Iana's Pasta con le Sarde image

A traditional Sicilian pasta recipe with a tomato-based sauce, sardines, and fennel. Credit goes to Iana, a special lady who lived near Castello a Mare.

1 tablespoon olive oil
1 bulb fennel - thinly sliced, fronds lightly chopped, stems discarded
1 onion, diced
4 cloves garlic, minced
2 (4.5 ounce) cans sardines packed in oil
⅓ cup raisins
¼ cup pine nuts
1 teaspoon chopped fresh basil
1 teaspoon fennel seeds
salt and ground black pepper to taste
1 pinch red pepper flakes, or to taste
1 (28 ounce) can crushed tomatoes
1 (16 ounce) package spaghetti
2 tablespoons olive oil
2 cloves garlic, or more to taste, minced
1 cup bread crumbs
½ teaspoon chopped fresh basil
1 tablespoon grated Parmesan cheese, or to taste

Steps:

  • Heat olive oil in a saucepan over medium heat. Add fennel bulb, fronds, and onion. Cook until tender, about 5 minutes. Add garlic; cook for 1 minute. Add sardines with oil; stir until crumbled. Stir in raisins, pine nuts, basil, fennel seeds, salt, pepper, and red pepper flakes; cook until toasted. Pour in tomatoes. Let sauce simmer.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Meanwhile, heat oil in another pan over medium heat. Add garlic and saute until fragrant, about 1 minute. Add bread crumbs and basil. Cook, stirring occasionally, until browned, about 3 minutes. Remove from heat.
  • Drain pasta; serve topped with the sauce, seasoned bread crumbs, and Parmesan cheese.

1 (16 ounce) package spaghetti
¾ cup olive oil, divided
6 cloves garlic, minced
2 (4 ounce) cans sardines packed in olive oil, drained
1 cup seasoned bread crumbs
⅓ cup freshly grated Parmesan cheese
¼ cup chopped fresh parsley
1 teaspoon ground black pepper
1 pinch additional Parmesan cheese for serving

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the spaghetti, and cook until al dente, or 8 to 10 minutes. Drain, and rinse under cold water. Toss with 1/4 cup olive oil, cover and keep warm.
  • Place another 1/4 cup olive oil in a skillet, and heat over medium heat. Stir in the garlic, and cook just until golden, 2 to 3 minutes. Add the sardines, and cook 1 minute more. Stir in the bread crumbs and 1/3 cup Parmesan cheese. If necessary to give the mixture a crumbly texture, stir in the remaining 1/4 cup of olive oil. Stir in the parsley and pepper, and remove from the heat. If desired, serve with additional Parmesan cheese.

Steps:

  • For the sauce - Lightly drain the sardines and anchovy fillets and tip them into a food processor. Add the whole tomatoes, capers, chilli, basil leaves and 8 table spoons of olive oil. Blend on high for about 30 seconds or until the mixture is smooth.
  • Heat 1 table spoon of olive oil in a frying pan and lightly fry chopped onions and frozen peas. You are really only softening the onion and heating the peas so this will only take 6 or 7 minutes.
  • Meanwhile, cook pasta according to instructions on the packet.
  • Transfer all the ingredients to a large bowl and using tongs or 2 forks or 2 spoons, gently combine everything until the pasta is generously coated in the sardine sauce and the onions and peas are evently distributed. Sprinkle with grated parmesan and serve immediately

2 lbs fresh sardines
1 1/2 lbs fennel bulbs, thickly sliced
1/2 cup olive oil
2 onions, finely sliced
4 anchovy fillets
1/2 cup pine nuts
1/2 cup golden raisin
1 dash saffron
salt and pepper
1 lb bucatini pasta
1 cup breadcrumbs

Steps:

  • Preheat oven to 350°F.
  • Remove heads and tails from half the sardines. Cut in 1 inch pieces. Leave second half intact.
  • Wash and trim fennel. Put into pan with about 8 cups cold, salted water. Bring to a boil and cook until tender, about 5- 8 minutes. Remove with slotted spoon, drain in colander, then gently squeeze out water. Chop roughly. Reserve cooking water.
  • Heat 1/4 cup oil in frying pan. Sauté onions over medium heat until golden. Add chopped sardines and anchovies. As they cook, crush sardines with back of spoon to make a thick paste. Add pine nuts, raisins, saffron, salt and pepper.
  • In a separate pan, heat remaining oil and lightly sauté the fennel, removing to a separate bowl. Sauté the remaining whole sardines. Cook until tender, about 10 minutes, turning once gently to not break sardines.
  • Using fennel water, boil pasta until al dente, about 10 -= 12 minutes. Drain. Put in bowl and dress with half the sardine sauce.
  • Put a layer of dressed pasta in an ovenproof casserole. On top of that, put a layer of fennel, then a a layer of whole sardines with additional sauce. Continue until ingredients are used up, ending with a layer of bucatini. Cover with breadcrumbs. Sprinkle breadcrumbs over top. Cover and bake in preheated 350°F oven 15 - 20 minutes.
  • Pasta may be served hot or cold.

1 (2 ounce) can anchovies packed in oil, undrained
2 garlic cloves, minced
1 medium onion, minced
1 (4 1/4 ounce) can chopped black olives, drained
20 green olives, sliced
2 teaspoons capers, drained
1 teaspoon dried basil
2 teaspoons italian seasoning
1/2 teaspoon black pepper
1 (16 ounce) can tomatoes
1 (6 ounce) can tomato paste
3/4 cup water
1/2 cup marsala
1/2 teaspoon red pepper flakes

Steps:

  • In a medium saucepan combine olive oil and anchovies.
  • Cook over medium heat, stirring to mash anchovies, 3 to 5 minutes.
  • Add garlic and onion and cook until tender, 5 minutes or so.
  • Stir in remaining ingredients and simmer, uncovered, 15 minutes.
