CHERRY-CHIP OAT SCONES

Cherry-Chip Oat Scones image

My family loves scones and anything with oatmeal. I started with my basic scone recipe and added oat flour to increase the oat taste and texture, then included special ingredients you can find in every bite. Look for add-ins that harmonize with the mellow flavor of oats. -Amy Brnger, Portsmouth, New Hampshire

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes     Bread Recipes

Yield Makes 8 biscuits

Number Of Ingredients 12

1 1/4 cups all-purpose flour, plus more for work surface
1 cup old-fashioned rolled oats
1/4 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon coarse salt
1/2 cup (1 stick) unsalted butter, cut into small pieces and chilled
1/2 cup dried cherries
1 large egg, beaten
1/4 cup buttermilk, plus more for brushing
1/2 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract
Fine sanding sugar, for sprinkling

Steps:

  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper; set aside.
  • In a medium bowl, whisk together flour, oats, granulated sugar, baking powder, and salt. Using a pastry cutter or your fingers, cut butter into oat mixture until the mixture resembles a coarse meal; whisk in dried cherries. In another medium bowl, mix together egg, buttermilk, and vanilla and almond extracts until well combined. Add egg mixture to flour mixture; mix until well combined.
  • Turn out dough onto a lightly floured work surface; roll out to a 1-inch-thick 8-by-6-inch rectangle. Cut biscuits into eight 2-by-3-inch rectangles using a sharp knife; transfer biscuits to prepared baking sheet. Brush biscuits with buttermilk and sprinkle with sanding sugar.
  • Transfer biscuits to oven and bake until tops are lightly browned, 18 to 20 minutes. Transfer to a wire rack and let cool slightly before serving.

FRESH CHERRY SCONE RECIPE

Fresh Cherry Scone Recipe image

Yield 8 scones

Number Of Ingredients 9

1 cup fresh cherries, measure after pitting and cutting in half or quarters
1 cup flour (plus about 1/4 cup additional flour)
1/4 cup brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup cold unsalted butter
1/4 cup heavy cream
1 teaspoon vanilla extract
1 egg

Steps:

  • Preheat oven to 400 degrees
  • Blend flour, brown sugar, baking powder, and salt.
  • Cut in cold butter with pastry cutter until mixture resembles coarse crumbs.
  • Add in heavy cream, egg, vanilla extract. Mix until all combined.
  • Gently stir in cherries until they are barely incorporated.
  • Darker cherries that are overmixed with turn the dough blueish, so just fold them.
  • If your cherries are soft and not firm, freeze them for 10 minutes so they mix easier.
  • Place dough into a greased cast iron scone pan (the scones don't get as crisp in the cast iron but they taste great) I have pre-heated my cast iron and tried it also and the timing was about 15 minutes, but they still didn't get a crisp edge.
  • Alternatively, I like to GENTLY knead out on the dough on a lightly floured surface. Use extra flour if dough is sticky.
  • Knead may be to strong of a word for these fruit scones, GENTLY FOLD the dough over twice to combine it on a well-floured surface.
  • Bake scones on a parchment lined baking sheet for 20 minutes at 400 degrees.

PUMPKIN, GINGER, & OAT SCONES RECIPE

Pumpkin, Ginger, & Oat Scones Recipe image

These easy fall-flavored oat scones with pumpkin and ginger have a soft and chewy finish. Whip up a spiced batch in just under an hour!

Provided by Recipes.net Team

Categories     Breads & Doughs

Time 35m

Yield 6

Number Of Ingredients 10

2¼ cups add more for dusting all-purpose flour
½ cup add more for sprinkling rolled oats
½ cup granulated sugar
1 tbsp baking powder
1 tsp salt
2 tsp pumpkin pie spice
½ cup at room temperature unsalted butter
¾ cup finely chopped crystallized ginger
¾ cup pumpkin purée
2 eggs

Steps:

  • Preheat your oven to 400 degrees F then line a baking sheet with parchment paper and dust with flour.
  • In a large bowl, whisk the flour, oats, sugar, baking powder, salt, and spice.
  • Add the butter and toss to coat with the dry ingredients. Using your fingers, mix the butter until coarse crumbs form.
  • Add the ginger and toss until evenly coated. Set aside.
  • In a medium bowl, whisk the pumpkin and eggs until smooth. Add to the dry ingredients and mix until no dry bits remain and the mixture forms a mass.
  • Divide the dough into two even pieces in the bowl and place each piece onto the prepared sheet on opposite sides.
  • Dampen your hands and press each piece into ¾-inch thick rounds, or about 6-inches in diameter. Refrigerate or freeze until stiff.
  • Take out the firm dough and cut each round into 6 even wedges using a sharp knife or bench scraper. Nudge the wedges about 1 inch apart.
  • Sprinkle the tops with oats.
  • Bake for roughly 15 minutes or until golden brown and firm when gently pressed.
  • Cool on the pan on a rack for 5 minutes. Serve warm or at room temperature!
  • To see if they're cooked through, tear one open immediately to make sure there's no wetness in the center. If there is, return the pan to the oven for a few minutes then serve once done!
