4 cups pitted sour cherries
1 ½ cups white sugar
4 tablespoons all-purpose flour
1 ½ cups all-purpose flour
1 cup old-fashioned oats
1 cup brown sugar
½ cup butter
½ cup shortening

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, combine cherries, 1 1/2 cups white sugar, and 4 tablespoons flour. Pour into 9x13 inch baking dish. In a medium bowl, combine 1 1/2 cups flour, oats, and brown sugar. Cut in butter and shortening until crumbly. Sprinkle over cherries.
  • Bake in preheated oven for 45 to 50 minutes, or until topping is golden brown.

Use summer cherries to make this easy oat-topped crumble. Perfect with a scoop of vanilla ice cream, it makes a superb summertime dessert

1kg fresh cherries , pitted
50g golden caster sugar
1 lemon , juiced
½ tsp vanilla extract
150g plain flour
100g cold butter
½ tsp salt
70g soft brown sugar
100g rolled oats
40g flaked almonds
ice cream , to serve

Steps:

  • Tip the cherries into a medium-sized ovenproof dish (around 28cm) and mix with the sugar, lemon and vanilla. Set aside.
  • Heat the oven to 200C/180C fan/gas 4. Tip the flour and butter into a mixing bowl and rub together with your fingertips to create a fine, breadcrumb-like mixture. Stir through the salt, brown sugar, oats and most of the almonds. Tip over the cherry mixture, then top with the remaining almonds.
  • Bake the crumble in the centre of the oven for 30-35 mins or until the topping is golden brown. Serve warm with vanilla ice cream.

4 cups fresh sweet cherries , pitted
3/4 cup water
3/4 cup sugar
2 1/2 tablespoons cornstarch
For the Crumble Topping
4 tablespoons butter
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/2 cup all-purpose flour
1/2 cup walnuts or pecans, finely chopped

Steps:

  • Gather the ingredients.
  • Preheat oven to 375 F. Lightly spray 4 (7- to 8-ounce) ramekins or 5 to 6 (5- or 6-ounce) ramekins or custard cups with cooking spray. Alternatively, lightly butter bottoms and sides.
  • Combine cherries, water, sugar, and cornstarch in a medium saucepan and stir to blend. Place pan over medium heat and bring to a simmer.
  • Reduce heat and continue simmering, uncovered, for 10 minutes, stirring frequently.
  • Divide cherry mixture among ramekins.
  • Combine topping ingredients in a medium bowl.
  • Sprinkle topping evenly over each filled ramekin.
  • Put ramekins in oven with a baking sheet on rack below to catch drips. Bake for 25 to 30 minutes, or until topping is browned and filling is bubbly.

180g salted butter , softened, plus extra for the tin
220g golden caster sugar
3 large eggs , lightly beaten
250g self-raising flour
½ tsp baking powder
50g ground almonds
80g soured cream
300g fresh cherries , stoned and halved
45g plain flour
35g cold salted butter , cubed
20g golden caster sugar

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter the base of a deep 20cm loose-bottomed cake tin and line with baking parchment.
  • To make the crumble topping, put the flour and butter in a bowl and rub together with your fingertips until you have a coarse, crumbly texture. Stir through the sugar, then transfer to the fridge.
  • Beat the butter and sugar with an electric whisk for 5 mins until light and fluffy. Gradually whisk in the eggs, beating well after each addition. Fold in the flour, baking powder, ground almonds and soured cream, then most of the cherries, reserving a handful to garnish. Spoon the mixture into the prepared tin and smooth over the top with a spatula. Dot with the reserved cherries, then bake in the centre of the oven for 30 mins.
  • Scatter over the crumble topping, then return the cake to the oven and bake for a further 30-50 mins until a skewer inserted in the middle comes out clean. Remove from the oven and leave to cool in the tin.
  • Slice the cake into thick wedges and serve with custard or ice cream, if you like. Store in a tin or airtight container for up to three days.

The very first time that I made Cherry Crisp, my brother happened to be visiting. He is an ice cream lover-but he passed up the scoops of vanilla that he tops most desserts with so he could taste the cherries better! Wheat, soybeans and milo are the main crops on our farm. We also have three small cherry trees. I apportion all of that harvest for this recipe. My husband's is the manager of a coop. I work part-time as a church secretary...teach piano in our home...and enjoy making clothes for myself and our 3-year-old daughter. Cross-stitch is one of my favorite hobbies.

1/4 teaspoon salt
1/2 cup packed brown sugar
1 cup all-purpose flour
1/2 cup cold butter, cubed
FILLING:
1 cup sugar
1/4 cup cornstarch
1 cup cherry juice blend
4 cups pitted tart red cherries
Few drops red food coloring, optional
TOPPING:
1-1/2 cups quick-cooking rolled oats
1/2 cup packed brown sugar
1/4 cup all-purpose flour
5 tablespoons butter, melted

Steps:

  • In a bowl, combine salt, sugar and flour; cut in butter. Press into a greased 2-qt. or 11x7-in. baking dish. Bake at 350° for 15 minutes. , For filling, combine sugar and cornstarch in a saucepan. Stir in juice. Cook over medium heat until thick, stirring constantly. Fold in cherries and food coloring if desired. Pour over baked crust. Combine all topping ingredients; sprinkle over filling. , Bake for 20-25 minutes or until golden brown and bubbly around edges.

1/2 cup granola cereal
1/3 cup butter, cold
3/4 teaspoon cinnamon
1/2 teaspoon ground nutmeg

Steps:

  • Preheat oven to 375 degrees. In a large bowl, gently toss first 5 ingredients together. Place in a greased casserole dish or 8 inch square pan.
  • In another bowl, mix the rest of the ingredients, using a pastry blender or fork. The mixture should resemble course crumbs. Spread mixture over pie filling. Bake for 30 minutes or until brown.
  • Serve warm with vanilla ice cream. You can substitute canned cherry pie for the homemade cherry filling if you want to, but why?
