Homemade Chocolate Pudding with Espresso Whipped Cream image

Homemade Chocolate Pudding is SO incredibly easy to make without a box mix! This dark chocolate pudding dessert a deep and rich treat that's topped with pillowy espresso whipped cream.

¼ cup cornstarch
A scant ½ cup or heaping 1/3 cup granulated sugar
⅛ tsp table salt
3 cups whole milk
6 oz semi- or bittersweet chocolate, finely chopped
1 tsp pure vanilla extract
¾ cup very cold whipping/heavy cream
1 tsp espresso powder
1 tsp pure vanilla extract
2 tbsp powdered sugar

Steps:

  • To make the pudding: Whisk cornstarch, sugar, and salt together in a medium saucepan.
  • Pour 1 cup milk slowly into the dry ingredients while you quickly whisk everything together to avoid creating any lumps, then gradually whisk in the remaining milk. Heat the milk over medium, stirring occasionally, until the milk begins to simmer and then stir constantly with a rubber spatula. When the milk thickens and just coats the spatula, take the pan off the heat. Quickly stir in the chocolate and mix until melted and thoroughly combined. Stir in the vanilla extract.
  • At this point, you can push the pudding through a strainer if you wish to remove lumps. Divide the pudding evenly between small bowls or one large bowl for community serving. If you are a stickler about a skin on pudding, press some plastic wrap against the pudding and wrap the bowl(s). I didn't find that this pudding had much of a skin so I didn't miss not wrapping them up first. Chill for at least 2 hours before serving.
  • To make the espresso whipped cream: Chill a mixing bowl and whisk attachment for 30 minutes. Combine the cream, espresso powder, and vanilla in the cold bowl and beat on low speed for 30 seconds, then gradually increase the speed up to high, continuing to beat for another 30 seconds. Stir in the powdered sugar and then continue to beat the cream on high speed until stiff peaks form, about 30 seconds to 1 minute. Dollop the whipped cream on top of the pudding.

1/2 cup whole milk

1/4 teaspoon instant espresso powder
1 cup bittersweet chocolate chips
3 large egg whites
1 pinch salt
1/4 cup mascarpone cheese, room temperature
1/2 cup whipping cream
2 tablespoons powdered sugar
1/4 teaspoon vanilla extract

Steps:

  • For the mousse:
  • In a small saucepan over medium heat, stir milk and sugar together and add the espresso powder, cook until the milk is hot but not boiling. Place the chocolate chips in blender.
  • Pour the hot milk over the chips. Run the blender on high until well combined, a few seconds. Add the egg whites and run the blender on high until light, about 1 minute.
  • Transfer the mousse to 4 small serving cups.
  • Cover with plastic wrap and refrigerate until firm or about 3 hours.
  • For the cream:.
  • Hold off on making the cream until the mousse is set so that you can add it on at the last minute before serving. Or store it in the fridge.
  • Mix the cream, marscarpone,vanilla and powdered sugar and whip together with a mixer until light and fluffy.

Chocolate lovers will go crazy over this flourless chocolate cake! It's rich and decadent while not being overly sweet. Who needs flour anyway?!

11 tbsp unsalted butter ((room temperature))
2 cups dark chocolate, chopped ((65% cocoa or higher))
5 large eggs, separated ((room temperature))
1/2 cup dutch processed cocoa powder
3/4 cup granulated sugar
1/4 tsp kosher salt
2 tsp espresso powder
2 tsp vanilla extract
1 tsp espresso powder
1 tsp warm water
1 cup heavy whipping cream
3 tbsp powdered sugar
1 tbsp Dutch processed cocoa powder

Steps:

  • Preheat oven to 300°F. Spray a 9-inch round springform pan with non-stick cooking spray and line with parchment paper.
  • In a small saucepan over low heat, melt the butter and chopped chocolate, whisking until completely melted and smooth. Remove from heat and transfer to a large bowl. Set aside to cool.
  • In the bowl of a stand mixer fitted with the whisk attachment, or in a large bowl with a hand mixer, beat egg whites on medium speed just until foamy, about 30 seconds.
  • While continuing to beat on medium-high speed, slowly add in the sugar. Eggs will begin to become glossy and bright white.
  • Continue to beat on medium-high until stiff peaks form on the end of the whisk. The meringue should be stiff and not drip off of the whisk attachment. This took me about 5-7 minutes of mixing.
  • Add the egg yolks and vanilla to the slightly cooled chocolate mixture and whisk together until smooth.
  • Sift the dutch processed cocoa powder and espresso powder into the chocolate and egg mixture. Add the salt and whisk until combined.
  • Add ⅓ of the egg whites to the chocolate mixture and gently fold using a large spatula. Continue to add the egg white meringue to the chocolate mixture and gently fold until no streaks remain. Be sure not to over mix because you will lose the airy texture of the egg whites and will have a flat cake!
  • Pour mixture into the prepared pan, smoothing top with an offset spatula.
  • Bake in on the center rack for 30-40 minutes, depending on how powerful your oven is. Watch closely and remove the cake when it is set on the edges and in the middle. You will not want the cake to be jiggly in the middle. Do not overbake or the cake will be dry!
  • Remove from oven and cool on a wire rack for 30 minutes to 1 hour.
  • Remove the springform pan and continue to cool on a wire rack until room temperature. Sometimes I like to stick the cake in the fridge before topping with whipped cream and slicing because it helps the cake stay together better when cutting it!
  • Top with Espresso Whipped Cream (instructions below).
  • Using a whisk, mix together the espresso powder and warm water. Set aside to cool for a few minutes.
  • In the bowl of a stand mixer fitted with the whisk attachment, or in a medium bowl with a hand mixer, whip the heavy cream, sugar, cocoa powder, and espresso mixture on medium-high speed until medium peaks form, about 3-4 minutes.
  • Spread onto your cooled cake and slice and serve!

I use General Foods International Coffees, Cuppuccino flavor for this in place of the instant espress powder. If you are using espresso to make this, make certain that you use only the instant espresso powder! This can be made a couple hours in advance. This will work without chilling the bowl and beaters but the cream will beat up better if you chill them first. You will LOVE THIS!

Steps:

  • Mix the chocolate cookie crumbs, melted butter and coffee until combined, then press down on the bottom of a 7 - 8 inch (17 - 20 cm) springform cake pan (or line a regular cake pan with plastic wrap). Place in refrigerator to chill.
  • In a medium bowl beat together the cream cheese, sugar and coffee until creamy. Set aside.
  • In a large bowl beat the cold cream until stiff peaks appear, set aside.
  • In a small pot add the milk and sprinkle the gelatine on top, let stand one minute, then place the pot on low heat and heat just until the gelatine has dissolved, stirring often (1-2 minutes), do not boil, then immediately remove from heat and add a heaping tablespoon of the cream cheese mixture to the gelatine mixture (this cools it down) and stir gently to combine, then fold the gelatine mixture into remaining cream cheese mixture.
  • Gently fold the cream cheese mixture into the whipped cream until combined.
  • Remove the cookie base from the fridge, spoon the cheesecake filling evenly on top of the base, cover with plastic wrap and refrigerate 4-5 hours or even better overnight. Before serving sprinkle with chocolate shavings or cocoa. Enjoy!

  • Combine 1 teaspoon instant espresso powder and 1 teaspoon hot water in bowl; set aside.
  • Beat chilled whipping cream and 1/4 cup sugar in chilled bowl at high speed, scraping bowl often, until stiff peaks form. Stir in espresso mixture.
  • Combine powdered sugar and edible glitter in bowl.
  • Remove sides from springform pan; place cake onto serving plate. Place snowflake stencil on top of cake (see Recipe Tips). Lightly dust top of cake with powdered sugar mixture. Carefully remove stencil.
  • Serve with espresso whipped cream.

  • Place flour, sugar and salt into a large bowl. Cut butter into chunks, and add to the flour. Toss lightly to coat. Working quickly, using a pastry blender or your fingers, cut the butter into the flour mixture until there are only large pea-sized chunks left. You want a few lumps of butter remaining to keep the pastry nice and tender.
  • Combine ice, water and cider vinegar in a bowl. Sprinkle a few tablespoons of the ice water into the flour and butter mixture, and using a stiff spatula or your hands, mix in well. Continue adding water a tablespoon at a time ( I normally need about 8-10 tbsp) until you have a dough that holds together well, but is not too wet. Squeeze together with your fingertips to make a homogenous dough. Shape into two discs, and wrap in plastic wrap. Rest in the fridge for at least two hours, or preferably overnight. (See notes for rolling out dough during resting period)
  • Once the dough has rested, unwrap one disc and place on a lightly floured surface. Roll out to 1/4” (6mm) in thickness, turning the dough 45˚ often as you are rolling to keep it even. You want the circle to be slightly larger than your pie tin. Transfer to a 9” pie tin, and arrange to ensure that the dough is well settled.
  • Trim the dough using scissors or a sharp knife, leaving about one inch excess around the edges. Gently tuck the dough under and onto itself, to give you a neat folded edge. Chill in the fridge for 15-20 minutes, then remove from the fridge and crimp as desired. Dock all over with the tines of a fork, then chill for a further 30 minutes, or freeze for 20 minutes or until solid.
