup of dried cherries to the dry ingredients just before blending in the cream.
  • Add the cream to the flour mixture and stir by hand just until the batter is evenly moistened.

1/3 cup dried cherries, chopped
2 teaspoons finely grated orange zest
2 large eggs
4 to 5 tablespoons heavy cream

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  • Whisk together the flour, sugar, baking powder and salt in a large bowl. Work the butter into the flour mixture with your fingers until it resembles a coarse meal. Stir in the cherries and orange zest.
  • Beat together 1 of the eggs and 4 tablespoons of the heavy cream in a small bowl. Add the egg mixture to the flour mixture and mix with a fork until the dough just comes together. If the dough seems dry, add the remaining 1 tablespoon heavy cream.

4 cups sifted cake flour (not self-rising; sift before measuring)
1/2 cup sugar plus more for sprinkling
1 tablespoon baking powder
1 teaspoon salt
1 1/2 sticks cold unsalted butter, cut into 1/2-inch pieces
1 cup dried cherries
1 large egg
1 cup heavy cream plus additional for brushing
Equipment:
a 3-inch round cookie cutter

Steps:

  • Preheat oven to 375°F with rack in middle.
  • Whisk together flour, sugar, baking powder, and salt in a large bowl. Scatter butter on top and blend with your fingertips until mixture resembles coarse meal. Mix in dried cherries.
  • Whisk together egg and cream in a small bowl, then fold into flour mixture until dough just comes together (dough will be quite delicate).
  • Turn out dough onto a lightly floured surface. With floured hands, press into a 1-inch-thick rectangle. Cut out rounds with cutter and arrange 2 inches apart on a parchment-paper-lined baking sheet. Gather scraps together and cut out additional scones.
  • Brush tops of scones with cream and sprinkle lightly with sugar. Bake scones, rotating baking sheet halfway through, until tops are golden, 25 to 30 minutes. Cool on a rack about 10 minutes before serving.

1 3/4 c all purpose flour
3-5 Tbsp sugar (use 5 tbsp sugar for a sweeter scone)
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 c cold butter
1/2 c dried cherries (or dried fruit of your choice)
1/2 c chopped nuts (your favorite)
1 egg, slightly beaten
1/3 c buttermilk
note: no buttermilk? use 1/3 cup milk with 1 tsp of lemon juice added. let stand a few minutes

Steps:

  • 1. Preheat oven to 400°. Line baking sheeet with parchment paper.
  • 2. In a medium bowl, combine flour, sugar, baking powder, baking soda and salt.
  • 3. Cut butter in with a pastry blender until mixture forms coarse crumbs.
  • 4. Mix in dried fruit and nuts.
  • 5. Add egg and buttermilk. Stir just until mixture holds together. Dough will be sticky. (If too dry, add another tablespoon of buttermilk)
  • 6. Turn out onto a lightly floured surface. Knead about 8-10 times. Pat into about a 9-in circle. Cut into 8-12 wedges.
  • 7. Place on parchment lined baking sheet and bake 12 - 15 minutes or until lightly browned. Remove to rack to cool.
