CHERRY AMARETTO CRUNCH ICE CREAM
Cherries and almonds are such a classic combination and when they're blended into ice cream and doused with amaretto, it's even better!

Steps:
- Roughly chop the dried cherries. Combine the cherries and amaretto in a small bowl and set aside for one hour to plump.
- In a large bowl combine the sugar and eggs. Beat for 2-3 minutes until thick and pale yellow. Beat in the flour.
- In a medium saucepan, heat the half and half to a simmer - do not boil. With the beaters on a medium speed, add the hot half and half into the egg mixture in a steady stream. Beat until combined. Pour the egg mixture back into the saucepan and heat over medium heat, stirring constantly until mixture thickens. Pour the mixture through a strainer into a large clean bowl. Stir in the heavy cream, cherries, amaretto and almond extract. Cover with plastic wrap and refrigerate until well chilled, at least two hours.
- Preheat oven to 350 degrees. Lay the almonds in a single layer on a baking sheet. Bake for 6-7 minutes until lightly browned. Set aside and cool.
- Stir the chilled custard then freeze according the the instructions on your ice cream maker. Just before the ice cream is finished, add the almonds and continue to churn until thoroughly combined. Ice cream will be soft, but ready to eat. For firmer ice cream, transfer it to a freezer safe container and freeze for 2 hours.

CHERRY-CHOCOLATE ICE CREAM

- Put the cherries, 2 tablespoons sugar and the rum in a medium saucepan and cook over medium-high heat until syrupy, about 20 minutes. Remove from the heat and let cool, then refrigerate until cold, at least 2 hours.
- Meanwhile, heat the milk and the remaining 1/2 cup sugar in a saucepan over medium-low heat, whisking to dissolve the sugar. Whisk the egg yolks in a small bowl. Gradually whisk about 1/2 cup of the warm milk mixture into the eggs, then whisk the egg mixture into the saucepan. Cook, stirring constantly, until the mixture coats a spoon and registers 168 degrees F on a candy thermometer, about 15 minutes. Remove from the heat; add the semisweet and unsweetened chocolate and the butter and set aside until the chocolate melts, about 5 minutes.
- Transfer the chocolate mixture to a blender and puree until smooth. Pour into a large bowl and stir in the heavy cream and vanilla. Refrigerate until chilled, at least 2 hours or overnight.
- Churn the chilled chocolate mixture in an ice cream maker. Strain the cherry mixture, reserving the syrup. When the ice cream is very thick, add the cherries and continue churning until incorporated. Transfer to a freezer-safe container. Drizzle in the reserved cherry syrup and swirl with a spoon. Cover and freeze until firm, at least 4 hours.
CHERRY NUT CRUNCH
HEAVEN!!! Wonderful nutty crunch with juicy cherry filling. This cherry dish doesn't last long in my house!! Serve warm with ice cream. Easy and quick and great for transport to a potluck.

- Combine brown sugar, flour, and oats with butter until crumbly.
- Sprinkle one-half of crumb mixture in bottom of a 9 inch square baking dish. Pour cherry pie filling over mixture.
- Sprinkle with remaining crumb mixture over top of cherry pie filling. Sprinkle with pecans.
- Bake in a 350 degree oven for 25-30 minutes.
- Great served with ice cream!

CHERRY CRUNCH
Cherry pie filling is lovingly sandwiched between 2 layers of crunchy oaty goodness. Substitute apple pie filling and sprinkle a little extra cinnamon over the top if you like.
