Cherry Muffins image

Learn how to make these cherry muffins with the best jerte picota cherries available. Expect a soft, moist center that will leave you coming for doubles.

250g (8oz) plain flour, sifted
10ml (2 tsp) baking powder, sifted
2.5ml (½ tsp) salt
100g (3oz) butter
100g (3oz) caster sugar
5ml (1 tsp) vanilla extract
2 eggs, whisked
125ml (½ cup) milk
300g (10oz) Picota cherries, washed, pitted and halved
30ml (2 tbsp) flaked almonds

Steps:

  • Preheat the oven to 200°C/180°C fan/390°F/gas 6.
  • Line a muffin tray with paper muffin cases. Alternatively, grease the muffins tin.
  • Mix the flour, baking powder and salt in a bowl and set aside.
  • With the help of a mixer, cream the butter and sugar together until fluffy.
  • Add the vanilla and egg until well incorporated with the butter mixture.
  • Add the flour mixture slowly to the wet ingredients, alternating with splashes of milk, until everything is incorporated and smooth.
  • Fold in the cherries.
  • Divide the batter evenly between the muffin tin holes and sprinkle almonds on top of each one.
  • Bake for 20 mins or until golden brown and cooked through.
  • Wait for them to cool down a little and enjoy with lashes of butter!

MARY'S CHERRY CAKE

A lovely cherry sponge cake with a little extra texture from the ground almonds. Dusting the cherries with flour helps stop them sinking to the bottom of the cake. Equipment and preparation: for this recipe you will need a 23cm/9in savarin mould or a bundt tin (alternatively use a 20cm/8in round cake tin).

200g/7oz glacé cherries
225g/8oz self-raising flour
175g/6oz softened butter, plus extra for greasing
175g/6oz caster sugar
1 lemon, finely grated zest only
50g/1¾oz ground almonds
3 large free-range eggs
175g/6oz icing sugar
1 lemon, juice only
15g/½oz flaked almonds, toasted
5 glacé cherries, quartered

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4. Grease a 23cm/9in bundt tin or savarin mould with butter.
  • Cut the cherries into quarters. Set aside five of the quartered cherries for the decoration later. Put the rest of the quartered cherries in a sieve and rinse under running water. Drain well then dry thoroughly on kitchen paper and toss in two tablespoons of the flour.
  • Measure all the remaining ingredients into a large bowl and beat well for two minutes to mix thoroughly. Lightly fold in the cherries. Turn into the prepared tin.
  • Bake in the preheated oven for 35-40 minutes until well risen, golden-brown and a skewer inserted into the centre comes out clean. Leave to cool in the tin for 10 minutes then turn out and cool on a wire rack.
  • For the icing, mix the icing sugar together with the lemon juice to a thick paste. Drizzle over the cooled cake using the back of a spoon, sprinkle over the toasted almonds and reserved cherries.

1 ½ cups all-purpose flour
¾ cup white sugar
2 teaspoons baking powder
½ teaspoon salt
⅓ cup vegetable oil
⅓ cup milk
1 egg
½ teaspoon almond extract
1 cup fresh pitted and quartered sweet cherries
1 tablespoon white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a muffin tin with paper liners.
  • Mix flour, 3/4 cup sugar, baking powder, and salt together in a bowl.
  • Whisk oil, milk, egg, and almond extract together in a small bowl. Pour into flour mixture; stir gently until incorporated. Fold cherries into the batter.
  • Spoon batter into the muffin cups, filling each 2/3 of the way full. Sprinkle 1 tablespoon sugar on top.
  • Bake muffins in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Transfer to a wire rack to cool.

These Passover muffins are great for snacking or for breakfast. They can be made ahead of time and stored in the freezer. I've made the mini-muffins and was able to get 35 muffins from a batch. The mini-muffins do not rise too much while cooking. I also did not put on the topping as I made them for breakfast. This recipe is from the 'I Can't Believe It's Kosher' cookbook.

1/3 cup margarine or 1/3 cup butter
1 cup sugar
3 eggs
1/2 teaspoon vanilla
1/2 cup matzo meal, unsifted
1/4 teaspoon salt
1/4 cup potato starch
1 cup frozen blueberries or 1 cup pitted cherries, drained
1/2 cup sugar (optional)
2 -3 tablespoons cinnamon (optional)
fresh lemon rind (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Cream margarine and 1 scant cup of sugar.
  • Add eggs, one at a time, beating after each one.
  • Add vanilla, matzo cake meal, salt and potato starch.
  • Fold in blueberries or cherries.
  • Spoon/pour into muffin pan with paper fillers.
  • If desired, top with 1/2 cup of sugar mixed with cinnamon or lemon rind.
  • Bake for 45 minutes.
  • Note: mini-muffins can also be made from this batter.
  • The baking time is 15-20 minutes.

1 cup flour
1/2 cup desiccated coconut
1/2 cup caster sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 egg (lightly beaten)
1/2 cup milk
1/2 teaspoon vanilla extract
1/4 cup canola oil
1/2 cup glace cherries
1 tablespoon desiccated coconut
1 teaspoon granulated sugar
1 teaspoon brown sugar

Steps:

  • Preheat oven to 190C/375F/gas 5.
  • Sift into a large bowl flour, baking powder, salt and caster sugar finally adding coconut.
  • Cut cherries into pieces.
  • In separate bowl whisk egg, milk, vanilla extract and oil until smooth.
  • Make a well in centre of dry ingredients and add egg mixture, stir until just combined.
  • Add cherries being careful not to overwork the batter.
  • Spoon into greased or paper lined muffin cups 3/4 full.
  • Topping. Mix remaining sugar and coconut, sprinkle evenly on top of muffins.
  • Bake at 375 (Gas 5) for 20-25 minutes.
