CHEESECAKE BALLS
Steps:
- Use a small cookie scoop or a rounded tablespoon to make balls out of the leftover cheesecake. After you scoop out the balls, roll them in your hands to make the rounds neater. Place on a parchment-lined baking sheet and insert a lollipop stick in the top of each. Squeeze the cheesecake around the base of each lollipop stick to ensure it will stay put. Pop into the freezer for 1 full hour.
- Set up a double boiler by bringing a medium saucepan of water to a simmer. Place a small bowl over the top, making sure the bottom doesn't touch the water. Add the candy melts to the bowl and stir until smooth and melted. Stir in the vegetable oil until smooth.
- Quickly dip the cheesecake balls into the melted chocolate and twirl to coat. You may need a knife to help cover the balls. Sprinkle the cheesecake balls before the chocolate dries with your choice of chopped candy, peanuts or toffee brickle and place back on the baking sheet. Refrigerate to set up, about 5 minutes.
CHERRY CHEESECAKE BARS
These are delicious, I have made this and everyone really enjoys it, I think you will too..it is not a dense heavy cheesecake, but more on the light and fluffy side. I have even substituted blueberry pie filling for the cherry. I use two large cans of pie filling, but one can might be suitable, if you prefer a thick topping then use two cans. Remember to chill this cheesecake for 6 or more hours, overnight is even better! Prep time includes chilling time.

Steps:
- Set oven to 350 degrees.
- Set oven rack to the second lowest position.
- Grease a 13x9-inch or an 11x7-inch pan (the cheesecake mixture will be higher if made in the 11x7-inch pan, but will bake out just as well, I actually prefer to bake the cheesecake in that size pan) baking pan.
- In a medium size bowl, mix the flour and brown sugar until blended.
- Cut in the 1 cup butter until mixture resembles coarse crumbs (I do mine on the food processor).
- Add/mix in coconut, oats and chopped pecans or walnuts; stir until well mixed.
- Press the mixture into the bottom of prepared baking dish (this might be a bit "fiddly" as the mixture will be very crumbley, don't worry if there are small areas in the pan that you did not cover, it will all spread out when baking).
- Bake for 20 minutes, or until crust is lightly browned.
- Cool on wire rack for 10-15 minutes.
- Meanwhile, to make the topping, in another bowl, beat cream cheese, sugar, eggs, vanilla and lemon peel with an electric mixer until blended and smooth (about 5 minutes).
- Pour over crust, and spread evenly.
- Bake for 40-45 minutes, or until center is set.
- Cool completely in pan on a wire rack.
- Spread with fruit filling over cooled cheesecake.
- Cover pan and refrigerate for a minumum of 6 hours (or overnight).
- Cut into 18 bars.

CHERRY CHEESECAKE CAKE POPS
Cake Pops are cake and frosting on a stick dipped in chocolate. Now who wouldn't love that? This is also the same recipe for cake balls, except you make the balls larger and don't put them on a stick ;) Follow step by step directions and see more photos on my Blog: http://wpic.typepad.com/wpic/2010/02/wedding-cake-repersonified-cake-balls-and-cake-pops.html

- Place condensed milk, cream cheese, lemon juice (if using), and vanilla in a mixing bowl and beat with electric mixer until smooth and well blended.
- Dump the entire box of graham crumbs on top of dough. Mix again until it is the consistency of cookie dough, scraping down sides if needed.
- Dump entire contents of cherry pie filling into dough and mix gently with an electric mixer until just blended. Don’t overmix because it will break up all of the cherries to the point that they disappear into the dough.
