Steps:
- In a 9- or 10-in. ovenproof skillet, cook bacon until crisp. Drain, reserving 1 Tbsp. drippings. Heat reserved drippings on medium-high. Add asparagus, onion and garlic; saute until onion is tender. Crumble bacon; set aside a third. In a large bowl, combine remaining bacon, eggs, parsley, salt and pepper. , Pour egg mixture into skillet; stir. Top with tomato, cheese and reserved bacon. Cover and cook over medium-low until eggs are nearly set, 10-15 minutes. Preheat broiler; place skillet 6 in. from heat. Broil until lightly browned, about 2 minutes. Serve immediately.

- Position an oven rack in the upper part of the oven and preheat the broiler. Whisk the eggs, 3 tablespoons of the cheese, the milk, lemon zest, salt, and pepper to taste together in a bowl.
- Heat the olive oil in an 8-inch nonstick skillet over medium heat. Add the asparagus and Canadian bacon, and cook until the asparagus is crisp-tender, about 4 minutes. Reduce heat to low, pour the egg mixture into the skillet, stirring gently to distribute the fillings evenly. Cover, and cook until the bottom sets, but does not get too brown, about 9 minutes. Remove the cover, scatter the remaining 1 tablespoon of cheese over the surface. Run the frittata under the broiler until the top sets and browns slightly, about 1 minute. Set aside for about 5 minutes before unmolding. Slip the frittata out of the pan onto a cutting board, cut into wedges. Serve warm or room temperature.

This is a very tasty crustless quiche. You can substitute the filling for different ones you may like better, but these are my favorite. By the way, this is Atkins® induction-friendly.

- Position oven rack to center position. Preheat oven to 400 degrees F (200 degrees C). Butter a 10-inch pie plate.
- Heat a large skillet over medium heat; cook and stir bacon in the hot skillet until crisp, 5 to 10 minutes. Remove bacon and drain all but 2 tablespoons grease from skillet. Cook and stir asparagus and mushrooms in the remaining bacon grease until asparagus is tender, about 5 minutes.
- Remove skillet from heat and toss bacon into asparagus mixture. Spread asparagus-bacon mixture into the prepared pie pan. Sprinkle Swiss cheese over mixture.

CRUSTLESS BACON, SPINACH & SWISS QUICHE - LOW CARB
I've read through a lot of recipes to come up with my version of this quiche. I wanted to make one that is crustless and low carb, and this one is a WINNER! But once I start eating it, I just don't want to stop! I thought I could make it ahead so I could have a quick breakfast on work mornings, but this rarely lasts out the day it was made!

Steps:
- On a foil lined pan, cook bacon in 350 degree F. oven until crisp.
- While bacon cooks, chop onion and shred cheese.
- Heat 1 tablespoon butter and 1 teaspoon oil in skillet over medium heat. Add chopped onion, and stir to coat.
- When onion turns glossy, add thawed spinach, and stir to mix. Heat about 5 minutes, then remove from heat to cool.
- Remove bacon from oven, and place on a paper-towel lined plate to drain.
- Stir together eggs, salt, pepper & heavy whipping cream in a medium bowl.
- Add in cheese, onion/spinach mixture, and bacon. Stir thoroughly to mix.
- Butter a glass pie plate or quiche dish, pour mix in, and pat evenly with a fork.
- Bake in 350 degrees F. oven 25-30 minutes, or until a knife inserted in the center comes out clean.
- Let rest 5 minutes before cutting & serving.
- I bet you can't eat just ONE slice!

- Preheat oven to 350F degrees.
- Cook onion in olive oil until opaque in a medium skillet.
- Add mushrooms and cook for about 1 minute.
- Add the spinach and cook until warmed through.
- Grease a 9" casserole dish with cooking spray.
- Put the vegie mixture in the bottom of the casserole dish.
- Add crumbled feta to the eggs and pour over.
- Top with mozzarella cheese.
- Bake at 350F for approx 30 minutes, or until the eggs are solid.
