I came up with this quick and easy recipe in an effort to change my family's mind about oatmeal. It was a big success, and they frequently request it now.

2 cups rolled oats
3 ½ cups sweetened vanilla almond milk
⅛ teaspoon salt
½ cup dried tart cherries

Steps:

  • Stir together oats, almond milk, and salt in a large microwave-safe bowl. Microwave on High for 5 to 6 minutes, stirring every 2 minutes, until oats are soft and most of the liquid has been absorbed. Stir in cherries.
  • Spoon into bowls and serve while hot.

1 can (21 ounces) cherry pie filling
3/4 cup packed brown sugar
3/4 cups all-purpose flour
3/4 cup old-fashioned oats
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup cold butter, cubed
Whipped cream or ice cream, optional

Steps:

  • Spread pie filling into a greased 9-in. square baking pan. In a bowl, combine the next six ingredients. Cut in butter until the mixture resembles coarse crumbs; sprinkle over filling. Bake at 375° for 35-40 minutes or until golden brown. Serve with whipped cream or ice cream if desired.

1 cup chopped walnuts
1 cup old fashioned oats
1/2 cup unsalted butter, softened
3/4 cup unbleached all-purpose flour
1/2 teaspoon cinnamon
1 (21 ounce) can light cherry pie filling

Steps:

  • Preheat oven to 400°.
  • In large bowl, mix sugar, walnuts, oats, butter and flour.
  • Use fingers until crumbs form; reserve 1 1/2 cups.
  • Press remaining crumbs in bottom of 9-inch square baking dish.
  • Combine cinnamon in cherry filling; spread over crust.
  • Sprinkle remaining crumbs over; press gently.
  • Bake 20-25 minutes or until lightly browned.
  • Cool on rack; cut into squares.

1 cup Old Fashioned Oats, or Quick Cooking Oats
1/8 teaspoon salt
1/4 cup dried cherries
1/2 teaspoon vanilla extract
2 tablespoons cherry jam, or to taste
1/4 cup 1 percent low-fat milk, plus more to taste

Steps:

  • Put water, oats, salt and cherries into a medium sized saucepan. Bring to a boil, reduce the heat and simmer for about 5 minutes for Old Fashioned Oats, or 1 minute for Quick Cooking Oats. Remove from heat. Stir in the vanilla extract and cherry jam. Put into serving bowls and pour 2 tablespoons of milk over each bowl.

1 cup chopped pecans
1/2 cup toasted wheat germ
1/2 cup packed brown sugar

1 cup butter, melted
1/2 cup honey
2 eggs, beaten
1 teaspoon vanilla extract
1 jar (12 ounces) cherry preserves
1/3 cup dried cherries, chopped
1/2 cup sweetened shredded coconut

Steps:

  • In a large bowl, combine the first nine ingredients. In another bowl, combine the butter, honey, eggs and vanilla. Stir into oat mixture until combined. 1 Tbsp. water
1 lb. fresh dark sweet cherries, pitted, cut in half
1 Tbsp. fresh lemon juice
1/2 cup granulated sugar, divided
1 cup flour
1 cup old-fashioned or quick-cooking oats
3/4 cup packed brown sugar
1/2 tsp. baking soda
3/4 cup cold butter, cut up
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 egg

Steps:

  • Heat oven to 350ºF.
  • Line 9-inch square pan with foil, with ends of foil extending over sides; spray with cooking spray. Mix cornstarch and water until blended.
  • Bring cherries, lemon juice and 1/4 cup granulated sugar to boil in medium saucepan on medium-high heat, stirring frequently; simmer on medium heat 5 min. or until cherries are softened, stirring occasionally. Add cornstarch mixture; cook and stir 1 to 2 min. or until thickened. Remove from heat.
  • Mix flour, oats, brown sugar and baking soda in large bowl. Cut in butter with pastry blender or 2 knives until mixture forms coarse crumbs; press half onto bottom of prepared pan. Bake 10 min. Meanwhile, mix cream cheese, egg and remaining granulated sugar until blended.
  • Pour cream cheese mixture over crust; top with cherry mixture and remaining crumb mixture.
  • Bake 25 to 30 min. or until golden brown. Cool completely. Use foil handles to lift dessert from pan before cutting into bars.
