1 cup (200g) granulated sugar
1 cup (340g) corn syrup
1 teaspoon vanilla
1 1/2 cups (387g) creamy peanut butter
5 cups Chex cereal, (I used Rice Chex)
pinch salt
2 cups mini marshmallows

Steps:

  • Line two cookie sheets with parchment. Set aside.
  • In a large saucepan, add the sugar, corn syrup, and vanilla. Bring to a low boil, stirring frequently.
  • Carefully add the peanut butter and pinch of salt and stir until the peanut butter is fully incorporated. Turn heat off.
  • Add in the Chex cereal and stir well, making sure each piece is coated.
  • Pour marshmallows in and stir until evenly dispersed, but not too long. The marshmallow will start to melt, but you do not want them to melt completely.
  • Using a 2-tablespoon scoop, scoop out mounds of the chex mixture onto the cookie sheet. They will not spread much, so you can place them close together.
  • Let sit for about 30 minutes so they can firm up.
  • Store in layers in an airtight container.

4 cups Chex™ cereal, any variety
1/2 cup lightly salted peanuts
2 cups miniature marshmallows
1 bag (11 oz) butterscotch chips
1/2 cup creamy peanut butter

Steps:

  • In large bowl, mix cereal, peanuts and marshmallows.
  • In medium microwavable bowl, microwave butterscotch chips and peanut butter uncovered on Medium to Medium-High (50 to 75%) in 1-minute increments, stirring after each minute, just until mixture is smooth and melted. This should take 3 to 4 minutes.
  • Pour over cereal mixture, using large wooden spoon to mix until cereal mixture is thoroughly coated. Drop by spoonfuls onto waxed or cooking parchment paper.
  • Let stand 15 to 20 minutes to set.

8 cups Rice Chex™ cereal
1 package (10 oz) peanut butter chips (about 1 2/3 cups)
1/4 cup chopped cocktail peanuts
1/4 cup butter, cut into tablespoons
1 bag (10 oz) miniature marshmallows
1/2 cup Kraft™ caramel bits
1 package (12 oz) semisweet chocolate chips (about 2 cups)
1 bar (1.86 oz) Snickers™ candy, unwrapped, chopped (about 1/2 cup)
1/4 cup finely chopped cocktail peanuts

Steps:

  • Spray 13x9-inch pan with cooking spray. Spray large bowl with cooking spray; in bowl, stir together cereal, 2/3 cup of the peanut butter chips and 1/4 cup peanuts.
  • Spray medium microwavable bowl with cooking spray; add butter and marshmallows. Microwave uncovered on High 1 minute 30 seconds to 2 minutes or until smooth, stirring after each minute. Stir in caramel bits; microwave 30 seconds. Stir well to blend; a few caramel bits will remain unmelted.
  • Pour hot marshmallow mixture over cereal mixture in bowl; stir until cereal is well coated. Press firmly in pan.
  • In medium microwavable bowl, microwave chocolate chips and remaining 1 cup peanut butter chips uncovered on High 1 to 2 minutes, stirring every 30 seconds, until smooth. Spread over bars. Sprinkle chopped candy and 1/4 cup peanuts over top. Let stand about 2 hours or until set.
  • Cut into 6 rows by 4 rows. Store covered in airtight container at room temperature.

1 c. sugar
1 c. light karo syrup
1 1/4 c. peanut butter
6 cups corn or rice Chex
1/4 tsp. sea salt
1 c. chocolate chips
1 1/2 c. butterscotch chips
sea salt

Steps:

  • Boil sugar and karo syrup.
  • Remove from heat and add peanut butter and 1/4 tsp salt. Stir.
  • Pour over cereal.
  • Drop with cookie scoop on parchment paper. Let cool. This doesn't take long.
  • Melt chocolate chips and butterscotch chips in microwave until melted.
  • Spoon and spread a little frosting over each cookie. Before chocolate hardens sprinkle with sea salt!

Currently I am obsessed with no bake cookies. #34401 are some of my favorites, but I was looking for ones without chocolate and came across this recipe in my "More With Less" cookbook. Really easy and fast and taste quite wonderful. My child who hates coconut even liked them!

3/4 cup peanut butter
3 cups flake cereal
1 cup coconut

Steps:

  • In a large pan mix the brown sugar and the syrup.
  • When it starts to boil add the vanilla and the peanut butter, stirring well.
  • Take it off the heat and add the cereal and coconut. Mix well and drop by teaspoonfuls onto a cookie sheet you have sprayed with non stick spray.
  • Let cool.

  • Spray medium microwavable bowl with cooking spray; add peanut butter, butter and marshmallows. Microwave uncovered on High 2 to 3 minutes or until smooth, stirring after each minute.
  • Pour hot marshmallow mixture over cereal and peanuts; stir until well coated. To form each cookie, drop mixture by tablespoonful onto waxed paper; place 1 Hershey's® Kisses® in center of each, and slightly press down. Repeat with remaining cereal mixture and milk chocolates. If mixture is hard to scoop, reheat in microwave on High 30 to 60 seconds.
  • Cool completely, at least 1 hour. Store in airtight container at room temperature.
