CHERRY BOMB CHOPS

Cherry Bomb Chops image

Provided by Guy Fieri

Categories     main-dish

Time 55m

Yield 4 servings

Number Of Ingredients 19

4 pork loin chops, bone-in (about 1 1/2-inch thick)
Brine, recipe follows
1 teaspoon kosher salt, plus more for seasoning
1 teaspoon freshly cracked black pepper
2 (15-ounce) cans tart cherries
1 cup Madeira, divided
1 tablespoon grated orange zest
1 tablespoon minced ginger
1/3 cup agave syrup
2 tablespoons grape seed oil
1 tablespoon balsamic vinegar
2 tablespoons unsalted butter, room temperature
3 cups water
1 bay leaf
1/4 teaspoon red pepper flakes
1/2 teaspoon peppercorns
1 tablespoon agave syrup
2 tablespoons kosher salt
1 cup ice

Steps:

  • Submerge pork chops the saucepan with the brine for 20 minutes. Remove and pat dry with paper towels.
  • Preheat the oven to 200 degrees F.
  • Season the chops on both sides with kosher salt and freshly cracked pepper. Arrange the chops on a baking sheet and put in the oven. Roast the chops until an instant-read thermometer registers 90 degrees F, about 20 minutes. Meanwhile, while the chops are in the oven, in a medium-size saucepan, add the canned cherries, 3/4 of a cup of Madeira, the orange zest, ginger, agave and a pinch of salt. Bring the mixture to a boil over high heat, then lower the heat to a strong simmer and reduce the sauce by half.
  • Once the chops have reached 90 degrees F, remove them from the oven.
  • Heat a large skillet over high heat, add the grape seed oil and heat until shimmering. Add the chops, being careful not to crowd them, and cook for 4 minutes per side. They will be golden and have a hard crust. Transfer them to a serving platter and tent with aluminum foil to keep warm. In the same skillet that the chops were cooked in, add the remaining 1/4 cup of Madeira and deglaze the pan over medium-high heat. Stir in the balsamic and cherry sauce and reduce by half. Turn off the heat, add the butter and stir to combine. Pour the cherry sauce over the chops and serve.
  • In a large saucepan over high heat, add the water and remaining ingredients, except the ice. Stir until the salt dissolves. Remove from the heat, add the ice and stir until cool.

BOMB BRINE

Bomb Brine image

Brining a bird before baking it ensures a TASTY and JUICY cut of meat. This brine recipe is the BOMB and probably the last one you will ever need. Fresh juice and Mexican herbs give it a refreshing zip that will make your mouth water! I usually do a whole chicken with this, but it would make a great turkey too. I like to smoke the chicken over apple wood after. This quantity is for about a 10 pound bird. You may need to double or triple it for a big turkey.

Provided by TJW2725

Categories     Chicken

Time P2DT15m

Yield 10 pound bird

Number Of Ingredients 17

1 cup fresh pressed orange juice
1 cup fresh pressed lemon juice
1 teaspoon lime zest
1/2 cup pineapple juice
1 cup sea salt or 1 cup kosher salt
1 cup sugar
1 cup chopped onion
1/4 cup fresh cilantro
2 serrano peppers, minced
4 cloves garlic, pressed
1 tablespoon dried ancho chile powder
1 tablespoon dried oregano
1 tablespoon ground cumin
1 teaspoon nutmeg
8 allspice berries
4 black peppercorns
1 bay leaf

Steps:

  • Mix all ingredients in a large non-reactive bowl, then add one gallon of water and stir until the salt and sugar are fully dissolved. Pour over the meat and marinate in the fridge for at least 24 and up to 48 hours.
  • Make sure the ENTIRE bird is covered with the liquid, if not, you will need to turn it every few hours. Discard brine after done marinating, and gently pat the bird dry before cooking. The bird can be rubbed with oil and seasoned with your favorite spices after, or just cooked 'as is'.

CHERRY BOMB CHICKEN

Cherry Bomb Chicken image

Thanks to the magic of brining, this really will almost guarantee a juicy, tasty piece of chicken.

Provided by Chef John

Categories     Meat and Poultry Recipes     Chicken     Whole Chicken Recipes

Time 5h40m

Yield 6

Number Of Ingredients 14

1 quart cold water
⅓ cup kosher salt
½ cup white sugar
1 (4 pound) whole chicken, cut into 4 pieces
1 pint cherry tomatoes
3 habanero peppers, seeded
4 cloves garlic
½ teaspoon ground allspice
½ teaspoon dried thyme
¼ teaspoon ground cumin
¼ teaspoon ground black pepper
¼ teaspoon cayenne pepper
1 tablespoon vegetable oil
2 tablespoons prepared Thai sweet chili sauce

Steps:

  • Combine water, kosher salt, and sugar in a saucepan over low heat; cook until sugar and salt dissolve, 4 to 5 minutes. Set aside to cool to room temperature.
  • Score the skin side of each piece of chicken 2 to 3 times, about 1/8 inch deep. Place chicken pieces in a large bowl or lidded container.
  • Puree cherry tomatoes, habanero peppers, garlic, and allspice with the salt and sugar mixture in a blender until smooth.
  • Pour tomato brine over chicken pieces, making sure all pieces are covered. Refrigerate 4 to 6 hours.
  • Remove chicken pieces and transfer to a plate or baking sheet lined with paper towels. Pat chicken pieces dry with more paper towels.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Combine thyme, cumin, black pepper, cayenne pepper, and oil in a small bowl.
  • Brush each chicken piece with thyme and oil mixture.
  • Cook chicken, skin side down, on the preheated grill for 1 to 2 minutes. Turn each piece and move to indirect heat. Cook until well-browned and meat is no longer pink in the center, 30 to 35 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  • Brush each piece with Thai sweet chile sauce. Transfer to a plate and allow chicken to rest for 10 minutes before serving.
