1 cup all-purpose flour
1 cup rolled oats
1 cup packed brown sugar
1 teaspoon baking soda
¼ teaspoon salt
½ cup butter
2 eggs
1 cup packed brown sugar
½ teaspoon almond extract
1 tablespoon all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup flaked coconut
1 cup maraschino cherries, drained and juice reserved
½ cup chopped pecans
6 tablespoons butter, softened
4 cups confectioners' sugar
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together 1 cup flour, oats, 1 cup brown sugar, baking soda and 1/4 teaspoon salt. Rub in the 1/2 cup of butter until crumbly. Press into the bottom of a 9x13 inch baking pan.
  • Bake for 10 minutes in the preheated oven. Remove and cool. Make the filling while the crust is baking. In a medium bowl, beat eggs, almond extract, 1 cup of brown sugar, 1 tablespoon of flour, baking powder and 1/2 teaspoon of salt until smooth. Stir in the coconut, cherries and pecans. Spread over the pre-baked crust.
  • Bake for 25 minutes in the preheated oven, until light brown. Let cool before icing.
  • To make the icing, mix together the remaining 6 tablespoons butter, confectioners' sugar and vanilla until smooth. Gradually add the reserved cherry juice until the desired consistency is reached. Drizzle over cooled bars before cutting into squares.

Yield Makes about 5 1/2 dozen

Number Of Ingredients 8

2 cups all-purpose flour
1/2 teaspoon ground allspice
1 teaspoon salt
1 cup unsulfured molasses
1/2 cup (1 stick) unsalted butter, softened
1/4 cup bourbon
1 cup packed light-brown sugar
4 cups coarsely chopped pecans, toasted

Steps:

  • Whisk together flour, allspice, and salt in a small bowl; set aside.
  • Melt molasses and butter in a small saucepan over low heat. Remove from heat; let cool slightly. Stir in bourbon. Transfer to a medium bowl; whisk in sugar until smooth. Stir in flour mixture and 1 cup pecans. Refrigerate dough until firm, at least 1 hour or up to overnight.
  • Preheat oven to 400 degrees. Scoop balls of dough using a 11/4-inch (1 ounce) ice cream scoop; roll in remaining 3 cups pecans. Space 1 1/2 inches apart on baking sheets lined with parchment paper. Bake until flattened and lightly colored on edges, 9 to 11 minutes. Let cool on sheets 3 minutes. Transfer to wire racks; let cool completely.

¾ cup butter
3 cups packed light brown sugar
3 eggs, beaten
1 ½ teaspoons vanilla extract
3 cups chopped pecans
3 cups self-rising flour

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan, or for thinner bars, use a 10x15 inch jellyroll pan.
  • Melt butter in a saucepan over medium heat. Stir in brown sugar until smooth. Remove from heat and let cool slightly.
  • Stir the eggs and vanilla into the brown sugar and butter. Mix in the chopped pecans, and then the flour. Spread evenly in the prepared pan.
  • Bake for 25 minutes in the preheated oven, or until golden brown. Allow to cool before cutting into bars.

1 cup rolled oats
1 cup flour
1 cup brown sugar
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup cold butter
1 cup brown sugar
2 eggs
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon almond extract
1 cup coconut
1/2 cup green and red maraschino cherry, halved
1 cup pecan halves

Steps:

  • Set oven to 350 degrees.
  • Grease a 9" x 13" baking pan.
  • In a bowl, mix together the first 5 ingredients.
  • Cut in the cold butter with a pastry blender until crumbly.
  • Press mixture into the prepared baking pan.
  • Bake for 8-9 minutes (don't overbake); remove and cool.
  • Lower the oven temperature to 325 degrees.
  • In a bowl, combine all topping ingredients; mix well.
  • Spread topping over the cooled base.
  • Sprinkle with pecan halves over top.
  • Return to oven; bake for 30 minutes longer.
  • Cool, cut into squares.

3/4 cup Crisco, melted
1/2 cup butter, melted
8 egg whites
2 1/4 cups sugar
2 teaspoons salt
2 teaspoons vanilla
2 1/2 cups flour, sifted
1 1/2 cups pecans, chopped
1 1/2 cups candied cherries, chopped

Steps:

  • Beat egg whites until frothy.
  • Add sugar, salt, and vanilla; beat until mixture forms soft peaks.
  • Add flour and blend well.
  • Mix Crisco and butter until smooth.
  • Fold in pecans and cherries.
  • Pour into two greased 9x9 inch pans. (or you can use muffin or mini-muffin pans).
  • Bake for 40 min at 350 degrees, then let cool.
  • Cut into bars.
  • *Holiday version: use 1 jar each of red and green candied cherries.

¼ cup balsamic vinegar
3 tablespoons cherry preserves
½ cup extra-virgin olive oil
salt and ground black pepper to taste
1 (10 ounce) package mixed salad greens
2 medium fresh pears, peeled and diced
½ cup dried cherries
½ cup chopped pecans
¼ medium red onion, finely chopped
⅓ cup crumbled Gorgonzola cheese

Steps:

  • Combine balsamic vinegar and cherry preserves for vinaigrette in a small bowl. Gradually whisk in olive oil until emulsified. Season with salt and pepper.
  • Toss mixed greens, pears, cherries, pecans, red onion, and vinaigrette in a large salad bowl.
  • Evenly distribute salad among four individual salad bowls and top with Gorgonzola cheese.

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
3/4 teaspoon almond extract
2-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2-1/2 cups sweetened shredded coconut
3/4 cup chopped almonds or pecans, optional
1 jar (16 ounces) maraschino cherries, drained and halved

Steps:

  • In a large bowl, cream shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extract. Combine flour, baking soda and salt; gradually add to the creamed mixture and mix well. Stir in coconut and nuts if desired. , Drop by rounded teaspoonfuls 2 in. apart onto lightly greased baking sheets. Place a cherry half in the center of each. Bake at 350° for 12-14 minutes or until lightly browned. Remove to wire racks to cool.

1 cup sifted all-purpose flour
1 cup rolled oats
2 cups brown sugar
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, plus
3 tablespoons butter
1 cup maraschino cherry, well drained (reserve 2 tablespoons juice)
1/2 teaspoon almond extract, plus
1/4 teaspoon almond extract
2 tablespoons flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup shredded coconut
2 eggs
1/2 cup pecan halves
2 cups sifted icing sugar

Steps:

  • Heat oven to 350.
  • Mix flour, rolled oats, 1 cup brown sugar, baking soda, and 1/4 teaspoon salt. Add 1/2 cup butter and mix until crumbly, first with a fork, then with fingers. Press mixture into a greased 9x13-inch pan. Bake for 10 minutes.
  • Beat eggs, stir in remaining brown sugar and almond extract. Mix flour, baking powder, and 1/2 teaspoon salt together, then stir into egg mixture. Add coconut and cherries and stir to blend. Pour over first mixture and spread evenly. Sprinkle with pecans. Return to oven and bake 25 minutes, or until lightly browned.
  • Cool and ice with Cherry-Almond Icing. Cut in 1 1/2 x 3" squares, or bars.
  • Cherry Almond Icing:.
  • Blend remaining 3 tablespoons butter and icing sugar. Add reserved cherry juice and 1/4 teaspoon almond extract, using enough juice to make the icing easy to spread. Stir until smooth.

3 cups holiday cookie mix
1 cup coconut
2 teaspoons almond extract
1 egg
1 egg white
1 tablespoon water
1 -1 1/2 cup coconut
maraschino cherry, halved

Steps:

  • Dip measuring cup into mix and level off;allow to come to room temperature.
  • Heat oven to 375°F.
  • Grease cookie sheets.
  • In a large bowl,combine cookie mix,1 cup coconut,almond extract and egg at low speed until well mixed and dough forms.
  • In a small bowl,beat egg white and water until foamy.
  • Shape dough into 1-inch balls.
  • Dip in egg-white mixture;roll in coconut.
  • Place 2 inches apart on greased cookie sheets.
  • Place cherry in center,pressing down lightly.
  • Bake at 375 F for 11-14 minutes or until edges are light golden brown.
  • These overbake easily so keep an eye on them.

I want to pass the book on to my swap partner in the Used Media Swap. I'm posting the recipe here even though I have not made the chews yet. I hope to make them soon but, if you make them first, please post a review & let us know how good they are. The author did not indicate how many servings this recipe makes so I guessed. I will update when I know for sure.
