A great poppy seed version of the thumbprint cookie. These are so good that they are almost addictive.

1 cup butter, softened
1 cup confectioners' sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
½ teaspoon salt
2 tablespoons poppy seeds
½ cup cherry preserves

Steps:

  • Preheat oven to 300 degrees F (150 degrees C ).
  • Cream together butter and confectioners' sugar until light and fluffy. Beat in egg and vanilla. Mix in flour, salt, and poppy seeds until well blended. Drop dough from a teaspoon onto an ungreased cookie sheet. Make an indention in the middle of each cookie with your finger. If the dough is too sticky, dip your finger in water first. Fill each hole with about 1/2 teaspoon of cherry preserves.
  • Bake in preheated oven for 20 to 25 minutes, or until edges begin to brown.

Found this recipe in our local paper one summer. Have made in many times with rave reviews from family and friends. Great for hot weather as no cooking required!

8 ounces cream cheese, at room temp
14 ounces sweetened condensed milk
10 Hostess Twinkies, halved lengthwise
21 ounces cherry pie filling
15 ounces crushed pineapple with juice (drained)
1/2 cup chopped pecans (optional)
8 ounces Cool Whip Topping (thawed)

Steps:

  • In a bowl, combine the cream cheese and condensed milk and beat with electric mixer on med. speed till smooth. Arrange the twinkies cut side up into a 13x9 in baking dish. Pour the cream cheese mixture over the Twinkies. Spoon the pie filling over the cream cheese mixture. Spoon the pineapple over the pie filling. Reserve 2 tablespoons nuts for garnish. Sprinkle remaining nuts over the pineapple. Spread Cool Whip over the pineapple and garnish with the 2 tablespoons reserved nuts. Cover and chill 4-6 hrs or overnight. Cut into squares and serve. ENJOY!

1 cup confectioners' sugar
1 large egg, room temperature
1/2 cup canola oil
1 teaspoon grated lemon zest

2 tablespoons poppy seeds
1/2 teaspoon salt
1/3 cup seedless raspberry preserves

Steps:

  • Preheat oven to 325°. In a large bowl, beat butter and confectioners' sugar until smooth. Beat in egg, oil, lemon zest and vanilla. In another bowl, whisk flour, poppy seeds and salt; gradually beat into butter mixture., Shape dough into 1-in. balls. Place 1 in. apart on ungreased baking sheets. Press a deep indentation in center of each with the end of a wooden spoon handle. Fill with preserves., Bake until bottoms are light brown, 10-12 minutes. Remove from pans to wire racks to cool. Freeze option: Freeze cookies, layered between waxed paper, in freezer containers. To use, thaw before serving.

Number Of Ingredients 16

Fruit Filling
3/4 cup pitted prunes
1/3 cup seedless raisins
1/4 cup water
1/4 cup shelled walnuts
1/4 apple with peel
Juice and rind of 1/4 lemon
2 tablespoons sugar
Dough
2/3 cup pareve margarine or butter
1/2 cup sugar
1 large egg
1/2 teaspoon vanilla
1/2 to 3 cups unbleached all-purpose flour
1 teaspoon baking powder
Dash of salt

Steps:

  • 1. To make the filling, simmer the prunes and raisins together in the water, covered, for 15 minutes or until the prunes are softened but still firm.
  • 2. Add the nuts, then put the mixture through a grinder or chop in a food processor with the apple. Add the lemon juice and rind and sugar and mix well.
  • 3. To make the dough, cream the margarine or butter with the sugar. Add the egg and vanilla and continue creaming until smooth. A food processor is great for this.
  • 4. Add the flour, baking powder, and salt. Process until a ball of dough is formed.
  • 5. Chill for 2 to 3 hours, or overnight.
  • 6. Taking one fourth of the dough, roll out on a lightly floured board to a thickness of 1/8 inch. Cut into 2 1/2-inch circles. With your finger, brush water around the rim of the circle. Drop 1 teaspoon of filling in the center. Then bring the dough around the filling and press 3 ends together.
  • 7. Bake in a preheated 375-degree oven on a well-greased cookie sheet for 10 to 15 minutes or until the tips are golden.

1/2 cup margarine or 1/2 cup butter
1/4 cup granulated sugar
1 teaspoon grated lemon peel
1 egg
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon ground cloves
3/4 cup poppy seed filling
powdered sugar

Steps:

  • In a large bowl, beat margarine or butter and granulated sugar until light and fluffy. Beat in lemon peel and egg. Stir in flour, baking soda and cloves, mixing well.
  • Roll dough, between two pieces of waxed paper, into a 1/4-inch thick, 12"x10" rectangle. Refrigerate 30 minutes or until firm.
  • Heat oven to 350ºF. Grease a large cookie sheet. Remove waxed paper from one side of cookie dough. Spread poppy seed filling on dough to within 1/4-inch of the edges. Roll up dough tightly, beginning with long (12") side, peeling off waxed paper as dough is rolled. Pinch edge of dough to seal well. Cut dough into 1/2-inch slices. Place on cookie sheet about 1-inch apart.
  • Bake 10 to 12 minutes or until edges are light brown. Cool slightly; remove from cookie sheet. Sprinkle with powdered sugar.
