CHERRY CORDIAL COOKIES
One of my dad's favorite candies is chocolate-covered cherry cordials. I decided to re-create the flavor in these cookies. They were a hit with my taste testers! For extra ease, you could prepare the dough ahead and freeze up to 3 months. -Noelle Myers, Grand Forks, North Dakota

Steps:
- Preheat oven to 325 degrees. In a mixing bowl beat butter for 30 seconds on med-high speed. Add powdered sugar and salt beating until combined (scrape sides of bowl). Beat in the cherry liquid and almond extract. Beat in as much flour as you can then use a spoon to mix any remaining flour and the chopped cherries.
- Roll dough into 1 inch balls and place on ungreased cookie sheet about 2 inches apart. Using the bottom of a glass dipped in granulated sugar, flatten the balls until they are about 1/2 inch thick. Bake 14 minutes or until bottoms are light brown. Right away place a chocolate kiss into the center of each cookie then transfer to a wire rack to cool.
CHERRY CHOCOLATE KISS COOKIES - VALENTINE KISSES
These cookies are similar to Peanut Butter Blossoms, but are cherry cookies instead of peanut butter. I like to make them for Valentine's Day-- and call them Valentine Kisses. There are many variations-- you can use make the dough and use white or semi-sweet chocolate chips or use mini-kisses for smaller bite size cookies. The dough can be rolled in plain sugar, or red decorator sugar for an extra festive look.

Steps:
- Beat butter, add sugar and salt. Beat in cherry liquid and almond extract. Beat in flour. Fold in cherries.
- Refrigerate dough for at least 30 minutes (you don't have to, but dough is easier to work with when cold).
- Roll dough into balls, coat in sugar and place on cookie sheet. These cookies will flatten on their own, but I typically put a thumb print in the center to flatten some.
- Bake at 325 degrees for 14 minutes. Let cool on pan for 1-2 minutes.
- Add Hershey Kiss/Hug to center of the cookies. (Hugs melt especially fast, you may want to let the cookies cool a little longer before adding Hugs, but cookies should still be warm so chocolate can melt into the cookie).
- Transfer to wire rack to cool.

Steps:
- Cream butter & sugar, add egg & almond extract.
- Sift dry ingredients together, then add to butter mixture. Mix by hand.
- Take about 1 tablespoon of dough, flatten it in your hand, place a cherry in the center, wrap dough around it, roll in sugar, then place on parchment paper lined cookie sheet. Bake 8- 10 min in 350 oven.
- When cookies are completely cool, I like to drizzle a glaze of frosting over them. I use powdered sugar & juice from the maraschino cherries,& almond extract, but use whatever you like- be creative, or just leave plain. When the cookies come out of the oven you can immediately stick a cherry stem on the top to decorate, which is cute!
