CHERRIES ON A CLOUD
Our Amish friend Naomi Yoder makes this meringue heart topped with cream cheese and pie filling whenever we visit. Her family's farm is a stop on our wagon train vacation. -Judy Herbkersman, Collins, Ohio

Steps:
- Place egg whites in a small bowl; let stand at room temperature for 30 minutes. Add cream of tartar; beat on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved., Spoon meringue onto a parchment-lined baking sheet. Using the back of a spoon, form meringue into a 9-in. circle, building up edges slightly., Bake at 275° for 1-1/2 hours. Turn oven off and do not open door; leave meringue in oven for 1 hour. Remove from the oven; cool completely., In a small bowl, beat the cream cheese, confectioners' sugar and vanilla until smooth. Fold in whipped cream until mixture is well blended. To serve, place meringue on a serving platter; fill with cream cheese mixture and top with pie filling.

CHERRY CLOUD ANGEL FLUFF RECIPE
Steps:
- Tear the angel food cake into small pieces, set aside.
- In a medium-sized bowl combine the powdered sugar and cream cheese, beating until well blended and smooth
- Add the whipped cream and blend until light and fluffy. Fold in 3/4 of the torn cake pieces until completely covered.
- In a Trifle dish or large bowl, spoon a bit of cherry pie filling, add a few pieces of torn angel food cake, top with half of the filling. Spread the layer smooth, Repeat the layers, finishing off with the remaining cherry pie filling. Sprinkle with pecans.
- Chill for at least 2 hours prior to serving.

CHERRY CLOUD DESSERT
A creamy mixture of Neufchatel cheese, powdered sugar and almond extract is spread between layers of angel food cake and topped with cherry pie filling.

Steps:
- Beat Neufchatel, sugar and extract in large bowl with mixer until blended. Gently stir in COOL WHIP.
- Cut cake horizontally into 3 layers. Stack layers on plate, spreading Neufchatel mixture between layers and on top of cake.
- Refrigerate 1 hour. Top with pie filling.

LAYERED CHERRIES ON A CLOUD OR CHERRY TRIFLE
You can use either a homemade angel food cake or a store bought one. Super easy to prepare and the dish always come home licked clean. Works especially well when you need to prepare dessert for a large number of people.

- Tear the angel food cake into 1 inch cubes. Place them in a single layer in a 13x9 inch pan.
- (The pudding amount is 2 small boxes or 1 large US box pudding, either instant or cooked.) Pour the pudding over the cake; top with the cherry pie filling.
- Can also be layered in a trifle bowl or in individual parfait glasses.
- I've never tried it but I bet chocolate pudding would be good too. :).

CHERRY BERRY ON A CLOUD
A light dessert, just right after a big Easter dinner. You need to start two days before you want to serve it, but it doesn't take very long.

Steps:
- Beat egg whites until frothy, slowly add sugar, cream of tarter and salt.
- Pour in greased 9 x 13 pan.
- Bake 60 minutes at 275 degrees.
- Turn off oven and leave in oven overnight.
- Do not peek.
- The next morning make this: Blend the cream cheese, sugar and vanilla.
- Fold in whipped cream and marshmallows.
- Spread on baked meringue.
- Refrigerate 12 hours or overnight.
- Top with cherry pie filling and strawberries.
CHERRY CLOUD TIRAMISU
Moist white cake, dressed with a light & fluffy cream, sweetened just enough to compliment tart fresh cherries. With reduced-sugar cake mix & Splenda brown sugar, it's a diabetic friendly dessert that doesn't look like it at the table. Prep time does not include chilling time. Created for RSC #12.

- Pre-heat oven to 350 degrees. Spray two 8' round cake pans with non-stick cooking spray.
- In mixer bowl, combine cake mix, egg whites, water & oil. Mix on low for 30 seconds, then on medium for 2 minutes. Pour evenly into prepared pans & bake at 350 degrees for 27-32 minutes or til toothpick inserted in center comes out clean. Cool in pans on wire rack.
- Meanwhile, in small bowl or liquid measuring cup, combine hot coffee & Splenda. Set aside to dissolve.
- Slice 2 cups of cherries in half, removing & discarding pit, then chop into 1/2 inch pieces. Set aside.
- In mixer bowl, beat together mascarpone cheese & powdered sugar. Add almond extract & coffee mixture, mixing well. Fold in whipped topping.
- In large glass trifle bowl (or other deep-sided dish), crumble one cake layer into bite-sized pieces & spread over the bottom of the bowl.
- Gently spread half of the mascarpone mixture on top of the cake.
- Sprinkle half of the chopped cherries on top of the mascarpone & top with all of the grated chocolate.
- Crumble second cake layer over everything & gently spread the rest of the mascarpone mixture on top. Refrigerate for 2 hours.
- Slice all but 2 cherries in half, remove & discard pits. Arrange the sliced cherries, cut side down, in a circular pattern around the outside edge of the mascarpone. Put the two whole cherries in center of bowl. Serve & enjoy!

HEAVENLY CHERRY BERRIES ON A CLOUD
An elegant but fairly simple dessert. I got the recipe from an elderly lady at a potluck dinner at our church. She said it's always a big hit every time she makes it and once won 1st place in a local bake off. The prep time is at least 16 hours, so I usually make it a day ahead of when I am going to serve it.

- In a mixing bowl, beat egg whites, cream of tartar and salt until foamy. Gradually add the sugar, beating on high until stiff peaks form(do not underbeat). Spread evenly in a greased 9x13x2" baking pan.bake at 275* 1 hour, turn off oven but do not open door. Let cool in oven overnight (or at least 12 hours)Beat cream cheese, sugar and vanilla until smooth; gently fold in cream and marshmallows. Spread over meringue. Chill for 4 hours. Cut into 16 pieces. Beautiful and light meringue based dessert. Excellent for Valentine's day and Christmas. I often make individual servings using a coffee mug for a pattern. Your guests will think you have slaved for hours.

- Beat cream cheese and 1/2 cup sugar together in a bowl. Stir marshmallows, whipped topping, and vanilla through the cream cheese mixture. Cover bowl with plastic wrap and refrigerate 8 to 12 hours.
- Preheat oven to 250 degrees F (120 degrees C).
- Beat egg whites with cream of tartar in a large bowl; add 1 cup sugar in small amounts into the egg white mixture and keep beating until very stiff. Draw a large circle onto a piece of brown paper or parchment. Fill in the circle with the meringue mixture building up the sides.
