Sweet summer cherries, mixed berries, and a double measure of buttery crumble on top. This easy fruit crisp is the perfect way to use up every last bit of that sweet summertime fruit!

6 tablespoons salted butter
3 cups sweet cherries, pitted
3-4 cups mixed fruit, such as strawberries, raspberries, and blueberries
1 tablespoon cornstarch
1/3 cup brown sugar
2 teaspoons vanilla extract
1 1/2 cups old fashioned rolled oats
1 cup all-purpose flour
1/4- 1/2 cup brown sugar, to your taste
1 teaspoon cinnamon
1/2 teaspoon cardamom
1/4 teaspoon kosher salt
1 1/2 sticks (3/4 cup) salted butter

Steps:

  • 1. Preheat the oven to 350 degrees F.2. Add the butter to a 10-12 inch skillet set over medium heat. Allow the butter to brown until it smells toasted and is a deep golden brown, about 3-4 minutes. Stir often. Remove from the heat and add the cherries, berries, cornstarch, brown sugar, and vanilla. Gently toss to combine, it does not need to be perfect.3. To make the topping, combine the oats, flour, brown sugar, cinnamon, cardamon, and salt in a medium-size mixing bowl. Add the butter and use your hands to work the butter into the dry ingredients until everything is moist and clumps together. Sprinkle the topping over the fruit. 4. Transfer to the oven and bake for 40-45 minutes or until the top is golden and bubbling. Remove from the oven and let cool slightly. Serve warm or at room temperature with vanilla ice cream! Enjoy!

2 cups frozen unsweetened cherries, thawed
2 cups frozen blueberries
1/3 cup (packed) light brown sugar
1/2 cup butter
3/4 cup flour
1/2 cup granulated sugar
1/2 cup nuts
1/2 cup plain Greek yogurt

Steps:

  • 1. Preheat the oven to 400 degrees. Spray an 8x8-inch baking dish with cooking spray. Add the cherries, blueberries and brown sugar and stir gently to combine. 2. Cut the butter into cubes and add to the bowl of a food processor. Add flour and pulse until the mixture forms crumbs. Stir in the granulated sugar and nuts. sprinkle mixture evenly over the fruit. Bake for 35 minutes or until top is golden brown and juices are bubbling. 3. Serve with yogurt. Note: Do thaw the cherries, but do not bother thawing the blueberries before cooking. Also try using other fruits. This crisp is also good with frozen yogurt.

1-1/2 cups all-purpose flour
1-1/2 cups sugar
Dash salt
2/3 cup cold butter
1-1/2 cups finely chopped walnuts

Steps:

  • In a large bowl, combine the brown sugar, tapioca, extract and cinnamon. Gently stir in cherries and blackberries. Allow to stand for 10 minutes. Pour into a greased 13-in. x 9-in. baking dish., In another bowl, combine the flour, sugar and salt. Cut in butter until crumbly. Add walnuts; sprinkle over fruit. Bake, uncovered, at 350° for 55-60 minutes or until topping is golden brown and filling is bubbly. Serve warm with whipped cream.

3-1/2 cups frozen pitted dark sweet cherries, thawed
3/4 cup sugar, divided

1/2 cup quick-cooking oats

  • Drain cherries, reserving juice. Add enough water to measure 1/2 cup. Set cherries aside. He is an ice cream lover-but he passed up the scoops of vanilla that he tops most desserts with so he could taste the cherries better! Wheat, soybeans and milo are the main crops on our farm. We also have three small cherry trees. I apportion all of that harvest for this recipe. My husband's is the manager of a coop. I work part-time as a church secretary...teach piano in our home...and enjoy making clothes for myself and our 3-year-old daughter. Cross-stitch is one of my favorite hobbies.

½ cup white sugar
2 tablespoons cornstarch
¼ teaspoon ground cinnamon
1 (21 ounce) can cherry pie filling
1 ½ cups frozen blueberries
1 egg white
1 teaspoon water
2 teaspoons sugar

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Press one of the pie crusts into a 9 inch pie plate. In a large bowl, stir together 1/2 cup of sugar, cornstarch and cinnamon. Stir in the cherry pie filling and blueberries. Spoon into the pie crust. Top with the second crust, and press the edges to seal. Flute edges, or press with the tines of a fork. In a cup, whisk together the egg white and water with a fork. Brush over the top of the pie, then sprinkle with 2 teaspoons of sugar.
  • Bake for 45 to 55 minutes in the preheated oven, or until crust is golden brown. Cover the edges of the crust with aluminum foil if they appear to be getting too dark. Cool for at least 2 hours to allow the filling to set before serving.
