EASY 15 MINUTE MICROWAVE ACORN SQUASH
Microwave acorn squash is a delicious side dish that says fall with every bite, and it is ready in just 15 minutes. This microwave recipe with cinnamon-sugar butter is an easy side dish.

Steps:
- Wash acorn squash, cut in half lengthwise; scrape out seeds.
- Place cut side down into a glass baking dish containing 2 tablespoons water.
- Cook in microwave until squash is tender, about 6 minutes. (Cooking time depends on your microwave strength and the number of squash you are cooking; this recipe was tested using one squash-two halves-in a 1600 watt microwave.)
- Remove from microwave, turn squash right side up in same dish.
- Into each hollow, place butter, brown sugar, cinnamon, and salt. Cook in microwave until butter mixture is bubbly, about 2-4 minutes. Serve hot.

- Prepare your acorn squash by cutting it in half and coring out the seeds. Leave as much flesh as possible in each half of the acorn squash. Rinse after coring.
- Place the acorn squash halves facing downward in a microwave-safe bowl or dish with 2 tablespoons of water. Heat on high for 5 minutes.
- Transfer the heated acorn squash halves to individual bowls then add 1 tablespoon each of light brown sugar and butter. Heat on high for an additional 5 minutes in the microwave. Use a fork to check for tenderness after heating, if needed heat in additional 1-minute increments until the squash reaches your desired level of tenderness.
- Remove from the microwave and allow to cool for about 5 minutes before serving.

- Place squash on a microwave-safe plate, microwave on high for 3-4 minutes. Cut in half; remove seeds and strings. Cut a thin slice from bottom of squash with a sharp knife to allow it to sit flat. Place squash, cut side down on in a microwave-safe dish. Cover and microwave for 4-1/2 minutes. , Meanwhile, combine the crackers, butter, brown sugar and nutmeg. Turn squash over; fill with cracker mixture. Microwave for 1-2 minutes or until squash is tender.

- Place both halves of the squash cut side up on a microwave-safe plate or dish. Put 2 tablespoons of butter, and 2 tablespoons of brown sugar into the cavity of each half.
- Cook for 8 to 10 minutes in the microwave on full power. Rotate the squash a couple of times to ensure even cooking.
