CHERRY CREAM CHEESE COOKIES

These cherry-topped Cream Cheese Cookies are one of my family's favorite Christmas cookies! We've been making these festive, melt-in-your mouth cookies for as long as I can remember.

1 cup butter (softened)
3 ounces cream cheese (softened)
1 cup granulated sugar
1 large egg
1 teaspoon almond extract
2 ½ cups all purpose flour
½ teaspoon salt
¼ teaspoon baking soda
1 cup finely chopped walnuts
Maraschino cherries (halved)

Steps:

  • Using an electric mixer, cream butter and cream cheese together. Add sugar, egg, and almond extract and mix until well combined. Sift dry ingredients together over the mixer bowl; mix on lowest speed until combined.
  • Chill dough for at least 2 hours.
  • Preheat oven to 350 degrees F. Line baking sheets with parchment paper.
  • Form dough into 1 inch balls. (Cookies turn out best when the dough balls are tiny.) Roll each ball in the chopped walnuts and place on a parchment-lined baking sheet. Press a half cherry into each cookie.
  • Bake for 9-12 minutes, until barely set and lightly golden on the bottom. Be careful not to over-bake.

These cookies are delicate when made with a press, or hardy when dropped by spoonfuls. I fill centers of press cookies with preserves or a chocolate chip for added variety.

1 cup butter, softened
1 (3 ounce) package cream cheese, softened
1 cup white sugar
1 egg yolk
½ teaspoon vanilla extract
2 ½ cups all-purpose flour

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease cookie sheets.
  • In a large bowl, cream together butter, cream cheese, and sugar until light and fluffy. Beat in egg yolk and vanilla. Stir in flour until well blended. Drop dough by spoonfuls or use a cookie press to place onto prepared cookie sheets. If using floral cookie press design, make an indentation in the center with a thimble, fill with preserves, or press candy into center.
  • Bake for 15 minutes in preheated oven. Cookies should be pale.

1/4 cup confectioners' sugar
1/8 to 1/4 teaspoon almond or vanilla extract
2 individual graham cracker shells
1/4 cup cherry pie filling

Steps:

  • In a small bowl, beat the cream cheese, sugar and extract until smooth. Spoon into shells. Top with pie filling. Refrigerate until serving.

My baking mojo hasn't just kicked in, it's stuck in overdrive :) This recipe was found at mangiabenepasta.com - a little labor-intensive, but they will be beautiful in Christmas cookie baskets. Chilling time is not included in prep or baking times.

1 cup flour
4 ounces cream cheese, cut into cubes
1/2 cup unsalted butter, cut into cubes
1/2 cup apricot jam
1 cup sweetened flaked coconut
1 cup dried cherries

Steps:

  • In a food processor or electric mixer, combine the flour, cream cheese, and butter.
  • With your hands, gather the dough into a ball, flatten it, and wrap in plastic wrap.
  • Refrigerate for at least 1 hour or up to 24 hours.
  • Preheat oven to 375-degrees F. Butter a baking sheet.
  • Divide the dough into 2 equal pieces.
  • Roll each piece out on a floured surface to a 12x8-inch rectangle.
  • Spread each with 1/4 cup of the jam.
  • Top each with 1/2 cup coconut and 1/2 cup cherries.
  • Starting at the longer end, roll each up jelly-roll style. Seal the seam with your fingers.
  • Cut each roll into 12 slices.
  • Place cookies on prepared sheet.
  • Slightly flatten each cookie so they are of even thickness.
  • Bake 25 minutes or until golden brown. Cool on a wire rack.

1/2 cup maraschino cherry, chopped and drained well
1 large egg
1 1/2 teaspoons almond extract
1 cup sugar
2 1/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda

Steps:

  • Preheat Oven to 375'.
  • In a large bowl, cream together butter and cream cheese until fluffy.
  • Stir in Remaining Ingredients. (dough will be a bit stiff).
  • Drop by rounded tablespoonsful about 1 inch apart onto ungreased cookie sheet.
  • Bake about 8-10 minutes. Watch them closely and don't let them get too brown.
  • Remove to wire rack to cool.
  • Yield is approximate.
