JELLIED CRANBERRY-CHERRY SAUCE

Steps:
- Combine the cranberries, sugar, 1 1/2 cups water, the cherry juice, dried cherries, rosemary and a pinch of salt in a medium saucepan. Bring to a simmer over medium heat and cook, stirring occasionally, until the cranberries burst and the sauce thickens, 15 to 20 minutes. Let cool slightly. Discard the rosemary sprig.
- Puree the sauce in a blender until smooth. Strain through a fine-mesh sieve into a serving dish, pressing the sauce through with a rubber spatula. Refrigerate until set, at least 3 hours or overnight.
ROASTED DUCK BREAST WITH CHERRY SAUCE

- Preheat oven: 450 degrees In an ovenproof or cast iron pan, sear the meat skin side first until it's crispy. Then flip meat over and roast until juices run clear. Remove meat from pan and let rest. Drain fat from pan. Add shallots, vinegar and sugar, cook until liquid caramelizes. Add demi-glace and season with salt and pepper. Strain hot sauce and finish by adding butter and cherries. Place each breast on a plate and slice. Serve with cherry sauce poured on top.
PORK MEDALLIONS WITH CHERRY SAUCE

- Season the pork medallions with 1/4 teaspoon of salt and pepper. Heat 2 teaspoons oil in a large nonstick skillet over a medium-high heat and cook the meat until there is just a slight blush in the center about 3 minutes per side. Transfer the meat to a plate and tent with foil.
- Add the remaining teaspoon of oil and the shallots to the pan and saute until they begin to soften, about 1 minute. Add the chicken broth, balsamic vinegar, the remaining 1/4 teaspoon of salt and the cherries and cook until the liquid is reduced by half, about 4 minutes. Season with salt and pepper, to taste. Pour the sauce over the pork medallions and serve.

- Add the cherries and cook until thick and bubbly.
SAVORY CHERRY SAUCE
This is an easy sauce that goes well with chicken, turkey, fish, and pork. It is not a strongly flavored sauce, so it doesn't overpower the meat at all, but it does add nice color and an herb flavor with some sweetness from the cherries. I suggest using thyme sprigs, so they can easily be removed when the sauce is done. I have used agave syrup, and that works too. Frozen cherries work well with this if they are unsweetened. The finished sauce also freezes well. (Use sweet cherries, not pie cherries. I like it made with Bing cherries.)

SPICED CHERRY SAUCE
Here's a version of a recipe my mom used to make! Over the years I've cut back on the amount of spices but still enjoy the combination, whether over ice cream, pound cake, fruitcake, pancakes and even some meats! At times I've even jazzed it up a little with a bit of cherry flavoring, if you know what I mean!

DANISH CHERRY SAUCE

- Wash and pit cherries (if you don't have a pitter, a sturdy straw works).
- In a large saucepan combine sugar, cinnamon sticks, almond extract, water and corn syrup.
- Over medium high heat bring to a boil, stirring often to prevent scorching.
- Reduce heat to a simmer and add cherries.
- Simmer for 5 minutes.
- Remove cinnamon sticks.
- Ladle hot sauce into hot sterile jars, leaving 1/2 inch head space.
- Wipe rims and adjust 2 piece caps.
- Process 10 minutes in a boiling water canner.
- **To thicken sauce for serving, combine 1 T cornstarch and 2 T's water in a medium saucepan.
- Whisk well to remove any lumps.
- Add 1 pint Danish Cherry Sauce and bring to a boil, cooking until sauce reaches desired thickness.

- Put everything except the agar into a large sauce pan and heat until the cranberries burst and the liquid is reduced by half.
- Add the agar and stir. Bring back to a boil and then simmer for 5 minutes. Place in the fridge and let it set up.
