Cherry pie filling is lovingly sandwiched between 2 layers of crunchy oaty goodness. Substitute apple pie filling and sprinkle a little extra cinnamon over the top if you like.

1 cup rolled oats
1 cup all-purpose flour
¾ cup brown sugar
½ teaspoon ground cinnamon
½ cup butter
1 (21 ounce) can cherry pie filling

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.)
  • In a medium bowl, combine the rolled oats, flour, brown sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs.
  • Sprinkle one half of crumb mixture in the bottom of a 9 inch square baking dish. Cover with cherry pie filling. Sprinkle remaining crumb mixture over pie filling.
  • Bake in the preheated oven for 40 minutes, or until topping is golden brown. Serve warm.

2 1/2 to 3 pounds apples (about 6 to 8), such as Gala, Mutsu, or Honeycrisp, fully or partially peeled, cored and cut into 3/4" chunks
Juice of 1/2 lemon
2 tablespoons sugar
1/3 cup dried tart cherries
1 cup old fashioned rolled oats (NOT instant)
1/2 cup all purpose flour
1/4 cup sugar
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 cup neutral flavored oil, such as canola or grapeseed
1/4 cup pure maple syrup
1/4 cup raw chopped pecans

Steps:

  • Preheat the oven to 350 F. Oil a deep 8 x 10-inch (or similarly sized) baking dish.
  • In a large bowl, toss the apples with the lemon juice, sugar, and dried cherries. Transfer to the baking dish.
  • In another bowl, whisk together the oats, flour, sugar, cinnamon, and ginger. Add the oil and maple syrup, and stir until the oat mixture is moistened. Stir in the pecans.
  • Sprinkle the topping evenly over the apples. Bake the crisp in the preheated oven for 45 to 50 minutes, or until the fruit filling is bubbly and the crisp topping is golden brown and crunchy. (Check the crisp after about 30 to 35 minutes-if the topping is getting too brown, cover lightly with foil or parchment paper, then remove the cover for the last few minutes of baking.)
  • Allow to rest for 5 to 10 minutes before serving. Enjoy!

I later experimented & discovered the crisp was perfect with cherry pie filling hiding under it instead of apples. Then came the day I only had 2 1/2 cups of apple slices, but I did have a can of cherry pie...

4 c peeled apple slices
2/3 c brown sugar, packed
1/2 c all-purpose flour
1/2 c oatmeal, uncooked
1/2 c chopped walnuts (optional)
3/4 tsp cinnamon
1/3 c margarine, softened to room temp.
VARIATIONS
1 can(s) cherry pie filling (instead of apples)
OR
29 oz can of sliced peaches, drained
OR 2 1/2 CUPS APPLES & CHERRY PIE FILLING

Steps:

  • 1. Preheat oven to 375 degrees F.
  • 2. Mist an 8 x 8" square pan or dish with cooking spray.
  • 3. Arrange apples (or other fruit) in the pan.
  • 4. Mix all other ingredients together until crumbly & put over the fruit.
  • 5. Bake around 30-35 minutes, until apples are tender & the topping is golden brown and feels crunchy.
  • 6. Serve warm or cold with whipped cream or ice cream.
  • 7. NOTE: Recipe can be easily doubled. Bake in a 13 x 9" pan with the same baking time.

2 cups frozen cherries (may use pitted fresh, sweet or tart)
1/2 cup brown sugar
1 teaspoon quick-cooking tapioca (not whole pearl)
1 1/2 cups rolled oats (or grape-nuts cereal)
1/4 cup unbleached white flour
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1 egg white
1 tablespoon vegetable oil (canola or other)
1 teaspoon pure vanilla extract
2 tablespoons orange juice (or unsweetened apple)

Steps:

  • Preheat oven to 350 degrees.
  • In a bowl, mix together the fruit layer ingredients. Pour the fruit evenly into a non-reactive 10 inch pie pan or 9 inch square baking dish and set aside.
  • In a large bowl, combine the oats, flour, brown sugar, and cinnamon.
  • In a seperate bowl, whisk together the egg white, oil, vanilla, and fruit juice and then stir into the dry ingredients until thoroughly combined.
